Ingredients
For the Soup
- 1 pound (450 g) boneless, skinless chicken breasts
- 4 cups (960 ml) chicken broth
- 1 cup (225 g) cream cheese, softened and cut into cubes
- 1 cup (240 ml) heavy cream
- 1½ cups (150 g) shredded cheddar cheese
- ½ cup (50 g) shredded Monterey Jack cheese
- 3–4 fresh jalapeños, finely chopped
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- ¾ teaspoon salt, or to taste
- ½ teaspoon dried oregano
- 2 tablespoons chopped fresh cilantro or parsley, optional
For the Toppings
- 4 slices bacon, cooked crisp and crumbled
- ½ cup shredded cheddar cheese
- 1 fresh jalapeño, thinly sliced
- 2 tablespoons chopped green onions
- Extra cilantro or parsley, optional
Instructions
1. Add the Chicken and Aromatics
Place the chicken breasts in the bottom of a 6-quart slow cooker.
Add the diced onion, minced garlic, and chopped jalapeños.
For a milder soup, remove the jalapeño seeds and membranes before chopping. For more heat, leave some of them intact.
2. Add the Broth and Seasonings
Pour the chicken broth over the chicken.
Add the garlic powder, onion powder, smoked paprika, black pepper, salt, and dried oregano.
Stir gently around the chicken to distribute the seasonings.
3. Slow Cook the Chicken
Cover and cook on:
- LOW: 5–6 hours
- HIGH: 3–4 hours
The chicken should be tender and cooked through, reaching an internal temperature of 165°F (74°C).
Avoid overcooking, as this can make the chicken dry.
4. Shred the Chicken
Transfer the cooked chicken to a plate or bowl.
Use two forks to shred it into bite-sized pieces, or shred it directly in the slow cooker using meat claws or a hand mixer on low.
Return the shredded chicken to the slow cooker.
5. Add the Cream Cheese
Add the softened cream cheese in small pieces.
Stir until it begins to melt into the hot broth.
For the smoothest soup, make sure the cream cheese is softened before adding it.
6. Make It Rich and Creamy
Pour in the heavy cream.
Add the shredded cheddar and Monterey Jack cheeses.
Stir well until the cheeses melt completely and the soup becomes thick, creamy, and smooth.
Keep the slow cooker on LOW for another 10–15 minutes while stirring occasionally.
Do not let the soup boil after adding the dairy, as excessive heat can cause the cream to separate.
7. Taste and Adjust
Taste the soup and adjust the seasoning as needed.
Add extra salt for savoriness, additional black pepper for bite, or more chopped jalapeño for additional heat.
For a thinner soup, add a little extra chicken broth until it reaches your preferred consistency.
8. Serve
Ladle the hot soup into bowls.
Top each serving with crispy bacon, shredded cheddar, sliced jalapeños, chopped green onions, and fresh herbs.
Serve immediately while wonderfully hot and creamy.
Chef’s Tips
- Soften the cream cheese first: Cold cream cheese can take longer to blend smoothly.
- Use freshly shredded cheese: It melts more smoothly than many pre-shredded cheeses.
- Control the heat: Jalapeños vary significantly in spiciness. Taste one before deciding how many to use.
- Don’t boil the dairy: Once the cream cheese, heavy cream, and shredded cheese are added, keep the soup gently heated.
- For extra flavor: Roast or sauté the jalapeños briefly before adding them.
- For thicker soup: Mash a small portion of the chicken and vegetables into the broth, or reduce the amount of broth slightly.
Variations
Extra Spicy Jalapeño Popper Soup
Add 1–2 additional jalapeños, a pinch of cayenne, or a few dashes of hot sauce.
Mild Version
Use only 1–2 seeded jalapeños and replace some of them with diced green bell pepper.
Bacon Jalapeño Popper Soup
Stir half of the cooked crumbled bacon directly into the soup and reserve the rest for topping.
Loaded Chicken Soup
Add 1–2 cups of diced potatoes along with the chicken for a heartier meal.
Rotisserie Chicken Version
Use about 3 cups shredded cooked chicken. Cook the broth, vegetables, and seasonings for 2–3 hours on LOW, then add the cooked chicken along with the dairy and cheeses near the end.
Serving Suggestions
This creamy soup pairs especially well with:
- Warm crusty bread
- Garlic bread
- Buttery dinner rolls
- Cornbread
- Tortilla chips
- A crisp green salad
- Toasted baguette slices
For the ultimate jalapeño-popper experience, serve with extra bacon, cheese, and fresh jalapeños on the side so everyone can customize their bowl.
Storage
Allow leftover soup to cool slightly, then transfer it to an airtight container.
Refrigerate for up to 3–4 days.
Reheat gently on the stovetop over low to medium-low heat, stirring frequently. Add a splash of chicken broth or cream if the soup has thickened too much.
Freezing
Because this soup contains cream cheese, heavy cream, and melted cheese, freezing can slightly change the texture.
For best results, freeze the chicken and broth base before adding the dairy. When ready to serve, thaw, reheat gently, then add the cream cheese, heavy cream, and shredded cheeses.
Final Result
A bowl of rich, velvety, cheesy chicken soup loaded with tender shredded chicken, fresh jalapeños, smoky bacon, and classic jalapeño-popper flavor—all made with the convenience of the slow cooker.
