- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt

Instructions
1. Prepare the Dough
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter and granulated sugar together for about 2–3 minutes, until smooth and creamy.
Add the egg and vanilla extract. Beat until fully combined.
Gradually add the dry ingredients to the butter mixture, mixing on low speed just until a soft dough forms.
Do not overmix once the flour has been incorporated.
2. Chill the Dough
Shape the dough into a disk and wrap it tightly in plastic wrap.
Refrigerate for 30 minutes.
Chilling firms the butter and makes the dough much easier to roll and cut while helping the animal shapes hold their definition during baking.
3. Prepare the Oven
Preheat the oven to 350°F (175°C).
Line two baking sheets with parchment paper or silicone baking mats.
4. Roll Out the Dough
Lightly flour your work surface and rolling pin.
Roll the chilled dough to approximately ¼ inch (6 mm) thick.
For slightly softer cookies, keep the dough closer to ⅜ inch thick. For crispier cookies, roll it slightly thinner.
5. Cut the Animal Shapes
Use animal-shaped cookie cutters to cut the dough into your favorite shapes.
Gently transfer the cookies to the prepared baking sheets, leaving about 1 inch (2.5 cm) between each cookie.
Gather the scraps, gently press them together, chill briefly if necessary, and roll them out again.
Try not to repeatedly knead the scraps, as this can make the cookies tougher.
6. Add Details
If desired, gently press small details into the dough before baking.
You can use a toothpick or the back of a small piping tip to create eyes, noses, paws, scales, or other simple details.
For a more colorful finish, add sprinkles before baking.
7. Bake
Bake in the preheated oven for 8–12 minutes, depending on the size and thickness of the cookies.
The cookies are ready when the edges are lightly golden and the centers look set.
Avoid overbaking if you want a tender butter cookie.
8. Cool
Let the cookies cool on the baking sheet for 5 minutes.
Transfer them to a wire rack and allow them to cool completely before decorating.
They will firm up as they cool.
9. Decorate
Once completely cooled, decorate as desired.
Pipe royal icing onto the cookies to add eyes, ears, spots, stripes, or other animal features.
You can also drizzle them with melted chocolate or simply dust them with powdered sugar.
Allow any icing or chocolate to set completely before stacking or storing.
Chef’s Tips
Use softened butter, not melted butter. Melted butter will make the dough too soft and can cause the cookies to spread.
Don’t skip chilling. This helps the cookies retain their animal shapes while baking.
Roll evenly. Keeping the dough at a consistent thickness ensures the cookies bake at the same rate.
Don’t overwork the dough. Mix only until the ingredients come together for tender cookies.
Flour the cutter lightly. If your cutter begins sticking, dip it lightly in flour and shake off the excess.
Bake similar-sized cookies together. Smaller animals will finish sooner than large ones.

Variations
Chocolate Animal Cookies
Replace ¼ cup (30 g) of the flour with unsweetened cocoa powder for chocolate-flavored cookies.
Lemon Butter Cookies
Add 1 teaspoon finely grated lemon zest to the dough.
Cinnamon Butter Cookies
Add 1 teaspoon ground cinnamon for a warm, lightly spiced version.
Chocolate-Dipped Animals
Dip half of each cooled cookie into melted chocolate and place on parchment until set.
Rainbow Animal Cookies
Divide the dough into portions and tint each portion with a small amount of gel food coloring before rolling and cutting.
Storage
Store completely cooled cookies in an airtight container at room temperature for up to 1 week.
Place parchment paper between decorated cookies to prevent them from sticking together.
Freezing
The unbaked dough can be wrapped tightly and refrigerated for up to 3 days or frozen for up to 2 months.
You can also freeze baked, undecorated cookies in an airtight freezer-safe container for up to 2–3 months.
Thaw at room temperature before decorating or serving.
