Recipe Details

  • Prep Time: 15 minutes
  • Cook Time: 3½–4½ hours on LOW
  • Total Time: About 4 hours 15 minutes
  • Servings: 8–10
  • Difficulty: Easy
  • Method: Crock-Pot / Slow Cooker

Ingredients

For the Casserole

  • 1 bag (30–32 oz / 850–900 g) frozen shredded hashbrowns, thawed
  • 8 oz (225 g) bacon, cooked crisp and crumbled
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1 cup (115 g) shredded Monterey Jack cheese
  • 1 small yellow onion, finely diced
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 g) sour cream
  • 1 can (10.5 oz / 298 g) condensed cream of chicken soup
  • ½ cup (120 ml) milk
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt, or to taste

For the Topping

  • ½ cup shredded cheddar cheese
  • 2–3 slices cooked bacon, crumbled
  • 2 green onions, thinly sliced
  • Optional: chopped fresh parsley

Instructions

1. Cook the Bacon

  1. Cook the bacon in a skillet over medium heat until crisp.
  2. Transfer to a paper towel-lined plate to drain.
  3. Once cool enough to handle, crumble the bacon.
  4. Reserve a small amount for garnishing the finished casserole.

2. Prepare the Creamy Cheese Sauce

  1. Place the softened cream cheese in a large bowl.
  2. Add the sour cream, condensed cream of chicken soup, and milk.
  3. Add the garlic powder, onion powder, smoked paprika, black pepper, and salt.
  4. Whisk until smooth and creamy.
  5. Stir in the shredded cheddar and Monterey Jack cheese.

3. Combine the Hashbrowns

  1. Place the thawed hashbrowns in a large mixing bowl.
  2. Add the diced onion and most of the cooked bacon.
  3. Pour the creamy cheese mixture over the hashbrowns.
  4. Gently fold everything together until the potatoes are evenly coated.

4. Load the Crock-Pot

  1. Lightly grease a 6-quart slow cooker with cooking spray or butter.
  2. Transfer the hashbrown mixture into the Crock-Pot.
  3. Spread it into an even layer.
  4. Cover with the lid.

5. Slow Cook

Cook on:

  • LOW: 3½–4½ hours
  • HIGH: 2–3 hours

The casserole is ready when the hashbrowns are tender, the edges are bubbling, and the cheese is completely melted.

Try not to lift the lid repeatedly while cooking, as this releases heat and can extend the cooking time.

6. Add the Loaded Topping

During the final 15–20 minutes of cooking:

  1. Sprinkle the remaining ½ cup cheddar cheese over the top.
  2. Add the reserved crispy bacon.
  3. Cover again and allow the cheese to melt completely.

7. Garnish and Serve

  1. Turn off the slow cooker.
  2. Sprinkle generously with sliced green onions.
  3. Add fresh parsley if desired.
  4. Let the casserole rest uncovered for about 5–10 minutes before serving.

Serve hot and cheesy!

Chef’s Tips

  • Thaw the hashbrowns first for the most even cooking and best texture.
  • Don’t skip the bacon—it adds smoky, salty flavor throughout the casserole.
  • For extra crisp bacon flavor, reserve some bacon for the topping rather than mixing it all into the casserole.
  • Use freshly shredded cheese when possible. It melts more smoothly than pre-shredded cheese.
  • Avoid overcooking. Once the potatoes are tender and the cheese is melted, the casserole is ready.
  • If your hashbrowns contain a lot of excess moisture after thawing, gently squeeze them dry before using.

Make It Even More Loaded!

Turn this into a complete loaded hashbrown casserole by adding:

  • 🌶️ Diced jalapeños
  • 🫑 Bell peppers
  • 🍳 Cooked scrambled eggs
  • 🌭 Cooked breakfast sausage
  • 🥩 Diced ham
  • 🍄 Sautéed mushrooms
  • 🌽 Sweet corn
  • 🧅 Extra caramelized onions

For a breakfast version, adding cooked breakfast sausage and scrambled eggs makes it especially hearty.

Variations

🥓 Bacon Cheeseburger Style

Add cooked ground beef, extra cheddar, diced pickles, and a little Worcestershire sauce.

🌶️ Spicy Loaded Hashbrowns

Add diced jalapeños, pepper jack cheese, and a pinch of cayenne.

🍳 Breakfast Hashbrown Casserole

Add 6–8 lightly scrambled eggs and cooked breakfast sausage or ham.

🧀 Extra-Cheesy Version

Use 3 cups total shredded cheese and add a layer of mozzarella for extra stretch.

🥦 Vegetable Loaded

Add sautéed bell peppers, mushrooms, spinach, and broccoli for a hearty vegetable version.

Storage

Store leftover casserole in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat individual portions in the microwave until hot, or place a larger amount in a covered oven-safe dish and warm at 175°C (350°F) until heated through.

Freezing

For best texture, freezing is not recommended because the sour cream and creamy sauce can separate slightly after thawing.

If you do freeze it, allow the casserole to cool completely, portion it into airtight freezer-safe containers, and freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
