Ingredients

For the Buffalo Chicken Mac & Cheese

  • 2 cups (about 300 g) cooked shredded chicken
  • 12 oz (340 g) elbow macaroni
  • ½ cup (120 ml) buffalo wing sauce
  • 3 tablespoons (42 g) unsalted butter
  • 3 tablespoons (24 g) all-purpose flour
  • 2½ cups (600 ml) whole milk
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • ½ cup (50 g) blue cheese crumbles
  • 3 green onions, thinly sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • Salt, to taste

For the Topping

  • ½ cup extra shredded cheddar or mozzarella, optional
  • 2 tablespoons blue cheese crumbles
  • Extra sliced green onions
  • Extra buffalo sauce, for drizzling

Instructions

1. Prepare the Pasta

Bring a large pot of generously salted water to a boil.

Add the elbow macaroni and cook according to the package directions until just shy of al dente.

The pasta should still have a little bite because it will continue cooking in the oven.

Drain well and set aside.

Do not rinse the pasta.

2. Prepare the Chicken

Place the cooked shredded chicken in a bowl.

Add about ¼ cup of the buffalo wing sauce and toss until the chicken is evenly coated.

Set aside.

This gives the chicken plenty of buffalo flavor throughout the casserole.

3. Preheat the Oven

Preheat the oven to 375°F (190°C).

Lightly grease a 9 × 13-inch baking dish and set aside.

4. Make the Cheese Sauce

Melt the butter in a large saucepan over medium heat.

Once melted, whisk in the flour.

Cook for about 1 minute, whisking constantly. This removes the raw flour taste without allowing the mixture to brown.

5. Add the Milk

Gradually whisk in the milk, adding it a little at a time.

Continue whisking until the mixture is smooth.

Cook for about 4–6 minutes, stirring frequently, until the sauce thickens enough to coat the back of a spoon.

6. Season the Sauce

Stir in the garlic powder, onion powder, smoked paprika, black pepper, and a small amount of salt.

Remember that the buffalo sauce and cheeses already contain salt, so season conservatively.

7. Add the Cheeses

Reduce the heat to low.

Add the shredded cheddar and mozzarella a handful at a time, stirring after each addition until melted and smooth.

Add ¼ cup of the blue cheese crumbles and stir until partially melted into the sauce.

The cheese sauce should be creamy, thick, and glossy.

8. Add the Buffalo Sauce

Stir the remaining buffalo wing sauce into the cheese sauce.

Taste and adjust the amount of buffalo sauce according to your preferred level of heat.

For a milder mac and cheese, use slightly less. For a fiery version, add more.

9. Combine Everything

Add the cooked elbow macaroni and buffalo-coated chicken to the cheese sauce.

Add about half of the sliced green onions.

Gently fold everything together until the pasta and chicken are evenly coated.

10. Transfer to the Baking Dish

Pour the mixture into the prepared baking dish.

Spread it evenly with a spatula.

Sprinkle the remaining shredded cheese over the top, followed by the remaining blue cheese crumbles.

11. Bake

Place the casserole in the preheated oven.

Bake uncovered for approximately 20–25 minutes, until the cheese is completely melted and the edges are bubbling.

For an extra golden top, switch the oven to BROIL/GRILL for the final 1–2 minutes.

Watch closely so the cheese doesn’t burn.

12. Rest

Remove the casserole from the oven and let it rest for 5–10 minutes.

This gives the cheese sauce time to settle and makes serving easier.

13. Garnish and Serve

Scatter the remaining green onions over the top.

Drizzle with extra buffalo sauce if desired.

Serve hot with additional blue cheese on the side.

Chef’s Tips

  • Don’t overcook the pasta: Slightly undercooked pasta holds up better in a baked macaroni dish.
  • Shred your own cheese: Freshly shredded cheese melts more smoothly into the sauce.
  • Add milk gradually: This prevents lumps from forming in the cheese sauce.
  • Keep the cheese sauce over low heat: High heat can cause the cheese to become oily or grainy.
  • Choose your buffalo sauce carefully: Different brands vary significantly in heat and saltiness.
  • Don’t skip the resting time: It allows the casserole to thicken slightly and makes it easier to serve.
  • Use rotisserie chicken: It’s a quick and flavorful shortcut for the shredded chicken.

Easy Variations

Ranch Buffalo Chicken Mac & Cheese

Add 1–2 teaspoons ranch seasoning to the cheese sauce and drizzle ranch dressing over each serving.

Extra-Spicy Buffalo Mac

Add sliced jalapeños, crushed red pepper flakes, or a few dashes of hot sauce.

Bacon Buffalo Mac & Cheese

Fold in ½ cup cooked, crumbled bacon before baking and sprinkle a little extra over the top.

Creamier Version

Add 4 oz (113 g) softened cream cheese to the cheese sauce along with the cheddar and mozzarella.

Chicken Bacon Ranch Buffalo Bake

Add cooked bacon and ranch seasoning for the ultimate loaded version.

Serving Suggestions

Serve this rich casserole with:

  • Celery sticks
  • Carrot sticks
  • Ranch dressing
  • Extra buffalo sauce
  • Garlic bread
  • Crisp green salad
  • Coleslaw
  • Corn on the cob

For a game-day spread, serve smaller portions alongside wings, sliders, and crunchy vegetables.

Make-Ahead Instructions

Assemble the casserole completely, but do not bake it.

Cover tightly and refrigerate for up to 24 hours.

When ready to bake, remove it from the refrigerator and let it sit at room temperature for about 20 minutes.

Bake at 375°F (190°C) for approximately 30–40 minutes, or until hot and bubbling throughout.

Add a few extra minutes if the casserole is very cold.

Storage

Allow leftovers to cool slightly before transferring them to an airtight container.

Refrigerate for up to 3–4 days.

Reheat individual portions in the microwave or warm larger portions covered in a 350°F (175°C) oven.

Add a splash of milk before reheating if the sauce has thickened considerably.

Freezing

For best results, freeze the casserole before baking.

Assemble in a freezer-safe baking dish, allow it to cool completely if any ingredients are still warm, and wrap tightly.

Freeze for up to 2 months.

Thaw overnight in the refrigerator, then bake at 375°F (190°C) until hot and bubbling.
