Classic Southern Coconut Layer Cake

Ingredients

For the Moist Cake Layers:

  • 1 cup (240 ml) canned full-fat coconut milk (stirred well)

For the Cake Soak & Filling:

  • ⅓ cup (80 ml) sweetened condensed milk or coconut cream
  • ¼ cup (60 ml) warm coconut milk
  • (Optional) ⅓ cup lemon curd or pineapple filling for a tropical twist between layers

For the Frosting & Finish:

  • 8 oz (225 g) cream cheese, softened to room temperature
  • ½ cup (1 stick / 115 g) unsalted butter, softened
  • 3 ½ to 4 cups (420 g–480 g) powdered sugar, sifted
  • 2 tablespoons heavy cream or coconut milk
  • 1 teaspoon coconut extract (or vanilla extract)
  • 2 to 2 ½ cups sweetened shredded coconut (for covering the cake)

Step-by-Step Instructions

1. Prep the Pans and Oven

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter, line the bottoms with parchment paper rounds, and dust the sides lightly with flour.

2. Mix the Cake Batter

  1. In a medium bowl, whisk together the 2 ½ cups cake flour2 ½ tsp baking powder½ tsp baking soda, and ½ tsp salt.
  2. In a large mixing bowl (or stand mixer fitted with the paddle attachment), beat the ¾ cup softened butterand 1 ½ cups granulated sugar on medium-high speed for 3 to 4 minutes until light, pale, and fluffy.
  3. Add the 3 eggs and 1 egg yolk one at a time, mixing well after each addition. Stir in the 1 tsp vanilla extract and 1 tsp coconut extract.
  4. With the mixer on low speed, alternate adding the dry flour mixture and the 1 cup coconut milk in three additions, beginning and ending with the flour. Mix just until the batter comes together smoothly—do not overmix!

3. Bake and Soak

  1. Divide the batter evenly between your prepared pans and smooth the tops.
  2. Bake at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  3. While the cakes are warm, whisk together the ⅓ cup sweetened condensed milk and ¼ cup warm coconut milk.
  4. Poke a few shallow holes across the top of the warm cake layers with a toothpick, then spoon the coconut soak evenly over both layers. Let the cakes cool in the pans for 20 minutes, then invert onto wire racks to cool completely.

4. Whip the Cream Cheese Frosting

In a large bowl, beat the 8 oz softened cream cheese and ½ cup softened butter for 2 minutes until smooth and lump-free. Gradually add the powdered sugar2 tbsp heavy cream, and 1 tsp coconut extract. Beat on medium-high speed for another 2 minutes until light and fluffy.

5. Assemble and Coat

  1. Place the first cooled cake layer on a serving platter. Spread a thick layer of frosting over the top (if using lemon curd or fruit filling, spread a layer of that first, then top with a thin layer of frosting).
  2. Place the second cake layer on top. Cover the top and sides of the entire cake with the remaining frosting in a smooth layer.
  3. Gently press the sweetened shredded coconut into the frosting all over the top and sides of the cake until completely covered.

6. Chill and Serve
