Instructions
1. Prepare the Pastry Dough
In a large mixing bowl, combine the softened butter and powdered sugar.
Beat with an electric mixer for about 1–2 minutes, until smooth and creamy.
Add the egg yolk and vanilla extract and mix until fully incorporated.
2. Add the Dry Ingredients
In a separate bowl, whisk together the flour and salt.
Gradually add the flour mixture to the butter mixture.
Mix on low speed or use your fingertips to work the mixture together until a soft dough forms.
The dough should hold together when pressed. If it seems too dry or crumbly, add 1 teaspoon of ice water at a time, using only as much as necessary.
Avoid adding too much water.
3. Chill the Dough
Turn the dough onto a lightly floured surface and gently bring it together into a disk.
Wrap it tightly in plastic wrap and refrigerate for 30 minutes.
Chilling helps prevent the pastry from shrinking during baking.
4. Prepare the Tartlet Pans
Preheat the oven to 350°F (175°C).
Lightly grease 10–12 small tartlet pans with removable bottoms.
You can also use a standard muffin pan for smaller tartlet-style cups.
5. Roll Out the Pastry
Place the chilled dough on a lightly floured surface.
Roll it out to approximately ⅛ inch (3 mm) thick.
Cut circles slightly larger than your tartlet molds.
6. Line the Tartlet Pans
Carefully press each pastry circle into a tartlet pan.
Gently press the dough into the bottom and sides without stretching it.
Trim away any excess dough around the edges.
Prick the bottoms lightly with a fork.
7. Chill Before Baking
Place the prepared tartlet shells in the refrigerator for another 15 minutes.
This extra chilling step helps the pastry hold its shape in the oven.
8. Blind Bake
Line each tartlet shell with a small piece of parchment paper or aluminum foil.
Fill with pie weights, dried beans, or uncooked rice.
Bake for 10–12 minutes.
Carefully remove the weights and parchment.
Return the shells to the oven and bake for another 5–6 minutes, or until lightly golden around the edges and fully cooked.
9. Cool the Tartlet Shells
Remove the shells from the oven and allow them to cool in the pans for about 10 minutes.
Carefully remove them from the molds and transfer to a wire rack.
Allow them to cool completely before adding the ganache.
Make the Chocolate Ganache
10. Prepare the Chocolate
Place the finely chopped chocolate in a heatproof bowl.
The smaller the chocolate pieces, the more easily and evenly they will melt.
11. Heat the Cream
Pour the heavy cream into a small saucepan.
Heat over medium-low heat until it becomes hot and steaming, with small bubbles forming around the edges.
Do not bring it to a vigorous boil.
12. Make the Ganache
Pour the hot cream over the chopped chocolate.
Let the mixture sit undisturbed for 2–3 minutes.
Add the butter, vanilla, and pinch of salt.
Gently whisk from the center outward until the chocolate is completely melted and the ganache becomes smooth, glossy, and silky.
If a few chocolate pieces remain unmelted, place the bowl over a pan of barely simmering water for a few seconds and stir gently.
13. Fill the Tartlets
Place the cooled tartlet shells on a tray.
Carefully spoon or pour the warm ganache into each shell.
Fill almost to the top without overflowing.
Gently tap the tray against the counter to remove any large air bubbles.
14. Chill Until Set
Refrigerate the tartlets for at least 1 hour, or until the ganache is set but still luxuriously creamy.
For the best texture, allow them to sit at room temperature for about 10–15 minutes before serving.
15. Decorate
Decorate just before serving with your choice of toppings.
Fresh berries, chocolate curls, a light dusting of cocoa powder, chopped nuts, or a tiny sprinkle of flaky sea salt all work beautifully.
Chef’s Tips
- Keep the pastry cold: Warm pastry is more likely to shrink.
- Don’t overwork the dough: Mix just until it comes together for a tender, delicate crust.
- Prick the pastry: Small holes help prevent the shells from puffing during blind baking.
- Use good-quality chocolate: Since ganache has only a few ingredients, the chocolate flavor really stands out.
- Don’t boil the cream: Very aggressively boiled cream can affect the smooth texture of the ganache.
- Chop chocolate finely: Smaller pieces melt much more evenly.
- Let the shells cool completely: Warm pastry can make the ganache melt and become difficult to control.
Chocolate Options
Dark Chocolate
Use 60–70% dark chocolate for a deep, sophisticated chocolate flavor.
Semisweet Chocolate
A slightly sweeter option that’s perfect for family gatherings and kids.
Milk Chocolate
For a sweeter, creamier tart, replace the dark chocolate with milk chocolate. Reduce the cream slightly if needed for a firmer filling.
White Chocolate
For white chocolate ganache, use approximately 10 oz (285 g) white chocolate with ¾ cup (180 ml) heavy cream.
Flavor Variations
Espresso Chocolate Ganache
Add 1 teaspoon instant espresso powder to the hot cream before pouring it over the chocolate.
Orange Chocolate Tartlets
Add 1 teaspoon finely grated orange zest to the ganache.
Salted Chocolate Tartlets
Sprinkle each finished tartlet with a few flakes of sea salt.
Hazelnut Chocolate
Spread a thin layer of chocolate-hazelnut spread inside each cooled pastry shell before adding the ganache.
Raspberry Chocolate
Add a small spoonful of raspberry jam to each pastry shell before filling with ganache, then decorate with fresh raspberries.
Make-Ahead Instructions
The pastry shells can be baked 1–2 days ahead and stored in an airtight container at room temperature.
The ganache tartlets can be fully assembled up to 1 day ahead and refrigerated until serving.
For the best texture, remove them from the refrigerator about 10–15 minutes before serving.
Storage
Store finished tartlets in an airtight container in the refrigerator for up to 4 days.
Place parchment paper between layers if stacking is necessary.
Allow them to sit briefly at room temperature before serving.
Freezing
Freeze the fully assembled tartlets on a tray until firm, then wrap individually and place in a freezer-safe container.
Freeze for up to 1 month.
Thaw overnight in the refrigerator, then allow to sit at room temperature for 10–15 minutes before serving.
Final Result
Beautiful individual Chocolate Ganache Tartlets with crisp, buttery pastry shells and an incredibly smooth, glossy chocolate center. Each bite balances delicate pastry with rich, silky ganache for an elegant dessert that’s deceptively easy to make.
