Recipe Information

  • Prep Time: 15 minutes
  • Brining Time: 2 hours minimum
  • Best Flavor: 12–24 hours
  • Total Time: About 12–24 hours
  • Yield: About 1 quart
  • Difficulty: Easy
  • Method: Refrigerator pickling

Ingredients

For the Pickles

  • 2 cups (about 330 g) fresh pineapple, cut into bite-sized chunks
  • 1 cup (about 100 g) sliced jalapeños
  • Leave the seeds in for a spicier pickle
  • Remove seeds and membranes for a milder version
  • 1 cup cucumber slices, optional
  • 1 cup (240 ml) white vinegar
  • ¾ cup (150 g) granulated sugar
  • 1 tablespoon salt
  • 2 cloves garlic, smashed

Optional Flavor Additions

  • ½ teaspoon black peppercorns
  • ½ teaspoon mustard seeds
  • ½ teaspoon red pepper flakes
  • 2 tablespoons thinly sliced red onion
  • A few sprigs of fresh cilantro

Instructions

1. Prepare the Vegetables and Pineapple

Cut the pineapple into bite-sized chunks.

Slice the jalapeños into thin rounds. For extra heat, leave the seeds and membranes intact. For less heat, remove some or all of them.

If using cucumber, slice it into thin rounds or half-moons.

Set the prepared produce aside.

2. Make the Pickling Brine

Add the white vinegar, sugar, salt, and smashed garlic to a small saucepan.

Place over medium heat and stir until the sugar and salt completely dissolve.

Bring the mixture just to a gentle simmer.

Do not boil it aggressively.

Remove from the heat.

3. Cool the Brine Slightly

Let the hot vinegar mixture cool for about 5–10 minutes.

You want it hot enough to help infuse the flavors but not so aggressively hot that it makes the pineapple and cucumber overly soft.

4. Pack the Jar

Use a clean 1-quart (1-liter) glass jar or container.

Add a layer of pineapple, followed by jalapeños and cucumber.

Continue layering until all the produce has been added.

If using any optional spices or red onion, distribute them throughout the jar.

5. Add the Brine

Slowly pour the warm pickling brine into the jar.

The fruit and vegetables should be mostly or completely submerged.

Press them down gently with a clean spoon if necessary.

Leave a little space at the top of the container.

6. Cool Completely

Allow the uncovered jar to cool to room temperature.

Once completely cool, cover tightly with a lid.

7. Refrigerate

Place the jar in the refrigerator.

The pickles can be enjoyed after about 2 hours, but the flavor will be significantly better after 12–24 hours.

For the best balance of sweet, spicy, and tangy flavor, let them pickle overnight.

8. Serve

Use a clean fork or spoon to remove the pineapple, jalapeños, and cucumber from the brine.

Serve chilled or allow them to sit at room temperature for a few minutes before serving.

Chef’s Tips

  • Keep everything submerged: Produce exposed above the brine will not pickle evenly.
  • Fresh pineapple works best: It provides the brightest tropical flavor and firm texture.
  • Adjust the heat: Jalapeño heat varies, so taste one before deciding how much of the seed and membrane to keep.
  • Don’t overcook the produce: The goal is crisp, bright pickles rather than soft, cooked fruit and vegetables.
  • Use a clean container: A thoroughly cleaned glass jar helps maintain freshness.
  • Slice consistently: Even pieces pickle at a similar rate.

Flavor Variations

Extra Spicy Pineapple Pickles

Keep all jalapeño seeds and membranes and add ½ teaspoon crushed red pepper flakes.

Sweet & Mild

Remove the jalapeño seeds and use fewer jalapeños. You can also add extra pineapple for a sweeter result.

Garlic-Lover’s Version

Add 1–2 additional smashed garlic cloves to the jar.

Tropical Pickles

Add thin slices of red onion and a few cilantro leaves for a bright tropical flavor.

Cucumber-Pineapple Pickles

Use the full amount of cucumber for extra crunch and freshness.

How to Serve

These pickles are fantastic with:

  • Burgers
  • Pulled pork
  • Tacos
  • Grilled chicken
  • Steak
  • BBQ sandwiches
  • Hot dogs
  • Nachos
  • Rice bowls
  • Fried chicken
  • Cheese and charcuterie boards

The sweet pineapple and spicy jalapeño combination is especially delicious with rich, smoky grilled meats.

Storage

Keep the pickles refrigerated at all times.

For best quality, consume within approximately 1–2 weeks.

Always use a clean utensil when removing pickles from the jar, and discard them if they develop an unusual odor, mold, or other signs of spoilage.
