Ingredients
For the Banana Walnut Cake Bars
- 3 ripe bananas, mashed
- 2 cups (250 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 2 large eggs
- ½ cup (113 g) butter, softened
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup (120 g) chopped walnuts
For the Frosting
- 1 cup cream cheese frosting, homemade or store-bought
Optional Garnish
- Extra chopped walnuts
- A light sprinkle of cinnamon
- Thin banana slices, added just before serving
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking pan or line it with parchment paper, leaving a little overhang on the sides for easy removal.
Set aside.
2. Mash the Bananas
Peel the ripe bananas and place them in a large mixing bowl.
Mash them with a fork until mostly smooth.
A few small banana pieces are perfectly fine and add extra texture to the finished cake bars.
Tip: The best bananas for baking are very ripe, with plenty of brown spots on the peel. They are sweeter and mash more easily.
3. Cream the Butter and Sugar
In a separate large mixing bowl, beat the softened butter and sugar together until light and creamy.
This should take about 2–3 minutes with an electric mixer.
4. Add the Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
5. Add the Mashed Bananas
Add the mashed bananas to the wet ingredients.
Mix until evenly combined.
The mixture may look slightly curdled at this stage, which is completely normal.
6. Combine the Dry Ingredients
In a separate bowl, whisk together:
- All-purpose flour
- Ground cinnamon
For best results, add ½ teaspoon baking soda and ½ teaspoon baking powder to help the bars rise and create a lighter texture.
7. Make the Batter
Gradually add the dry ingredients to the banana mixture.
Mix on low speed or stir gently just until combined.
Do not overmix, as overmixing can make the cake bars dense.
8. Fold in the Walnuts
Gently fold in the chopped walnuts.
Reserve a small handful if you’d like to sprinkle extra walnuts over the frosting later.
9. Spread into the Pan
Pour the batter into the prepared baking pan.
Use a spatula to spread it evenly into all corners.
10. Bake
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Avoid overbaking, as this can dry out the banana cake.
11. Cool Completely
Remove the pan from the oven and allow the cake to cool completely in the pan.
This is important because warm cake will melt the cream cheese frosting.
Allow approximately 45–60 minutes for cooling.
12. Frost the Cake
Once completely cool, spread the cream cheese frosting evenly over the top.
Use an offset spatula or the back of a spoon to create a smooth finish.
13. Garnish and Slice
Sprinkle with extra chopped walnuts and a light dusting of cinnamon, if desired.
Slice into squares or rectangular bars.
Serve and enjoy!
Chef’s Tips
- Use very ripe bananas for the sweetest and most flavorful bars.
- Measure flour carefully. Too much flour can make the bars dry.
- Don’t overmix the batter once the flour has been added.
- Make sure the bars are completely cool before frosting.
- Toast the walnuts for extra flavor. Spread them on a baking sheet and toast at 350°F (175°C) for 5–7 minutes, then cool completely before adding.
- For clean slices, chill the frosted bars for 20–30 minutes before cutting.
Important Baking Note
The ingredient list does not include a leavening agent. For a lighter, more traditional cake-bar texture, adding:
- ½ teaspoon baking soda
- ½ teaspoon baking powder
is recommended.
If you prefer to follow the original ingredient list exactly, the bars will still bake, but they may have a denser texture.
Variations
🍫 Chocolate Chip Banana Walnut Bars
Add ½–1 cup chocolate chips along with the walnuts.
🥥 Banana Coconut Bars
Replace ½ cup of the walnuts with sweetened shredded coconut.
🍯 Brown Sugar Banana Bars
Replace half of the granulated sugar with light brown sugar for a deeper caramel-like flavor.
🥜 Nut-Free Banana Bars
Simply omit the walnuts.
🍎 Banana Spice Bars
Add:
- ¼ teaspoon nutmeg
- ¼ teaspoon allspice
for a warmer, spiced flavor.
Make-Ahead Instructions
The unfrosted bars can be baked 1 day in advance.
Allow them to cool completely, cover tightly, and store at room temperature.
Frost shortly before serving or refrigerate the frosted bars.
Storage
Because of the cream cheese frosting, store the finished bars in an airtight container in the refrigerator for up to 4–5 days.
For the best flavor, allow a refrigerated bar to sit at room temperature for about 10–15 minutes before eating.
Freezing
The unfrosted banana cake bars freeze especially well.
- Allow the bars to cool completely.
- Cut into portions.
- Wrap individually.
- Place in a freezer-safe container.
Freeze for up to 2 months.
Thaw at room temperature and frost before serving.

Soft, moist banana cake, warm cinnamon, crunchy walnuts, and tangy cream cheese frosting make these Banana Walnut Cake Bars an unforgettable treat. They’re simple enough for everyday baking but delicious enough to bring to any celebration. 🍌🌰🍰
