Ingredients

For the Pancake Batter

  • 2 cups (250 g) all-purpose flour
  • ¼ cup (50 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1½ cups (360 ml) milk
  • 2 tablespoons (28 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

For Cooking

  • Butter or a small amount of neutral oil

Optional Toppings

  • Maple syrup
  • Butter
  • Fresh strawberries
  • Blueberries
  • Banana slices
  • Whipped cream
  • Powdered sugar
  • Honey
  • Chocolate chips
  • Nutella or chocolate spread

Instructions

1. Combine the Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Make sure the baking powder is evenly distributed throughout the flour.

2. Combine the Wet Ingredients

In a separate bowl or large measuring jug, whisk together the eggs, milk, melted butter, and vanilla extract.

Make sure the melted butter has cooled slightly before adding it so it doesn’t cook the eggs.

3. Make the Batter

Pour the wet ingredients into the bowl of dry ingredients.

Using a whisk or spatula, gently stir until just combined.

The batter should be thick and slightly lumpy. Do not overmix it.

A few small lumps are perfectly fine and will help keep the pancakes tender.

4. Rest the Batter

Let the batter rest for 5–10 minutes.

This gives the flour time to absorb the liquid and allows the baking powder to begin working, helping create lighter, fluffier pancakes.

5. Heat the Pan

Place a nonstick skillet or griddle over medium-low to medium heat.

Lightly grease the surface with a little butter or oil.

The pan should be hot but not smoking.

6. Cook the Pancakes

For each pancake, pour approximately ¼ cup of batter onto the hot pan.

Leave enough space between the pancakes so they are easy to flip.

Cook for about 2–3 minutes, or until bubbles appear across the surface and the edges begin to look set.

7. Flip

Carefully slide a spatula underneath the pancake and flip it in one confident motion.

Cook the second side for another 1–2 minutes, until golden brown and cooked through.

Avoid pressing down on the pancake with the spatula, as this can flatten it and push out the air.

8. Continue Cooking

Repeat with the remaining batter, lightly greasing the pan between batches when necessary.

Adjust the heat as needed. If the pancakes are browning too quickly before the centers cook, reduce the heat slightly.

9. Keep Warm

Transfer cooked pancakes to a plate.

Stack them loosely and cover with a clean kitchen towel, or keep them warm in a 200°F (95°C) oven until ready to serve.

10. Serve

Serve the pancakes immediately while they’re warm and fluffy.

Top with butter and warm maple syrup, or add your favorite fresh fruit, whipped cream, powdered sugar, or chocolate toppings.

Chef’s Tips

  • Don’t overmix: Overworked batter develops gluten and can produce chewy pancakes.
  • Let the batter rest: Even a few minutes can make a noticeable difference in texture.
  • Use fresh baking powder: Old baking powder can result in flat pancakes.
  • Don’t make the pan too hot: Medium heat gives the pancakes time to cook through while developing a golden exterior.
  • Wait for bubbles: Flip once bubbles form and the edges look set.
  • Don’t press the pancakes: This removes the air that makes them fluffy.
  • Use consistent portions: A ¼-cup measure makes evenly sized pancakes that cook at the same rate.

How to Make Extra-Fluffy Pancakes

For particularly tall pancakes, separate the eggs.

Whisk the yolks into the milk mixture as usual. Beat the egg whites separately until soft peaks form, then gently fold them into the finished batter just before cooking.

This adds extra air and creates an especially light texture.

Delicious Variations

Blueberry Pancakes

Scatter fresh or frozen blueberries over each pancake immediately after pouring the batter onto the pan.

Chocolate Chip Pancakes

Sprinkle 1–2 tablespoons mini chocolate chips over each pancake before flipping.

Cinnamon Pancakes

Add ½–1 teaspoon ground cinnamon to the dry ingredients.

Banana Pancakes

Mash one ripe banana and stir it into the wet ingredients. Add a small splash of milk if the batter becomes too thick.

Lemon Berry Pancakes

Add 1 teaspoon finely grated lemon zest to the batter and serve with fresh berries.

Buttermilk-Style Pancakes

Replace the milk with buttermilk for a richer flavor and extra-tender crumb.

Serving Suggestions

Create a classic breakfast stack with:

  • A pat of butter
  • Warm maple syrup
  • Fresh strawberries and blueberries
  • Sliced bananas
  • Whipped cream
  • Powdered sugar

For an indulgent version, drizzle with chocolate sauce or caramel sauce and add toasted nuts.

Make-Ahead Instructions

The batter is best cooked fresh, but the pancakes themselves can be made ahead.

Cook the entire batch, allow them to cool, and store them in an airtight container in the refrigerator for up to 3 days.

Reheat in a toaster, skillet, or microwave.

Freezing

Place completely cooled pancakes in a stack with parchment paper between each one.

Transfer to a freezer-safe bag or container and freeze for up to 2 months.

Reheat individual pancakes directly from frozen in a toaster, toaster oven, or microwave.

Final Result

A stack of soft, airy, golden-brown Fluffy Pancakes with tender centers and lightly crisp edges. Serve them warm with butter and maple syrup for a classic breakfast everyone will love.
