Instructions
1. Prepare the Chicken Filling
Make sure the cooked chicken is finely shredded and free of large pieces.
If you’re cooking the chicken specifically for this recipe, poach or boil boneless chicken breasts or thighs until fully cooked, then cool and shred.
Set the shredded chicken aside.
2. Sauté the Onion
Heat the oil in a skillet over medium heat.
Add the finely chopped onion and sauté for 3–4 minutes, stirring occasionally, until softened and lightly golden.
Do not brown it too deeply, as you want the filling to remain moist and creamy.
3. Add the Seasonings
Add the shredded chicken to the skillet.
Season with salt, black pepper, and red chili powder.
Stir everything together and cook for 2–3 minutes, allowing the chicken to absorb the spices.
If using green chilies or fresh coriander, add them now.
4. Make the Filling Creamy
Remove the skillet from the heat.
Allow the chicken mixture to cool for a few minutes, then stir in the mayonnaise.
Mix until the chicken is evenly coated and the filling is creamy but not runny.
Taste and adjust the seasoning if necessary.
Set aside to cool completely.
Important: The filling should be cool before being placed inside the puff pastry. A hot filling can soften the butter layers and prevent the pastry from puffing properly.
5. Prepare the Puff Pastry
Preheat the oven to 400°F (200°C).
Line one or two baking trays with parchment paper.
Place the thawed puff pastry sheets on a lightly floured surface.
If the sheets are very thick, roll them slightly thinner, but avoid pressing too hard.
Cut each sheet into approximately 4 equal squares.
6. Fill the Pastry
Place about 1½–2 tablespoons of chicken filling in the center of each pastry square.
Do not overfill, as the filling can burst through the pastry while baking.
7. Shape the Chicken Puffs
For classic triangular puffs, fold one corner of the pastry over to the opposite corner.
Press the edges together firmly.
Use the tines of a fork to crimp the edges and create a secure seal.
You can also make rectangular or envelope-shaped puffs if preferred.
8. Transfer to the Baking Tray
Place the filled pastries on the prepared baking sheet, leaving about 2 inches (5 cm) between each puff.
If the pastry has become soft while you’re working, refrigerate the assembled puffs for 10–15 minutes before baking.
Cold pastry puffs much better.
9. Apply the Egg Wash
Beat the egg in a small bowl.
Brush a thin, even layer of beaten egg over the exposed pastry.
Try not to let the egg wash drip down the cut edges, as it can glue the layers together and reduce the puffing.
10. Add Optional Toppings
Sprinkle sesame seeds, nigella seeds, poppy seeds, or a little cracked black pepper over the egg wash.
For an extra cheesy finish, add a small amount of grated cheese on top.
11. Bake
Place the tray in the preheated oven.
Bake for approximately 20–25 minutes, or until the pastry is beautifully puffed and deep golden brown.
Avoid opening the oven during the first 15 minutes, as sudden temperature changes can interfere with the puffing process.
12. Cool Slightly
Remove the chicken puffs from the oven and let them rest on the baking sheet for 5 minutes.
Transfer to a wire rack for another few minutes so the bottoms remain crisp.
Serve warm.
Chef’s Tips
- Keep the puff pastry cold: Cold butter creates those beautiful flaky layers.
- Cool the filling completely: Warm filling can melt the pastry before it reaches the oven.
- Don’t overfill: A moderate amount gives the best balance between pastry and chicken.
- Seal firmly: Crimped edges help keep the filling inside.
- Use a hot oven: Puff pastry needs strong initial heat to rise properly.
- Don’t overwork the pastry: Too much rolling compresses the layers.
- Avoid excess flour: Use just enough to prevent sticking.
- Bake until deeply golden: Pale pastry may not be fully crisp.
Optional Filling Variations
Chicken & Cheese Puffs
Add ½ cup (50 g) shredded mozzarella or cheddar to the cooled chicken filling.
Creamy Chicken Puffs
Replace half of the mayonnaise with 2 tablespoons cream cheese for a richer filling.
Spicy Chicken Puffs
Add finely chopped jalapeño, extra red chili flakes, or a little hot sauce.
Chicken Vegetable Puffs
Add finely diced and sautéed carrots, bell peppers, peas, or corn.
Curry Chicken Puffs
Add ½ teaspoon curry powder to the chicken mixture for a warm, aromatic variation.
Shaping Ideas
Triangle Puffs
Fold each square diagonally and crimp the edges with a fork.
Square Puffs
Place filling in the center, fold opposite corners inward, and seal.
Rectangular Puffs
Fold each pastry sheet in half over the filling and seal along three sides.
Mini Chicken Puffs
Cut the pastry into smaller squares and use about 1 tablespoon filling per piece. Reduce the baking time slightly and watch carefully.
Make-Ahead Instructions
The chicken filling can be prepared up to 2 days ahead and stored in the refrigerator.
The puffs can also be assembled several hours before baking. Keep them covered and refrigerated, then brush with egg wash immediately before placing them in the oven.
For the flakiest results, bake straight from the refrigerator.
Freezing
Freeze Before Baking
Assemble the chicken puffs without the egg wash.
Place them on a parchment-lined tray and freeze until solid.
Transfer to a freezer-safe container or bag.
Bake directly from frozen at 400°F (200°C), adding approximately 5–10 minutes to the baking time.
Brush with egg wash just before baking.
Freeze After Baking
Allow baked puffs to cool completely.
Wrap individually and freeze for up to 2 months.
Reheat in a 350°F (175°C) oven until hot and crisp.
Storage
Store leftover baked chicken puffs in an airtight container in the refrigerator for up to 3 days.
For the best texture, reheat them in the oven or air fryer rather than the microwave.
Air Fryer Reheating
Reheat at 350°F (175°C) for approximately 4–6 minutes, or until warmed through and crisp.
Final Result
Golden, flaky Chicken Puffs with buttery layers of crisp puff pastry wrapped around a tender, savory, creamy chicken filling. They’re simple enough for an afternoon snack and impressive enough for any party or gathering.
