Ingredients

For the Chili

  • 2½ cups (600 ml) chicken broth
  • 15.25 oz (432 g) Southwest corn with poblano and red peppers, undrained
  • 10 oz (283 g) mild RO*TEL diced tomatoes and green chilies, undrained
  • 1 oz (28 g) ranch seasoning mix
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 3 boneless, skinless chicken breasts
  • 8 oz (226 g) cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack or Mexican-blend cheese

Optional Toppings

  • Extra shredded cheddar
  • Sliced green onions
  • Chopped fresh cilantro
  • Sour cream
  • Diced avocado
  • Jalapeño slices
  • Crumbled cooked bacon
  • Tortilla chips or corn chips

Instructions

1. Combine the chili ingredients

Place a large Dutch oven or heavy-bottomed pot over medium heat.

Add the chicken broth, Southwest corn, Rotel tomatoes and green chiles, ranch seasoning, onion powder, chili powder, kosher salt, and black pepper.

Stir well to combine.

2. Add the chicken

Nestle the chicken breasts directly into the chili mixture.

Bring the pot to a gentle simmer.

Reduce the heat to medium-low, cover, and cook for approximately 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender enough to shred.

Avoid a hard boil, which can make the chicken tougher.

3. Shred the chicken

Remove the cooked chicken breasts from the pot and place them on a plate or cutting board.

Use two forks to shred the chicken into bite-sized pieces.

Return the shredded chicken to the pot and stir.

4. Make it creamy

Reduce the heat to low.

Cut the softened cream cheese into cubes and add it to the chili.

Stir continuously for 3–5 minutes, until the cream cheese melts completely and the broth becomes rich and creamy.

Tip: If your cream cheese isn’t melting smoothly, whisk a few spoonfuls of hot broth with it in a separate bowl first, then stir that mixture back into the pot.

5. Add the cheese

Stir in the shredded cheddar and Monterey Jack or Mexican-blend cheese.

Continue stirring until the cheese melts and the chili becomes thick, creamy, and smooth.

Taste and adjust the seasoning if needed.

6. Simmer

Let the chili simmer gently, uncovered, for another 5–10 minutes.

If it’s thicker than you prefer, add a splash of chicken broth.

If you’d like it thicker, continue simmering uncovered for a few additional minutes.

7. Serve

Ladle the hot Crack Chicken Chili into bowls.

Top with shredded cheese, green onions, cilantro, sour cream, avocado, jalapeños, or crispy bacon.

Chef’s Tips

  • Use softened cream cheese. It melts much more easily and gives the chili a smoother texture.
  • Don’t boil the chili after adding the cream cheese and shredded cheese; gentle heat prevents the dairy from becoming grainy.
  • For especially tender chicken, cook just until it reaches 165°F, then shred it.
  • Let the finished chili sit for 5 minutes before serving—it will naturally thicken as it cools slightly.
  • The ranch seasoning and Rotel already contain salt, so taste before adding any extra.

Slow Cooker Method

Add the chicken breasts, chicken broth, Southwest corn, Rotel, ranch seasoning, onion powder, chili powder, salt, and pepper to a slow cooker.

Cook on:

  • LOW: 5–6 hours
  • HIGH: 2½–3½ hours

Remove the chicken and shred it.

Return it to the slow cooker.

Add the softened cream cheese and shredded cheeses. Cover and cook on LOW for another 15–20 minutes, stirring until everything is melted and creamy.

Keep on WARM until ready to serve.

Make It Spicier

For more heat, add:

  • ½–1 tsp cayenne pepper
  • 1–2 diced jalapeños
  • Hot Rotel instead of mild
  • 1–2 tsp hot sauce
  • ½ tsp crushed red pepper flakes

Add Beans

For a heartier chili, add one or two drained and rinsed cans of:

  • Black beans
  • Pinto beans
  • Cannellini beans

Add them along with the corn and Rotel.

Bacon Ranch Crack Chicken Chili

For the ultimate loaded version, cook 6–8 slices of bacon until crisp.

Crumble the bacon and stir half into the finished chili. Reserve the rest for topping.

The smoky bacon pairs especially well with the ranch and creamy cheese.
