- 2 celery stalks, diced
- 3–4 medium russet or Yukon Gold potatoes, peeled and cut into ¾-inch cubes
- 1 can (14.5 oz/411 g) diced tomatoes, undrained
- 1 can (15 oz/425 g) tomato sauce
- 4 cups (960 ml) beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- 1 teaspoon salt, plus more to taste
- ½ teaspoon black pepper
- 1 bay leaf
- 1 cup (150 g) frozen mixed vegetables, optional
- 1 tablespoon olive oil, if needed
Optional Garnish
- Fresh chopped parsley
- Grated Parmesan cheese
- Shredded cheddar cheese
- Crusty bread or dinner rolls
Instructions
1. Brown the Ground Beef
Heat a large Dutch oven or heavy-bottomed soup pot over medium-high heat.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon as it cooks.
Continue until the beef is browned and no longer pink.
If there is a large amount of excess grease, carefully drain it from the pot.
2. Sauté the Aromatics
Add the diced onion, carrots, and celery to the browned beef.
Cook for about 4–5 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
3. Build the Soup Base
Stir in the tomato paste and cook for about 1 minute.
Add the diced tomatoes with their juices, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, smoked paprika, salt, and black pepper.
Stir well, scraping the bottom of the pot to release any flavorful browned bits.
4. Add the Potatoes
Add the cubed potatoes and bay leaf.
Bring the soup to a gentle boil.
Once boiling, reduce the heat to medium-low and cover partially with a lid.
5. Simmer
Allow the soup to simmer for 25–30 minutes, stirring occasionally.
The potatoes should become fork-tender and the carrots should be soft but not mushy.
If using frozen mixed vegetables, stir them in during the final 8–10 minutes of cooking.
6. Adjust the Seasoning
Remove the bay leaf.
Taste the soup and adjust the salt and pepper as needed.
For a richer flavor, you can add another splash of Worcestershire sauce or a small spoonful of tomato paste.
If the soup becomes thicker than you prefer, add a little extra beef broth or water.
7. Serve
Ladle the hot hamburger soup into bowls.
Garnish with fresh parsley, shredded cheddar, or Parmesan if desired.
Serve immediately with warm crusty bread, garlic bread, biscuits, or dinner rolls for dipping.
Chef’s Tips
Brown the beef well. Don’t just cook it until it’s no longer pink. Allowing the beef to develop some browned edges adds much more flavor to the soup.
Cut the potatoes evenly. Similar-sized pieces will cook at the same rate.
Don’t overcook the vegetables. Simmer just until the potatoes and carrots are tender.
Taste before serving. The amount of salt needed can vary depending on the beef broth and tomato products you use.
Make it ahead. Like many soups, this one tastes even better after the flavors have had time to meld.
Easy Variations
Cheesy Hamburger Soup
Stir in 1 cup shredded cheddar cheese during the final few minutes of cooking for a creamy, cheesy version.
Hamburger Vegetable Soup
Add green beans, corn, peas, zucchini, or frozen mixed vegetables.
Spicy Hamburger Soup
Add ½–1 teaspoon crushed red pepper flakes or a diced jalapeño.
Creamy Hamburger Soup
Stir in ½ cup heavy cream during the final 5 minutes for a richer, creamy finish.
Italian-Style Hamburger Soup
Add ½ teaspoon dried basil and oregano and finish with Parmesan and fresh parsley.
Pasta Hamburger Soup
Replace some of the potatoes with 1 cup small pasta such as macaroni, ditalini, or small shells. Add the pasta during the final 8–12 minutes, depending on the package directions.

Storage
Allow leftover soup to cool before transferring it to an airtight container.
Refrigerate for up to 4 days.
Reheat gently on the stovetop over medium-low heat or in the microwave until steaming hot.
If the soup thickens in the refrigerator, add a splash of beef broth or water while reheating.
Freezing
Hamburger soup freezes well for up to 3 months.
For the best texture, slightly undercook the potatoes if you know you plan to freeze the soup, as they can soften further during reheating.
Cool completely, transfer to freezer-safe containers, leaving some room for expansion, and freeze.
Thaw overnight in the refrigerator and reheat gently on the stovetop.
