👩‍🍳 Instructions

🍯 Make the Caramel

1. Prepare the Caramel

Place the granulated sugar in a heavy-bottomed saucepan over medium heat.

Allow the sugar to melt gradually.

As it begins melting around the edges, gently swirl the pan to help distribute the sugar.

Avoid stirring aggressively, as this can encourage crystallization.

2. Cook Until Golden

Continue heating until the sugar becomes a deep golden amber color.

Watch it carefully—the caramel can go from perfectly golden to burnt very quickly.

Once it reaches the desired color, remove the saucepan from the heat.

3. Add the Hot Water

Very carefully add the hot water to the caramel.

Stand back while doing this. The mixture will bubble and steam vigorously because the water is being added to extremely hot sugar.

Stir carefully until the caramel becomes smooth.

If some hardened caramel remains, return the saucepan to low heat and stir gently until completely dissolved.

4. Coat the Mold

Immediately pour the hot caramel into a round pudding or cake mold.

Carefully tilt and rotate the mold so the caramel coats the bottom evenly.

Set aside while you prepare the pudding mixture.

🍮 Prepare the Pudding

5. Combine the Eggs

Place the eggs and egg yolks in a large mixing bowl.

Whisk gently until combined.

Avoid whipping too much air into the eggs, as excessive bubbles can create holes in the finished pudding.

6. Add the Spreadable Cheese

Add the spreadable cheese to the eggs.

Whisk until smooth and creamy.

If the cheese is cold and difficult to blend, allow it to come closer to room temperature first.

7. Add the Cornstarch

Add the cornstarch and whisk thoroughly until no dry lumps remain.

8. Add the Milks

Gradually whisk in the evaporated milk and full-cream milk.

Add the sweetened condensed milk, salt, and vanilla extract.

Whisk gently until the mixture is completely smooth.

For an exceptionally silky pudding, strain the mixture through a fine-mesh sieve into another bowl.

🔥 Assemble & Bake

9. Pour Into the Caramel-Coated Mold

Slowly pour the pudding mixture over the cooled caramel.

Pour gently to avoid disturbing the caramel layer.

If you see bubbles on the surface, gently tap the mold against the counter a few times or skim them away with a spoon.

10. Prepare a Water Bath

Place the pudding mold inside a larger deep baking dish.

Pour hot water into the larger dish until it reaches approximately halfway up the sides of the pudding mold.

The water bath helps the pudding cook gently and evenly, resulting in a smoother texture.

11. Bake

Carefully transfer the water bath to a preheated 160°C / 325°F oven.

Bake for approximately 45–55 minutes, or until the pudding is set around the edges but still has a gentle wobble in the center.

Don’t wait until the entire pudding is completely firm in the oven—it will continue setting as it cools.

12. Cool Completely

Remove the pudding mold from the water bath.

Allow it to cool to room temperature.

Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.

The chilling time allows the pudding to fully set and makes unmolding much easier.

✨ Unmold the Pudding

13. Loosen the Edges

Run a thin knife carefully around the edge of the pudding.

Don’t cut deeply—just loosen the outer edge from the mold.

14. Warm the Caramel

Place the bottom of the mold in a little warm water for approximately 10–20 seconds.

This gently loosens the caramel.

Be careful not to let water enter the pudding mold.

15. Invert

Place a large serving plate over the top of the mold.

Hold the plate and mold firmly together and quickly flip them over.

Lift the mold slowly.

The pudding should release, allowing the glossy caramel sauce to cascade over the top and sides.

If it doesn’t release immediately, gently tap the bottom of the mold.

⭐ Chef’s Tips

Watch the caramel closely: Sugar can burn in seconds once it reaches an amber color.

Add water carefully: Hot caramel reacts violently with water. Use hot water and keep your hands and face away from the steam.

Don’t over-whisk: Excessive air can create bubbles and holes in the finished pudding.

Strain the custard: Passing the mixture through a fine-mesh sieve gives the smoothest possible texture.

Use a water bath: It provides gentle, even heat and helps prevent the pudding from becoming rubbery.

Don’t overbake: The center should still jiggle slightly when the pudding comes out of the oven.

Chill thoroughly: Refrigerating overnight makes the pudding firmer and much easier to unmold.

🍓 Easy Variations

Vanilla Caramel Pudding

Add another ½ teaspoon vanilla extract for a stronger vanilla flavor.

Orange Caramel Pudding

Add 1 teaspoon finely grated orange zest to the custard.

Coffee Caramel Pudding

Dissolve 1 teaspoon instant espresso powder into the warm milk before adding it to the custard.

Coconut Caramel Pudding

Replace part of the full-cream milk with coconut milk and add a little toasted coconut for garnish.

Cinnamon Caramel Pudding

Add ½ teaspoon ground cinnamon to the pudding mixture for a warm, spiced variation.

🍽️ Serving Suggestions

Serve chilled with:

  • Fresh strawberries
  • Raspberries
  • Blueberries
  • Sliced bananas
  • Whipped cream
  • Toasted nuts
  • Extra caramel sauce
  • Fresh mint

The pudding is delicious on its own because the caramel sauce provides plenty of sweetness and richness.

🧊 Storage

Cover the pudding tightly and refrigerate for up to 4 days.

Keep it refrigerated until ready to serve.

Because this dessert contains eggs and dairy, don’t leave it sitting at room temperature for extended periods.

🍮✨ Final Result

This Viral Caramel Pudding delivers an incredible combination of silky, creamy custard and deep golden caramel sauce.

The spreadable cheese adds richness and body, while condensed milk provides sweetness and a luxurious texture. Once chilled and inverted, the caramel flows beautifully over the smooth pudding.
