Ingredients
Main Ingredients
- 2 lbs (900 g) ground beef or ground turkey
- 2 bags (about 14–16 oz each) coleslaw mix
- 4 green onions, chopped, white and green parts separated if desired
- 3 tsp minced garlic
- 3 tbsp soy sauce
- 2 tbsp toasted sesame oil
- 2 tsp red pepper flakes, or less to taste
- 2 tsp ground ginger
- 1 packet Splenda, optional
Optional Additions
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp sriracha or chili garlic sauce
- ½ tsp black pepper
- 1 tbsp sesame seeds
- Extra sliced green onions, for garnish
Instructions
1. Prepare the sauce
In a small bowl, combine the soy sauce, sesame oil, ground ginger, red pepper flakes, and optional Splenda.
If using rice vinegar or sriracha, add them now.
Whisk well and set aside.
2. Brown the meat
Heat a large skillet or wok over medium-high heat.
Add the ground beef or turkey and cook for 6–8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
If using ground beef and there is a substantial amount of excess grease, carefully drain it.
3. Add the garlic
Add the minced garlic to the cooked meat.
Stir-fry for 30–60 seconds, just until fragrant.
Be careful not to let the garlic burn.
4. Cook the cabbage
Add the coleslaw mix to the skillet.
At first it may look like a huge amount, but the cabbage will quickly shrink as it cooks.
Toss everything together and cook for 5–7 minutes, stirring frequently.
For a little crunch, cook closer to 5 minutes. For softer cabbage, cook 7–9 minutes.
5. Add the sauce
Pour the prepared soy-sesame sauce over the beef and cabbage.
Toss thoroughly so the sauce coats everything.
Cook for another 2–3 minutes, allowing the flavors to meld and the cabbage to absorb the savory sauce.
6. Finish with green onions
Stir in most of the chopped green onions.
Cook for about 30 seconds, then remove the skillet from the heat.
Taste and adjust the seasoning if needed.
7. Serve
Spoon the Crack Slaw into bowls.
Garnish with the remaining green onions and, if desired, a sprinkle of sesame seeds.
Serve hot.
Chef’s Tips
- Don’t overcrowd the skillet. A very large skillet or Dutch oven works best for 2 pounds of meat and two bags of cabbage.
- Keep the cabbage slightly crisp for the best texture.
- Toasted sesame oil has a strong flavor, so don’t substitute extra sesame oil for the cooking oil.
- If using ground turkey, add a small drizzle of neutral cooking oil if the pan becomes too dry.
- Start with less red pepper if you’re sensitive to heat—you can always add more.
- The optional Splenda provides a subtle sweet-and-savory balance similar to many Asian-inspired sauces.
Make It Extra Flavorful
For an even more addictive flavor, add:
- 1 tbsp rice vinegar for brightness
- 1 tsp sriracha for heat
- 1 tbsp sesame seeds for nuttiness
- 1 tsp chili crisp for spicy richness
- ½ tsp black pepper for extra bite
Variations
Beef & Mushroom Crack Slaw
Add 8 oz thinly sliced mushrooms after browning the meat. Cook until the mushrooms release their moisture and begin to brown, then continue with the recipe.
Spicy Turkey Crack Slaw
Use ground turkey and add 1–2 tsp sriracha or chili garlic sauce to the sauce.
Ginger-Garlic Beef Crack Slaw
Increase the garlic to 4–5 teaspoons and use 1 tablespoon freshly grated ginger instead of ground ginger.
Egg Roll Bowl Style
Add shredded carrots, mushrooms, green cabbage, and a splash of rice vinegar for an egg-roll-in-a-bowl variation.
Serving Suggestions
Although delicious on its own, you can serve it with:
- Cauliflower rice
- Steamed broccoli
- Cucumber salad
- Lettuce cups
- A fried or soft-boiled egg
- Avocado slices
For a higher-carb option, serve it over steamed white or brown rice.
Storage
Let leftovers cool before transferring them to an airtight container.
Refrigerate for up to 4 days.
Reheating
Reheat in a skillet over medium heat for a few minutes or microwave individual portions until hot.
If the cabbage releases extra moisture during storage, simply reheat uncovered in a skillet to allow some of the liquid to evaporate.
Freezing
The cooked Crack Slaw can be frozen for up to 2 months.
Cool completely, portion into freezer-safe containers, and thaw overnight in the refrigerator.
Reheat in a skillet over medium heat until thoroughly hot.
The Result
Every bite is savory, garlicky, gingery, spicy, and packed with tender-crisp cabbage and juicy seasoned meat. It’s the kind of quick skillet dinner that tastes indulgent while keeping things light and low-carb.
