Recipe Information

  • Prep Time: 15 minutes
  • Chilling Time: 30 minutes
  • Total Time: About 45 minutes
  • Yield: 12–16 truffles
  • Difficulty: Easy
  • Method: No-bake

Ingredients

For the Truffles

  • 6 tablespoons (about 45 g) milk powder
  • 3 tablespoons (about 15 g) 70% dark cocoa powder
  • 3–5 tablespoons hot brewed coffee, as needed
  • Sugar-free sprinkles, for coating

Optional

  • ½ teaspoon vanilla extract
  • Tiny pinch of salt
  • Unsweetened coconut, for coating
  • Finely chopped nuts, for coating

Instructions

1. Combine the Dry Ingredients

In a medium mixing bowl, whisk together the milk powder and dark cocoa powder.

Make sure the cocoa is evenly distributed and break up any lumps.

If using the optional pinch of salt, add it now.

2. Add the Coffee Gradually

Start with 3 tablespoons of hot brewed coffee.

Add it gradually to the dry ingredients while mixing with a spoon or spatula.

The mixture will initially look crumbly.

Continue adding coffee 1 teaspoon at a time until the mixture comes together into a thick, soft dough.

You may not need all 5 tablespoons.

Important: Add the coffee slowly. Too much liquid can make the mixture sticky and difficult to roll.

3. Add Vanilla

If using vanilla extract, mix in ½ teaspoon once the dough has come together.

Knead gently with clean hands or a spatula until the mixture is smooth and evenly combined.

The finished mixture should resemble a soft chocolate truffle dough that can hold its shape.

4. Chill the Mixture

Cover the bowl and refrigerate for about 30 minutes.

Chilling firms the mixture and makes it much easier to shape into neat balls.

5. Prepare the Coating

Pour the sugar-free sprinkles into a shallow bowl or plate.

Have a parchment-lined tray ready for the finished truffles.

6. Shape the Truffles

Scoop out approximately 1 tablespoon of the chilled mixture for each truffle.

Roll each portion gently between your palms until smooth and round.

If the mixture feels sticky, lightly dampen your hands with a few drops of cold water.

7. Coat the Truffles

Immediately roll each chocolate ball in the sugar-free sprinkles.

Press gently so the sprinkles adhere evenly around the surface.

Transfer each coated truffle to the prepared tray.

8. Chill Again

Refrigerate the finished truffles for another 15–20 minutes to firm them up.

They can be served chilled or allowed to sit at room temperature for a few minutes before serving.

Chef’s Tips

  • Add coffee slowly: The amount needed depends on the milk powder and cocoa.
  • Use strong coffee: A concentrated brew gives the truffles a richer coffee flavor.
  • Don’t make the mixture wet: It should be soft enough to roll but firm enough to hold its shape.
  • Chill before shaping: Cold truffle dough is much easier to handle.
  • Use a small cookie scoop: This makes every truffle the same size.
  • Wet your hands lightly: A tiny amount of water prevents sticking without changing the mixture significantly.
  • Use high-quality cocoa: With so few ingredients, the cocoa flavor really stands out.

Flavor Variations

Add 1 teaspoon instant espresso powder to the dry ingredients for a more intense coffee flavor.

Roll the finished truffles in unsweetened shredded coconut instead of sprinkles.
