Instructions
1. Prepare the Pan
Preheat the oven to 325°F (160°C).
Lightly grease a 9-inch springform pan. For easier removal, line the bottom with parchment paper.
Wrap the outside bottom of the pan tightly with 2 layers of heavy-duty aluminum foil if you plan to use a water bath.
2. Make the Chocolate Crust
Add the chocolate sandwich cookies, including the filling, to a food processor. Pulse until finely crushed.
Pour in the melted butter and pulse until the mixture resembles wet sand.
Transfer the mixture to the prepared springform pan.
Press it firmly and evenly over the bottom using the bottom of a measuring cup or flat glass.
Bake the crust for 8–10 minutes.
Remove and allow it to cool slightly while preparing the filling.
3. Melt the Chocolate
Place the 200 g chocolate in a heatproof bowl.
Melt gently in the microwave in 20–30 second intervals, stirring well between each, or melt over a saucepan of barely simmering water.
Set aside to cool until warm but no longer hot.
4. Make the Cheesecake Filling
Beat the softened cream cheese and sugar on low to medium-low speed until smooth and creamy.
Avoid whipping too much air into the mixture. Excess air can cause the cheesecake to puff and crack while baking.
Add the eggs one at a time, mixing just until each egg disappears into the batter.
Add the sour cream and vanilla and mix until smooth.
Sift in the cocoa powder and mix gently.
Finally, pour in the melted chocolate and mix until the batter is completely smooth and evenly chocolate-colored.
Scrape down the sides and bottom of the bowl as needed.
5. Fill the Pan
Pour the chocolate cheesecake batter over the slightly cooled crust.
Smooth the top with a spatula.
Gently tap the pan against the counter a few times to release any large air bubbles.
6. Bake
For the creamiest cheesecake, place the springform pan inside a larger roasting pan and carefully add hot water to the roasting pan until it reaches about halfway up the sides of the springform pan.
Bake at 325°F (160°C) for approximately 55–70 minutes.
The cheesecake is ready when:
- The edges look set.
- The center still has a gentle wobble when the pan is lightly nudged.
- The surface looks mostly set but not completely firm.
Do not wait for the center to become completely solid; it will continue setting as it cools.
7. Cool Gradually
Turn off the oven and leave the cheesecake inside with the door slightly cracked for 30–60 minutes.
Remove it from the oven and water bath.
Run a thin knife carefully around the edge of the cheesecake to loosen it from the pan. This helps prevent cracks as the cheesecake contracts.
Allow it to cool completely at room temperature.
8. Chill
Cover the cheesecake and refrigerate for at least 6 hours, preferably overnight.
A long chilling time gives the cheesecake its firm, silky texture and makes it much easier to slice.
9. Make the Chocolate Ganache
Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream in a small saucepan over medium heat until it is steaming and just beginning to simmer around the edges. Do not boil vigorously.
Pour the hot cream over the chocolate.
Let stand for 2–3 minutes, then gently stir from the center outward until smooth and glossy.
Stir in the butter, if using.
Allow the ganache to cool for about 10–15 minutes, until it has thickened slightly but is still pourable.
10. Top the Cheesecake
Remove the chilled cheesecake from the springform pan.
Pour the ganache over the center and gently spread it toward the edges, allowing a little to drip naturally over the sides if desired.
Return the cheesecake to the refrigerator for 20–30 minutes to allow the ganache to set.
Decorate with chocolate curls, chocolate shavings, whipped cream, or berries before serving.
11. Slice and Serve
For clean slices, use a sharp knife dipped in hot water.
Wipe the blade dry, slice through the cheesecake, and repeat for each slice.
Serve chilled or allow individual slices to sit at room temperature for about 10 minutes before serving for an even softer, creamier texture.
Chef’s Tips
Use full-fat ingredients. Full-fat cream cheese and sour cream produce the richest, smoothest cheesecake.
Don’t overmix the eggs. Once the eggs are incorporated, stop mixing. Too much air can cause the cheesecake to rise dramatically and crack.
Cool the melted chocolate first. It should be fluid but only slightly warm. Very hot chocolate can affect the cream cheese mixture.
Don’t overbake. A slight jiggle in the center is exactly what you want.
Chill overnight if possible. The texture becomes noticeably creamier and the chocolate flavor deepens.
For a crack-free top: Bake gently, avoid overmixing, and cool the cheesecake gradually.
Optional Triple-Chocolate Upgrade
For an even more indulgent cheesecake, add a layer of chocolate whipped cream just before serving.
Beat together:
- 1 cup cold heavy whipping cream
- 2 tbsp powdered sugar
- 1 tbsp unsweetened cocoa powder
- ½ tsp vanilla extract
Whip until medium-stiff peaks form, then pipe or spoon around the chilled cheesecake.
Variations
Extra Dark Chocolate
Use 70–75% dark chocolate in the filling and ganache for a deeper, less-sweet chocolate flavor.
Milk Chocolate
Replace the semi-sweet chocolate with milk chocolate for a sweeter, softer chocolate profile.
Chocolate Raspberry
Spread a thin layer of raspberry jam over the crust before adding the cheesecake filling, then garnish the finished cheesecake with fresh raspberries.
Chocolate Peanut Butter
Drizzle warmed peanut butter over the ganache and garnish with chopped peanut butter cups.
Oreo-Style Cheesecake
Add 100 g roughly chopped chocolate sandwich cookies to the filling just before pouring it into the crust.
Storage
Store the cheesecake covered in the refrigerator for up to 5 days.
For the cleanest texture, keep it refrigerated and slice only what you plan to serve.
Freezing
The cheesecake can be frozen either whole or in individual slices.
Freeze uncovered until firm, then wrap tightly in plastic wrap followed by aluminum foil.
Freeze for up to 2 months.
Thaw overnight in the refrigerator before serving.
Serving Suggestions
Serve each slice with:
- A dollop of whipped cream
- Fresh raspberries or strawberries
- Chocolate curls
- A drizzle of chocolate or caramel sauce
- Vanilla ice cream
- A dusting of cocoa powder
The Final Result

It’s dense without being heavy, intensely chocolatey without being overwhelmingly sweet, and perfect for birthdays, holidays, dinner parties, or any serious chocolate craving.
