  • Chill Time: 1 hour
  • Total Time: 1 hour 15 minutes
  • Servings: 8–10
  • Difficulty: Easy
  • Method: No-bake

Ingredients

Cheesecake Mixture

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 g) plain or vanilla Greek yogurt
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 tub (8 oz/225 g) whipped topping, thawed
  • 1–2 tbsp milk or heavy cream, if needed for consistency

Pineapple & Pecan Mixture

  • 1 can (20 oz/565 g) crushed pineapple, very well drained
  • 1 cup chopped pecans
  • 1 cup mini marshmallows
  • ½ cup sweetened shredded coconut, optional

For Garnishing

  • Extra chopped pecans
  • Pineapple chunks or tidbits
  • Optional whipped topping
  • Optional maraschino cherries

Instructions

1. Prepare the Pineapple

  1. Drain the crushed pineapple extremely well.
  2. Press the pineapple gently against a fine-mesh strainer or squeeze it lightly with paper towels to remove excess liquid.
  3. Set aside.

Don’t skip this step. Excess pineapple juice can make the cheesecake mixture watery.

2. Make the Cheesecake Base

  1. Place the softened cream cheese in a large mixing bowl.
  2. Beat with an electric mixer until completely smooth and creamy.
  3. Add the Greek yogurt and powdered sugar.
  4. Beat until smooth and well combined.
  5. Add the vanilla extract and mix again.

If the mixture seems unusually thick, add 1 tablespoon of milk or heavy cream and mix until smooth.

3. Fold in the Whipped Topping

  1. Add the thawed whipped topping to the cream cheese mixture.
  2. Gently fold it in using a spatula.
  3. Continue folding until the mixture is light, fluffy, and evenly combined.

Avoid vigorous mixing so you don’t lose the airy texture.

4. Add the Pineapple and Pecans

  1. Add the well-drained crushed pineapple.
  2. Add the chopped pecans.
  3. Add the mini marshmallows.
  4. If using coconut, add it now as well.
  5. Gently fold everything together until evenly distributed.

5. Chill

  1. Cover the bowl tightly with plastic wrap.
  2. Refrigerate for at least 1 hour before serving.
  3. For the best flavor and texture, chill for 2–4 hours.

Chilling allows the flavors to blend while the mixture becomes thicker and creamier.

6. Garnish and Serve

Transfer the cheesecake salad to a serving bowl or individual dessert cups.

Top with:

  • Chopped pecans
  • Small pineapple pieces
  • A few dollops of whipped topping
  • Optional maraschino cherries

Serve cold.

Chef’s Tips

  • Drain the pineapple extremely well. This is the most important step for a thick, creamy dessert.
  • Use room-temperature cream cheese so the cheesecake mixture becomes completely smooth.
  • Toast the pecans for 5–7 minutes at 175°C/350°F, then cool them before adding for a deeper nutty flavor.
  • Don’t overmix after adding the whipped topping.
  • Chill before serving—the texture improves significantly after refrigeration.
  • For a sweeter dessert, use vanilla Greek yogurt instead of plain yogurt.

Variations

🍓 Tropical Cheesecake Salad

Add diced strawberries, mandarin oranges, or mango along with the pineapple.

Fold in ½–1 cup drained maraschino cherries for a classic cherry-pineapple combination.

🥥 Coconut Pecan Version

🍫 Chocolate Pecan

Fold in mini chocolate chips or drizzle the finished salad lightly with chocolate sauce.

🍊 Orange Pineapple

Add well-drained mandarin orange segments for a bright citrus twist.

Make-Ahead

This dessert can be prepared up to 24 hours in advance. Keep it covered and refrigerated until ready to serve.

For the freshest crunch, reserve a little of the chopped pecans and sprinkle them over the top just before serving.
