🍓🫐 Mixed Berry Layer

- ¾ cup blueberries
- ¾ cup raspberries
- ½ cup blackberries
- 2 tbsp granulated sugar
- 1 tbsp fresh lemon juice
You can use any combination of berries you have available.
🍓 For Garnishing
- Fresh strawberries
- Blueberries
- Raspberries
- Blackberries
- Extra cookie crumbs
- Optional mint leaves
- Optional whipped cream
Instructions
1. Prepare the Cookie Crumb Layer
- Crush the graham crackers or vanilla cookies into fine crumbs.
- Place the crumbs in a bowl and pour in the melted butter.
- Mix until the crumbs are evenly coated and resemble wet sand.
- Set aside.
For a firmer crust layer, refrigerate the mixture for 10–15 minutes before assembling.
2. Prepare the Mixed Berries
- Wash the berries and gently pat them dry.
- Dice the strawberries into small pieces.
- Place the strawberries, blueberries, raspberries, and blackberries in a bowl.
- Sprinkle with the granulated sugar.
- Add the lemon juice.
- Gently toss everything together.
- Let the berries sit for 10–15 minutes so they become lightly juicy and flavorful.
Don’t mash the berries—the goal is to keep the layers colorful and textured.
3. Make the Cheesecake Filling
- Place the softened cream cheese in a large mixing bowl.
- Beat until completely smooth and creamy.
- Add the powdered sugar and vanilla extract.
- Beat again until well combined and silky.
- In a separate chilled bowl, whip the cold heavy cream until medium-stiff peaks form.
- Add about one-third of the whipped cream to the cream cheese mixture and gently fold it in.
- Fold in the remaining whipped cream in two additions.
- Continue folding gently until the mixture is smooth, fluffy, and uniform.
Avoid overmixing, as you want the filling to remain light and airy.
4. Assemble the Parfait Cups
Use six to eight small glasses, dessert cups, or jars.
For each cup:
- Spoon about 2 tablespoons of cookie crumbs into the bottom.
- Add a layer of cheesecake filling.
- Spoon a layer of mixed berries over the cheesecake.
- Add another layer of cheesecake filling.
- Finish with another layer of berries and a sprinkle of cookie crumbs.
For the prettiest presentation, use a piping bag to pipe the cheesecake filling into the glasses instead of spooning it in.
5. Chill
- Cover the parfait cups loosely with plastic wrap.
- Refrigerate for at least 1 hour before serving.
- For a firmer cheesecake-style texture, chill for 2–3 hours.
6. Garnish and Serve
Just before serving, top each parfait with:
- A fresh strawberry
- A few blueberries and raspberries
- A blackberry
- A small spoonful of cookie crumbs
- Optional whipped cream
- A tiny mint leaf
Serve chilled.
Chef’s Tips
- Use cold heavy cream for the best whipping volume.
- Make sure the cream cheese is softened so the filling doesn’t become lumpy.
- Don’t overmix the whipped cream into the cream cheese mixture.
- Pat the berries dry after washing so excess water doesn’t make the parfait watery.
- For a cleaner presentation, pipe the cheesecake filling into the cups.
- Assemble close to serving time if you want the cookie layer to remain especially crunchy.
- For a softer, more cheesecake-like texture, prepare the parfaits several hours ahead and refrigerate.
