Ingredients
For the Fried Rice
- 3 cups (about 500–550 g) cooked rice, preferably cold and day-old
- 2 boneless, skinless chicken breasts, diced into small pieces
- 3 large eggs
- 1 cup (about 150 g) frozen peas and carrots
- 3 tablespoons (45 ml) soy sauce
- 2 tablespoons (30 ml) sesame oil
- 4 green onions, thinly sliced
- 3 cloves garlic, minced
- 1–2 tablespoons neutral cooking oil
- Salt, to taste
- Black pepper, to taste
Optional Additions
- 1 teaspoon grated fresh ginger
- 1 tablespoon oyster sauce
- ½ teaspoon white pepper
- ½ cup diced onion
- 1 tablespoon chopped fresh cilantro
- Toasted sesame seeds, for garnish
Instructions
1. Prepare the Rice
For the best fried rice, use cold cooked rice, ideally rice that has been refrigerated overnight.
Break up any large clumps with your fingers or a fork before cooking.
Freshly cooked rice contains more moisture and can produce soft or mushy fried rice.
2. Prepare the Chicken
Pat the diced chicken dry with paper towels.
Season lightly with black pepper and a small pinch of salt.
Don’t add too much salt at this stage because the soy sauce will provide additional seasoning later.
3. Cook the Eggs
Heat a large wok or wide skillet over medium-high heat.
Add about 1 teaspoon of cooking oil.
Beat the eggs in a small bowl and pour them into the hot pan.
Cook for about 30–60 seconds, gently stirring until the eggs are just set but still soft.
Transfer the eggs to a plate and set aside.
4. Cook the Chicken
Add another tablespoon of cooking oil to the same skillet.
Add the diced chicken in a single layer.
Cook for approximately 5–7 minutes, stirring occasionally, until browned and completely cooked through.
The chicken should reach an internal temperature of 165°F (74°C).
Transfer the chicken to the plate with the eggs, or push it to one side of the skillet if there’s enough room.
5. Sauté the Garlic
Add the minced garlic to the skillet.
If using fresh ginger or diced onion, add them now as well.
Stir-fry for about 30–60 seconds, just until fragrant.
Be careful not to burn the garlic.
6. Add the Vegetables
Add the frozen peas and carrots.
Cook for about 2–3 minutes, stirring frequently, until heated through and slightly tender.
There’s no need to thaw them first.
7. Add the Rice
Increase the heat to high.
Add the cold cooked rice to the skillet.
Use a spatula to break apart any remaining clumps.
Toss and stir-fry for 3–5 minutes, allowing the rice to heat through and develop a little toasted flavor.
Spread the rice into the pan and let it sit undisturbed for 20–30 seconds at a time before stirring. This helps it brown rather than steam.
8. Add the Soy Sauce
Drizzle the soy sauce evenly around the hot sides of the skillet rather than pouring it all into one spot.
Toss the rice immediately so the sauce distributes evenly.
If using oyster sauce, add it now.
9. Add the Sesame Oil
Drizzle in the sesame oil.
Stir-fry for another 30–60 seconds until the rice is glossy and fragrant.
Taste and adjust with additional soy sauce, salt, or black pepper as needed.
10. Return the Chicken and Eggs
Add the cooked chicken and scrambled eggs back to the skillet.
Toss everything together until evenly distributed and heated through.
11. Add the Green Onions
Reserve a small handful of sliced green onions for garnish.
Add the rest to the skillet and stir-fry for about 30 seconds.
The green onions should remain bright and fresh rather than becoming completely soft.
12. Finish and Serve
Remove the skillet from the heat.
Sprinkle the remaining green onions over the top.
Add toasted sesame seeds or a little fresh cilantro if desired.
Serve immediately while hot.
Chef’s Tips
- Cold rice is best: Refrigerated rice fries much better than freshly cooked rice.
- Use a wide skillet: A large surface area helps the rice fry instead of steam.
- Cook over high heat: This creates the characteristic lightly toasted fried-rice flavor.
- Don’t overcrowd the pan: If your skillet is small, cook the chicken separately in batches.
- Keep the vegetables crisp-tender: Overcooked vegetables can make the rice watery.
- Add sesame oil toward the end: This preserves its fragrant toasted flavor.
- Season gradually: Soy sauce varies in saltiness, so taste before adding extra salt.
How to Get Restaurant-Style Fried Rice
For especially flavorful fried rice:
- Use rice that has been chilled overnight.
- Cook the ingredients separately so each one gets proper browning.
- Use a very hot skillet or wok.
- Avoid adding too much sauce or liquid.
- Let the rice make direct contact with the hot pan before stirring.
- Add sesame oil near the end for aroma.
