👩‍🍳 Instructions

🍪 Prepare the Graham Cracker Crust

1. Preheat the Oven

Preheat your oven to 350°F (175°C).

Lightly grease the bottom and sides of a 9-inch springform pan.

For easier removal, you can also line the bottom with a round piece of parchment paper.

2. Make the Crust Mixture

Add the graham cracker crumbs and sugar to a medium bowl.

Pour in the melted butter.

Stir until the crumbs are evenly moistened and the mixture resembles wet sand.

3. Press Into the Pan

Transfer the crumb mixture to the springform pan.

Firmly press it into an even layer across the bottom.

For a slightly thicker crust, press some of the mixture about 1 inch up the sides of the pan.

Use the bottom of a measuring cup or glass to compact the crust firmly.

4. Bake the Crust

Bake for 8–10 minutes.

Remove from the oven and allow the crust to cool while preparing the cheesecake filling.

Reduce the oven temperature to 325°F (165°C).

🧀 Make the Cheesecake Filling

5. Beat the Cream Cheese

Place the softened cream cheese in a large mixing bowl.

Beat on low to medium speed until smooth and creamy.

Avoid whipping at high speed, as incorporating too much air can cause the cheesecake to puff and crack during baking.

6. Add the Sugar

Gradually add the granulated sugar.

Beat until the sugar is incorporated and the mixture is smooth.

Scrape down the sides of the bowl as needed.

7. Add the Eggs

Add the eggs one at a time, mixing on low speed after each addition just until incorporated.

Do not overmix.

8. Add the Remaining Ingredients

Add:

  • Sour cream
  • Vanilla extract
  • Flour
  • Lemon juice
  • Salt

Mix on low speed just until the filling is smooth and combined.

The finished batter should be thick, silky, and lump-free.

9. Fill the Crust

Pour the cheesecake filling over the cooled graham cracker crust.

Gently smooth the surface with a spatula.

Tap the pan lightly on the counter a couple of times to release any large air bubbles.

🔥 Bake the Cheesecake

10. Bake

Place the cheesecake in the 325°F (165°C) oven.

Bake for approximately 55–65 minutes.

The edges should look set while the center should still have a gentle jiggle when the pan is carefully moved.

Do not wait until the center is completely firm—the cheesecake will continue setting as it cools.

11. Cool Gradually

Turn off the oven and leave the cheesecake inside with the oven door slightly open for approximately 30 minutes.

This gradual cooling helps reduce the chance of the cheesecake cracking.

Remove it from the oven and allow it to cool at room temperature for another 30 minutes.

12. Chill

Cover the cheesecake and refrigerate for at least 6 hours, preferably overnight.

A fully chilled cheesecake will have a firmer texture and cleaner slices.

🫐 Make the Blueberry Topping

13. Cook the Blueberries

Place the blueberries, sugar, and lemon juice in a small saucepan over medium heat.

Cook for approximately 5–7 minutes, stirring occasionally.

The blueberries will begin to burst and release their juices.

14. Thicken the Sauce

In a small bowl, whisk together the cornstarch and water until smooth.

Slowly pour the mixture into the blueberries while stirring.

Continue cooking for 1–2 minutes, until the sauce thickens.

Remove from the heat.

Stir in the vanilla extract.

15. Cool the Blueberry Topping

Allow the blueberry topping to cool completely.

For the cleanest cheesecake presentation, the topping should be cool rather than hot when added to the chilled cheesecake.

🫐 Assemble the Cheesecake

16. Add the Blueberry Topping

Once the cheesecake is completely chilled, carefully remove the sides of the springform pan.

Spoon the cooled blueberry topping over the center of the cheesecake.

Spread it gently toward the edges while leaving a small border of cheesecake visible.

17. Garnish

Decorate with fresh blueberries, whipped cream, lemon zest, or a few fresh mint leaves if desired.

18. Slice and Serve

For clean slices, use a sharp knife dipped briefly in hot water.

Wipe the knife dry before slicing.

Repeat between each cut.

Serve chilled.

⭐ Chef’s Tips

Use room-temperature ingredients: Softened cream cheese and room-temperature eggs blend much more smoothly.

Use full-fat cream cheese: It gives the cheesecake its richest texture and helps it set properly.

Don’t overmix: Too much air can cause the cheesecake to puff, crack, or collapse.

Don’t overbake: A slight jiggle in the center is exactly what you want.

Cool slowly: Gradual cooling helps prevent sudden temperature changes that can cause cracks.

Chill overnight: Although six hours works, an overnight chill gives the cheesecake the best texture and easiest slicing.

Cool the blueberry topping: Hot blueberry sauce can soften the cheesecake surface.

🫐 Easy Variations

Lemon Blueberry Cheesecake

Add 1 tablespoon finely grated lemon zest to the cheesecake filling for a brighter citrus flavor.

Blueberry Swirl Cheesecake

Reserve some blueberry sauce and swirl it through the cheesecake batter before baking.

White Chocolate Blueberry Cheesecake

Melt 4 oz (115g) white chocolate, allow it to cool slightly, and mix it into the cheesecake filling.

Mixed Berry Cheesecake

Replace some of the blueberries with raspberries, blackberries, or strawberries.

Chocolate Blueberry Cheesecake

Use a chocolate cookie crust instead of graham crackers.

Mini Blueberry Cheesecakes

Bake the filling in a lined muffin pan over individual cookie or graham cracker bases. Reduce the baking time significantly and watch for the centers to set with a slight jiggle.
