Instructions
1. Prepare the Oven and Crust
Preheat the oven to 350°F (175°C).
Place the unbaked pie crust into a 9-inch pie dish and gently press it into the bottom and sides.
Trim and crimp the edges as desired.
Keep the crust refrigerated while preparing the fillings. A chilled crust helps maintain its shape during baking.
2. Make the Cheesecake Layer
In a large mixing bowl, beat the softened cream cheese and granulated sugar on low to medium speed until smooth and creamy.
Add the salt and flour and mix just until incorporated.
Blend in the vanilla extract, sour cream, and heavy cream.
Add the eggs one at a time, mixing on low speed just until each egg is incorporated.
Do not overmix. You want a smooth filling without incorporating excessive air.
3. Add the Cheesecake Filling
Pour the cheesecake mixture into the prepared pie crust.
Smooth the surface gently with a spatula.
Place the pie in the refrigerator while you prepare the pecan layer.
4. Make the Pecan Filling
In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla, and salt until smooth.
Fold in the pecans, making sure they are evenly coated in the sweet filling.
5. Add the Pecan Layer
Carefully spoon the pecan mixture over the cheesecake layer.
Spread the pecans evenly across the surface.
Pour slowly rather than dumping the mixture into the center. This helps keep the cheesecake layer intact and creates distinct layers.
6. Bake
Place the pie on a baking sheet to catch any potential drips.
Bake at 350°F (175°C) for 55–65 minutes.
Start checking around 50 minutes.
The pie is ready when:
- The crust is golden brown.
- The pecan topping looks set around the edges.
- The center has a slight jiggle when gently moved.
- The cheesecake layer beneath feels mostly set.
If the crust edges begin browning too quickly, loosely cover them with aluminum foil or a pie shield.
7. Cool
Remove the pie from the oven and place it on a wire rack.
Allow it to cool at room temperature for at least 2 hours.
The filling will continue to firm as it cools.
Do not slice the pie while it is still warm, or the cheesecake layer may not hold its shape.
8. Chill
Once the pie has cooled, cover it loosely and refrigerate for at least 4 hours, preferably overnight.
Chilling is important because it allows both the cheesecake and pecan layers to fully set.
9. Serve
When ready to serve, remove the pie from the refrigerator and let it stand at room temperature for about 15–20 minutes.
Slice with a sharp knife and serve with whipped cream, caramel sauce, or a scoop of vanilla ice cream.
For an extra-special finish, sprinkle a few toasted pecans and a tiny pinch of flaky sea salt over each slice.
Chef’s Tips
Use Room-Temperature Cream Cheese
Softened cream cheese blends much more smoothly and prevents lumps in the cheesecake layer.
Don’t Overmix
Once the eggs go in, mix only until combined. Excess air can cause the cheesecake layer to puff and crack.
Keep the Crust Cold
A chilled pie crust is less likely to shrink or lose its shape during baking.
Watch the Crust
Because the pie requires a relatively long bake, the crust edges can brown before the filling is finished. Use a pie shield or strips of foil if needed.
Let It Chill Properly
This is not a pie to rush. The cheesecake layer needs several hours in the refrigerator to develop its proper firm-but-creamy texture.
Chop or Keep Pecans Whole
Use chopped pecans for easier slicing and a more uniform topping, or use pecan halves for a beautiful rustic appearance.
Optional Toasted Pecan Upgrade
For deeper pecan flavor, toast the pecans before adding them to the filling.
Spread them on a baking sheet and toast at 350°F (175°C) for 6–8 minutes, stirring once.
Let them cool before adding them to the pecan mixture.
Watch carefully—they can go from toasted to burnt quickly.
Variations
Chocolate Pecan Cheesecake Pie
Add ½ cup (85 g) semi-sweet chocolate chips to the pecan layer before baking.
Bourbon Pecan Cheesecake Pie
Replace 1 tablespoon of the heavy cream in the cheesecake layer with bourbon and add another 1 tbsp bourbon to the pecan filling.
Maple Pecan Cheesecake Pie
Replace half of the corn syrup with pure maple syrup for a warm maple flavor.
Chocolate Cheesecake Layer
Add 2 tbsp unsweetened cocoa powder to the cheesecake mixture for a chocolate-and-pecan version.
Salted Caramel Pecan
Drizzle caramel sauce over the chilled pie and finish with a small pinch of flaky sea salt.
Make-Ahead Instructions
This pie is an excellent make-ahead holiday dessert.
Prepare it 1 day ahead, cool completely, cover, and refrigerate overnight.
The flavor and texture are often even better the following day.
Storage
Cover leftover pie and refrigerate for up to 4 days.
Keep it chilled until shortly before serving.
Freezing
For longer storage, freeze the fully cooled pie without whipped cream or other toppings.
Wrap tightly in plastic wrap and then aluminum foil.
Freeze for up to 1 month.
Thaw overnight in the refrigerator before serving.
