Recipe Information
- Prep Time: 25 minutes
- Resting Time: 15 minutes
- Cooking Time: 15–20 minutes
- Total Time: About 1 hour
- Yield: 30–40 crackers, depending on size
- Difficulty: Easy
- Method: Deep-frying
Ingredients
For the Cracker Dough
- 2 cups (250 g) all-purpose flour
- 3 tablespoons (42 g) butter, softened
- 1 large egg
- ½ cup (75 g) red bell pepper, very finely chopped
- ¼ cup (15 g) fresh coriander, finely chopped
- ¼ cup (25 g) green onion, finely chopped
- 1 teaspoon red chili flakes
- ½ teaspoon freshly ground black pepper
- ¾ teaspoon salt
- ½ teaspoon garlic powder
- 1–2 tablespoons water, only if needed
For Frying
- Vegetable oil, enough for deep-frying
Instructions
1. Prepare the Dough
Add the flour, salt, garlic powder, black pepper, and red chili flakes to a large mixing bowl. Stir well to evenly distribute the seasonings.
Add the softened butter and rub it into the flour using your fingertips until the mixture resembles coarse crumbs.
This step helps create a crisp, slightly flaky texture.
2. Add the Fresh Ingredients
Add the finely chopped red bell pepper, coriander, and green onion.
Mix everything together thoroughly.
Make sure the vegetables are chopped very finely. Large pieces can make the dough difficult to roll and may cause the crackers to break while frying.
3. Add the Egg
Crack the egg into the mixture and knead gently until a dough begins to form.
The moisture from the vegetables and egg may be enough to bring everything together. If the dough feels too dry, add water 1 teaspoon at a time, using only as much as necessary.
You want a firm, smooth dough, not a soft or sticky one.
4. Knead and Rest
Knead the dough for about 2–3 minutes, just until smooth and cohesive.
Form it into a ball, cover, and let it rest for about 15 minutes.
Resting allows the flour to hydrate and makes the dough easier to roll.
5. Roll Out the Dough
Divide the dough into 2–3 portions.
Lightly flour your work surface and roll each portion out very thinly, approximately 2–3 mm thick.
The thinner the dough, the crispier your crackers will be.
Try to keep the thickness as even as possible so the crackers cook evenly.
6. Cut Into Triangles
Using a sharp knife or pizza cutter, cut the rolled dough into strips and then diagonally into small triangle shapes.
You can make them small for bite-sized snacks or slightly larger for dipping.
Gather the scraps, gently knead them together, rest for a few minutes if necessary, and roll them out again.
7. Heat the Oil
Pour enough oil into a deep, heavy-bottomed pan for frying.
Heat the oil over medium heat, ideally to around 170–175°C (340–350°F).
To test the oil without a thermometer, drop in a tiny piece of dough. It should rise steadily with small bubbles around it without immediately turning dark.
8. Fry the Crackers
Carefully place a small batch of triangle crackers into the hot oil.
Do not overcrowd the pan, as this will lower the oil temperature and make the crackers greasy.
Fry for about 2–4 minutes, turning occasionally, until the crackers are crisp and golden.
Keep the heat at medium or medium-low as needed. If the crackers brown too quickly, the oil is too hot.
9. Drain
Remove the crackers with a slotted spoon and transfer them to a plate or tray lined with paper towels.
Allow excess oil to drain.
The crackers will become even crispier as they cool.
10. Cool Completely
Let the crackers cool completely before serving or storing.
Once cooled, they should be crisp, crunchy, and sturdy enough for dipping.
Chef’s Tips
- Roll thin: This is the most important step for crunchy crackers.
- Chop vegetables finely: Large pieces can create weak spots in the dough.
- Don’t add too much water: A wet dough produces softer, less crispy crackers.
- Keep the oil temperature steady: Oil that is too cool produces greasy crackers, while oil that is too hot can brown them before the centers become crisp.
- Fry in batches: Give each cracker enough room to move freely in the oil.
- Don’t over-knead: Knead only until the dough comes together and becomes smooth.
- Cool before storing: Trapped steam can soften the crackers.
Flavor Variations
Extra Spicy
Add another ½–1 teaspoon of chili flakes or add a pinch of cayenne pepper.
Cheesy Crackers
Add 2–3 tablespoons of finely grated Parmesan or cheddar powder to the dry ingredients.
Cumin & Chili
Add ½ teaspoon ground cumin for a warm, earthy flavor.
Herby Crackers
Add a little dried oregano, parsley, or extra fresh coriander.
Sesame Crackers
Add 1–2 tablespoons of toasted sesame seeds to the dough.
Serving Suggestions
Serve these crunchy triangles with:
- Green chutney
- Mint yogurt dip
- Tamarind chutney
- Garlic mayonnaise
- Chili sauce
- Sweet chili sauce
- Creamy cheese dip
- Tomato salsa
They’re also delicious alongside a hot cup of tea or coffee.
Storage
Once completely cool, store the crackers in an airtight container at room temperature for up to 1 week.
For maximum crunch, keep them away from humidity and moisture.
If they soften slightly, place them in a 150°C (300°F) oven for 5–8 minutes, then allow them to cool completely before storing again.
Make-Ahead Tip
The dough can be prepared several hours ahead and refrigerated, tightly covered. Let it sit at room temperature for about 10–15 minutes before rolling if it becomes too firm.
Final Result: Crispy, golden, boldly seasoned triangle crackers with fresh vegetables and a delicious spicy kick — perfect for snacking, dipping, and sharing.
