  • Bake Time: 30–35 minutes
  • Cooling Time: 30 minutes
  • Total Time: About 1 hour 20 minutes
  • Servings: 8–10
  • Difficulty: Easy
  • Pan: 8-inch (20 cm) round cake pan

Ingredients

For the Chocolate Cake

  • 1 cup (125 g) all-purpose flour
  • ½ cup (45–50 g) unsweetened cocoa powder
  • 1 cup (200 g) granulated sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (120 ml) milk
  • ½ cup (120 ml) warm water
  • ¼ cup (60 g) softened unsalted butter or margarine
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

Optional Chocolate Frosting

  • ½ cup (115 g) unsalted butter, softened
  • 1½ cups (180 g) powdered sugar
  • ¼ cup (25 g) unsweetened cocoa powder
  • 2–3 tbsp milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Oven and Pan

  1. Preheat the oven to 175°C (350°F).
  2. Grease an 8-inch (20 cm) round cake pan.
  3. Line the bottom with parchment paper for easy removal.
  4. Lightly dust the sides with flour or cocoa powder.

2. Combine the Dry Ingredients

  1. In a large mixing bowl, sift together the flour and cocoa powder.
  2. Add the sugar, baking soda, baking powder, and salt.
  3. Whisk everything together until evenly distributed.

Sifting the cocoa powder helps prevent lumps and gives the finished cake a smoother texture.

3. Add the Wet Ingredients

  1. Add the softened butter, milk, egg, and vanilla to the dry ingredients.
  2. Beat with a whisk or electric mixer on medium speed until the batter is smooth, about 1–2 minutes.
  3. Gradually add the warm water and mix until incorporated.

The batter will be fairly thin. This is normal and helps create the cake’s moist, tender texture.

4. Add the Vinegar

  1. Add the white vinegar to the batter.
  2. Stir gently just until incorporated.

The vinegar reacts with the baking soda, helping the cake rise and contributing to a light, tender crumb. You won’t taste the vinegar in the finished cake.

5. Bake

  1. Pour the batter into the prepared cake pan.
  2. Gently tap the pan once or twice on the counter to remove large air bubbles.
  3. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  4. Avoid overbaking, as this can dry out the cake.

6. Cool

  1. Remove the cake from the oven and let it cool in the pan for 10–15 minutes.
  2. Carefully run a knife around the edges.
  3. Turn the cake onto a wire rack and remove the parchment paper.
  4. Allow it to cool completely before frosting.

Optional Chocolate Frosting

  1. Beat the softened butter until smooth and creamy.
  2. Sift together the powdered sugar and cocoa powder.
  3. Gradually add the dry mixture to the butter, beating on low speed.
  4. Add the vanilla and a pinch of salt.
  5. Add the milk, 1 tablespoon at a time, until the frosting reaches a smooth, spreadable consistency.
  6. Increase the mixer speed and beat for another 1–2 minutes until light and fluffy.

Spread the frosting over the completely cooled cake.

Chef’s Tips

  • Don’t overmix the batter. Mix just until the ingredients are combined.
  • The warm water helps hydrate the cocoa powder and creates a softer crumb.
  • Your batter will look thinner than traditional cake batter. That’s exactly what you want.
  • Use unsweetened cocoa powder, not hot chocolate powder.
  • Don’t skip the vinegar—it reacts with the baking soda to help the cake rise.
  • Avoid opening the oven during the first 25 minutes of baking.
  • Check the cake early because oven temperatures vary.
  • Allow the cake to cool completely before frosting.

Easy Variations

🍫 Double Chocolate Cake

Fold ½ cup chocolate chips into the batter before baking.

☕ Chocolate Coffee Cake

Replace ¼ cup of the warm water with strongly brewed hot coffee. Coffee intensifies the chocolate flavor without making the cake taste strongly of coffee.

🍓 Chocolate Strawberry Cake

Top the frosted cake with fresh strawberries and chocolate shavings.

🍫 Ganache Topping

Instead of buttercream, pour warm chocolate ganache over the cooled cake and allow it to set slightly before serving.

🥜 Chocolate Peanut Butter Cake

Spread a thin layer of peanut butter frosting over the cake and finish with melted chocolate.

Storage

Room temperature:
Store covered in an airtight container for up to 3 days.

Refrigerator:
If frosted with a dairy-based frosting, refrigerate for up to 5 days. Allow the cake to sit at room temperature for 20–30 minutes before serving.

Freezer:
Wrap unfrosted cake tightly in plastic wrap and foil and freeze for up to 3 months. Thaw overnight in the refrigerator or several hours at room temperature.

Serving Suggestions

Serve slices plain with a light dusting of powdered sugar, or pair with:

The Result
