Instructions
1. Activate the Dough Ingredients
In a large mixing bowl, combine the warm water, sugar, and instant yeast.
Let stand for about 5 minutes.
The water should feel warm but not hot. Very hot water can damage the yeast.
2. Make the Dough
Add the flour and salt to the bowl.
Pour in the olive oil and mix with a wooden spoon or your hands until a shaggy dough forms.
Transfer the dough to a lightly floured work surface.
3. Knead
Knead the dough for approximately 5–7 minutes, until it becomes smooth, soft, and elastic.
If the dough feels excessively sticky, add flour 1 tablespoon at a time.
Avoid adding too much flour—the dough should remain soft.
4. Let the Dough Rise
Place the dough in a lightly oiled bowl.
Cover with plastic wrap or a clean kitchen towel.
Let it rise in a warm, draft-free place for 45–60 minutes, or until approximately doubled in size.
5. Prepare the Oven
Preheat the oven to 425°F (220°C).
Line one or two baking sheets with parchment paper.
For a crispier bottom, preheat a pizza stone or heavy baking sheet in the oven.
6. Divide the Dough
Once risen, gently punch down the dough to release excess air.
Divide it into 10–12 equal pieces.
Roll each piece into a smooth ball.
7. Shape the Mini Pizza Bases
On a lightly floured surface, flatten each dough ball.
Roll or gently stretch each one into a circle approximately 3½–4 inches (9–10 cm) wide.
Keep the center slightly thicker than the edges if you want a soft, fluffy crust.
Transfer the dough rounds to the prepared baking sheets.
8. Add the Sauce
Mix the pizza sauce with oregano, garlic powder, salt, and pepper.
Spread approximately 1 tablespoon of sauce over each pizza base, leaving a small border around the edge.
Don’t add too much sauce, as excess moisture can make mini pizzas soggy.
9. Add Cheese and Toppings
Sprinkle mozzarella generously over each pizza.
Add your desired toppings.
For the best results, don’t overload the mini pizzas. A moderate amount of toppings allows the dough to bake properly and the cheese to become beautifully bubbly.
10. Bake
Bake for approximately 10–14 minutes, or until:
- The crust is golden around the edges.
- The cheese is melted and bubbling.
- The bottoms are lightly browned.
For extra browning, place the pizzas under the broiler for 30–60 seconds at the end, watching them carefully.
11. Cool and Serve
Remove the mini pizzas from the oven and let them cool for 2–3 minutes.
Finish with a sprinkle of oregano, fresh basil, or grated Parmesan if desired.
Serve warm.

Chef’s Tips
Don’t make the dough too thick. Mini pizzas need enough dough to support the toppings without becoming overly bready.
Don’t overload the toppings. Too many toppings can prevent the crust from becoming crisp.
Use warm, not hot, water. Excessively hot water can interfere with the yeast.
Give the dough enough time to rise. A properly risen dough produces a lighter, softer crust.
Bake at a high temperature. The hot oven helps the crust brown while melting the cheese quickly.
For crispier bases: Preheat your baking sheet, pizza stone, or steel before placing the pizzas on it.
Make-Ahead Instructions
The dough can be prepared up to 24 hours ahead.
After kneading, place it in a lightly oiled airtight container and refrigerate.
When ready to use, allow the dough to sit at room temperature for about 30–60 minutes before dividing and shaping.
You can also prepare the pizza toppings and sauce ahead of time.
Storage
Store leftover mini pizzas in an airtight container in the refrigerator for up to 3 days.
Reheat in a 375°F (190°C) oven or air fryer until hot and the crust is crisp again.
Avoid microwaving when possible, as it can make the crust soft.
Freezing
Mini pizzas freeze beautifully.
Bake them without over-browning, then allow them to cool completely.
Freeze in a single layer until firm, then transfer to a freezer-safe bag or container.
Freeze for up to 2 months.
Reheat directly from frozen at 375–400°F (190–200°C) until hot and crisp.
