Recipe Information
- Prep Time: 10 minutes
- Cook Time: 4–6 hours
- Total Time: About 4½–6½ hours
- Servings: 4–6
- Difficulty: Easy
- Method: Slow Cooker
Ingredients
For the Chicken & Stuffing
- 4 boneless, skinless chicken breasts
- 1 cup (240 ml) chicken broth
- 1 can (10.5 oz / 298 g) cream of chicken soup
- 1 box (about 6 oz / 170 g) seasoned stuffing mix
- ½ cup (120 ml) water
- ½ teaspoon garlic powder, optional
- ½ teaspoon black pepper
- ½ teaspoon dried parsley, optional
Optional Additions
- ½ cup diced celery
- ½ cup diced onion
- 2 tablespoons melted butter
- ½ teaspoon poultry seasoning
- Fresh parsley, for garnish
Instructions
1. Prepare the Slow Cooker
Lightly grease the inside of a 6-quart slow cooker with cooking spray or a small amount of butter.
This makes serving and cleanup easier.
2. Add the Chicken
Place the chicken breasts in a single layer on the bottom of the slow cooker.
Season lightly with black pepper and, if desired, garlic powder and poultry seasoning.
There’s no need to brown the chicken first—the slow cooker will take care of the cooking.
3. Make the Creamy Mixture
In a medium bowl, whisk together the cream of chicken soup and chicken broth until reasonably smooth.
Pour the mixture evenly over the chicken.
4. Add the Stuffing
In another bowl, combine the stuffing mix with the ½ cup water.
If using diced celery, onion, or melted butter, stir them in now.
Mix just until the stuffing is moistened.
5. Layer the Stuffing
Spoon the prepared stuffing mixture evenly over the chicken.
Spread it gently into a relatively even layer.
Don’t press it down too firmly—the stuffing needs room to absorb the cooking liquid and steam.
6. Slow Cook
Cover the slow cooker with the lid.
Cook on:
- LOW: 5–6 hours
- HIGH: 3–4 hours
The chicken is done when it reaches an internal temperature of 165°F (74°C) and is tender enough to cut easily with a fork.
Avoid cooking substantially longer than necessary, especially on HIGH, because chicken breast can become dry.
7. Check the Stuffing
Near the end of cooking, check the stuffing.
It should be moist and tender with a slightly firmer texture around the edges.
If the stuffing looks too dry, drizzle a few tablespoons of warm chicken broth over it, cover, and continue cooking for another 10–15 minutes.
8. Rest Before Serving
Turn off the slow cooker and let the dish rest, covered, for 5–10 minutes.
This allows the juices and creamy sauce to settle and gives the stuffing time to finish absorbing the liquid.
9. Serve
Spoon the creamy stuffing onto plates and place a tender chicken breast alongside or underneath it.
Garnish with fresh parsley if desired.
Serve hot.
Chef’s Tips
- Don’t add too much liquid: The stuffing absorbs moisture as it cooks, but excess liquid can turn it mushy.
- Use chicken breasts of similar size: This helps them cook evenly.
- Don’t overcook: Chicken breasts are lean and can dry out with excessive cooking.
- Season lightly at first: Stuffing mix, broth, and cream soup can already contain plenty of salt.
- For extra flavor: Add diced onion and celery to give the stuffing a classic Thanksgiving-style taste.
- Let it rest: A few minutes of resting helps the stuffing reach the perfect consistency.
Easy Variations
Chicken & Vegetable Stuffing
Add 1 cup mixed vegetables, such as peas, carrots, and corn, beneath the stuffing layer.
Creamy Mushroom Chicken & Stuffing
Replace the cream of chicken soup with cream of mushroom soup, or add sliced mushrooms for extra earthy flavor.
Cheesy Chicken & Stuffing
Sprinkle 1 cup shredded cheddar or mozzarella over the chicken before adding the stuffing.
Herb Chicken & Stuffing
Add ½ teaspoon each of dried thyme and sage for a classic savory herb flavor.
Thanksgiving-Style Version
Add diced celery, onion, poultry seasoning, and a little cranberry sauce on the side for a complete holiday-inspired meal.

Make-Ahead Instructions
For the easiest morning prep, assemble the chicken and soup mixture in the slow cooker insert the night before.
Cover and refrigerate overnight.
Keep the stuffing mixture separate until you’re ready to start cooking.
In the morning, add the stuffing, place the insert into the slow cooker, and cook as directed.
Storage
Cool leftovers promptly and transfer them to an airtight container.
Refrigerate for up to 3–4 days.
Reheat gently in the microwave or in a covered oven-safe dish until heated through.
Add a splash of chicken broth when reheating if the stuffing has become too dry.
Freezing
The cooked chicken and stuffing can be frozen for up to 2 months, although the stuffing texture may become somewhat softer after thawing.
Cool completely, divide into portions, and store in freezer-safe containers.
Thaw overnight in the refrigerator and reheat thoroughly.
