Ingredients
For the Yeast Mixture
- 1 tablespoon active dry yeast
- 2 tablespoons granulated sugar
- 2 tablespoons all-purpose flour
- ½ cup (120 ml) warm water
For the Dough
- 6 cups (750 g) all-purpose flour
- 1½ cups (360 ml) warm milk
- ½ cup (120 ml) warm water, plus more if needed
- 2 large eggs
- ¼ cup (60 ml) vegetable oil or melted butter
- 1 teaspoon salt
For the Topping
- 1 tablespoon sesame seeds
- 1 tablespoon black cumin (nigella) seeds
- 1 egg yolk
- 1 tablespoon milk or water
Instructions
1. Activate the Yeast
In a small bowl, combine the warm water, sugar, flour, and yeast.
Stir gently and let the mixture stand for 5–10 minutes.
The mixture should become foamy on top. This indicates that the yeast is active.
Important: The water should feel warm but not hot. Excessively hot water can kill the yeast.
2. Mix the Dough
Place the flour and salt in a large mixing bowl.
Make a well in the center.
Add:
- Activated yeast mixture
- Warm milk
- Eggs
- Vegetable oil or melted butter
Begin mixing with a wooden spoon or your hands.
Gradually add the remaining warm water as needed until a soft dough forms.
You may not need all of the water, depending on your flour and the size of your eggs.
3. Knead
Transfer the dough to a lightly floured work surface.
Knead for approximately 8–10 minutes, until the dough becomes smooth, elastic, and soft.
The dough should feel slightly tacky but should not stick heavily to your hands.
If it is extremely sticky, add flour 1 tablespoon at a time.

4. First Rise

7. Prepare the Topping
Whisk together the egg yolk and milk or water.
Brush the tops of the risen loaves lightly with the egg wash.
Sprinkle generously with sesame seeds and black cumin seeds.
For a traditional appearance, you can make a few shallow diagonal cuts across the tops with a sharp knife.
8. Bake
Place the bread in the preheated oven.
Bake for 25–30 minutes, or until the loaves are beautifully golden brown and sound hollow when tapped underneath.
If the tops brown too quickly, loosely cover them with aluminum foil during the final portion of baking.
9. Cool
Remove the bread from the oven and transfer it to a wire rack.
Allow it to cool for at least 20–30 minutes before slicing.
For the softest crust, lightly brush the warm loaves with melted butter immediately after baking and cover loosely with a clean kitchen towel while cooling.
