🍮 Leche Flan
Leche Flan is a classic Filipino dessert made with a rich, silky egg custard topped with a layer of deep golden caramel. It is incredibly creamy, delicately flavored with vanilla, and wonderfully indulgent without requiring complicated ingredients.
The secret to a smooth, luxurious leche flan is cooking the custard gently and avoiding too much air in the mixture. Served chilled with the caramel sauce spooned over the top, it’s perfect for holidays, celebrations, family gatherings, and special dinners.
Recipe Information
- Prep Time: 15 minutes
- Cooking Time: 45–55 minutes
- Chilling Time: 4 hours
- Total Time: About 5 hours
- Servings: 6–8
- Difficulty: Easy
- Method: Steamed
- Pan: 1 large llanera/flan mold or 8-inch round cake pan
Ingredients
For the Caramel
- ½ cup (100 g) granulated sugar
- 2 tablespoons water
For the Leche Flan
- 6 large egg yolks
- 1 cup (240 ml) evaporated milk
- 1 cup (397 g) sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Caramel
Place the sugar and water in a small saucepan over medium-low heat.
Stir gently just until the sugar is moistened, then allow it to cook without stirring.
As the sugar melts, it will gradually turn golden.
Swirl the saucepan gently from time to time to encourage even coloring.
Continue cooking until the caramel reaches a deep amber-golden color.
Watch it carefully because caramel can go from perfectly golden to burnt very quickly.
2. Pour the Caramel Into the Mold
Immediately pour the hot caramel into your flan mold or llanera.
Carefully tilt and rotate the mold so the caramel coats the bottom evenly.
Be extremely careful—the caramel is extremely hot.
Set the mold aside and allow the caramel to cool and harden.
3. Prepare the Custard
Place the egg yolks in a large mixing bowl.
Gently whisk the yolks until blended, but avoid creating lots of bubbles.
Add the condensed milk, evaporated milk, and vanilla extract.
Mix gently until everything is thoroughly combined and smooth.
Do not beat vigorously.
4. Strain the Custard
Pour the custard mixture through a fine-mesh sieve into another bowl or large measuring jug.
This removes any bits of egg and creates an especially smooth, silky texture.
For an even finer custard, strain it twice.
5. Fill the Mold
Slowly pour the strained custard over the cooled caramel.
If bubbles appear on the surface, gently skim them away with a spoon or pop them with a toothpick.
Cover the mold tightly with aluminum foil.
The foil prevents condensation from dripping onto the custard while steaming.
6. Prepare the Steamer
Fill a large pot with enough water to create steam without allowing the water to touch the bottom of the flan mold.
Bring the water to a gentle simmer.
Place a steaming rack inside.
7. Steam the Flan
Carefully place the covered flan mold on the steaming rack.
Cover the pot with a tight-fitting lid.
Steam over low to medium-low heat for approximately 45–55 minutes.
Avoid vigorous boiling. Gentle steaming produces a much smoother custard.
8. Check for Doneness
The flan is ready when the edges are set but the center still has a gentle jiggle when the mold is moved.
You can also insert a thin toothpick near the center. It should come out mostly clean.
Do not overcook the flan, as excessive heat can produce a rubbery or porous texture.
9. Cool Completely
Remove the flan from the steamer.
Allow it to cool at room temperature for about 30–45 minutes.
Then cover and refrigerate for at least 4 hours, preferably overnight.
The custard will firm up considerably as it chills.
10. Unmold the Leche Flan
When ready to serve, run a thin knife carefully around the edges of the mold.
Place a serving plate over the top of the mold.
Quickly but carefully invert the mold onto the plate.
The flan should release, with the golden caramel flowing beautifully over the top and around the sides.
If the flan doesn’t release immediately, gently warm the bottom of the mold for a few seconds and try again.
11. Slice and Serve
Use a sharp knife to cut the leche flan into wedges.
Spoon the caramel sauce from the plate over each serving.
Serve chilled.
Chef’s Tips
- Don’t whip the eggs: Excessive air creates bubbles and holes in the finished custard.
- Always strain the mixture: This is one of the easiest ways to achieve an exceptionally smooth flan.
- Cook gently: High heat can make the custard curdle or become rubbery.
- Watch the caramel carefully: Remove it from the heat as soon as it reaches a deep golden amber color.
- Chill thoroughly: Cold flan unmolds much more cleanly and has a firmer, silkier texture.
- Don’t overcook: A slight jiggle in the center is exactly what you want.
- Use room-temperature or slightly warm dairy: It blends more easily with the egg yolks.
Oven-Baked Method
If you prefer to bake the leche flan instead of steaming it:
- Preheat the oven to 325°F (165°C).
- Place the filled and foil-covered flan mold inside a larger baking dish.
- Pour hot water into the larger dish until it reaches about halfway up the sides of the flan mold.
- Bake for approximately 45–60 minutes, or until the edges are set and the center gently jiggles.
- Remove the mold from the water bath and cool completely.
- Refrigerate for at least 4 hours before unmolding.
The water bath provides gentle, even heat and helps prevent the custard from becoming rubbery.
Serving Suggestions
Leche flan is delicious on its own, but it can also be served with:
- Fresh mango
- Sliced strawberries
- Coconut
- Whipped cream
- Fresh berries
- A scoop of vanilla ice cream
- Strong coffee or tea
It is also wonderfully rich served alongside traditional Filipino desserts such as ube-based sweets or cassava cake.
Storage
Keep leche flan covered and refrigerated.
For the best quality, enjoy within 3–4 days.
Because the dessert contains eggs and dairy, it should remain refrigerated until ready to serve.
Make-Ahead Instructions
Leche flan is an excellent make-ahead dessert.
Prepare it 1–2 days before serving and keep it refrigerated in its mold until you’re ready to unmold it.
In fact, overnight chilling often gives the dessert an even better texture and makes unmolding easier.
Final Result
A beautifully smooth and luxurious Filipino Leche Flan with a delicate vanilla custard, a rich creamy texture, and a glossy layer of deep golden caramel cascading over every slice. 🍮
