Ingredients

For the Casserole

  • 2–3 cups corn chips, such as Fritos
  • 1½ lb (680 g) ground beef
  • 1 small yellow onion, diced
  • 1 packet taco seasoning
  • 3 oz (85 g) cream cheese, softened
  • 1 can (4 oz) diced green chiles, drained
  • 1 cup Mexican-blend shredded cheese

For Topping

  • 1–2 cups iceberg lettuce, finely shredded
  • 1 Roma tomato, diced
  • Sour cream, for serving
  • Salsa, for serving

Instructions

1. Preheat the oven

Preheat your oven to 375°F (190°C).

Lightly grease an 8×8-inch or similar 2-quart baking dish.

2. Brown the beef

Place a large skillet over medium-high heat.

Add the ground beef and diced onion. Cook for 6–8 minutes, breaking the beef apart with a wooden spoon, until the beef is browned and the onion is tender.

Drain any excess grease.

3. Season the beef

Return the skillet to the stove over medium heat.

Add the taco seasoning according to the packet directions, usually along with about ¾ cup water.

Stir well and simmer for 3–4 minutes, allowing the seasoning to coat the beef and the mixture to thicken.

4. Make it creamy

Reduce the heat to low.

Add the softened cream cheese and stir until completely melted into the seasoned beef.

Fold in the drained green chiles.

Cook for another 1–2 minutes, until the mixture is creamy and evenly combined.

5. Layer the casserole

Spread about 1 cup of corn chips across the bottom of the prepared baking dish.

Spoon the creamy taco beef mixture evenly over the chips.

Sprinkle the Mexican-blend cheese over the top.

6. Bake

Place the casserole in the preheated oven.

Bake uncovered for 15–20 minutes, until the cheese is completely melted and bubbling around the edges.

7. Add the fresh toppings

Remove the casserole from the oven and let it rest for about 5 minutes.

Scatter the shredded iceberg lettuce and diced Roma tomato over the top.

Drizzle with salsa and add dollops of sour cream.

For the crunchiest result, sprinkle the remaining corn chips over individual servings rather than baking all of them into the casserole.

8. Serve

Scoop generous portions onto plates and serve immediately.
