Ingredients
For the Chicken
- 2 lb (900 g) chicken tenderloin chunks
- 1 cup (240 ml) pineapple juice
- ½ cup (100 g) packed brown sugar
- ⅓ cup (80 ml) soy sauce

Instructions
1. Prepare the Slow Cooker
Lightly spray the inside of a 6-quart slow cooker with nonstick cooking spray.
Arrange the chicken tenderloin chunks evenly in the bottom.
2. Make the Hawaiian Sauce
In a bowl, whisk together:
- Pineapple juice
- Brown sugar
- Soy sauce
Whisk until the brown sugar is mostly dissolved.
If using garlic, ginger, black pepper, or rice vinegar, add them now.
3. Add the Sauce
Pour the pineapple-soy mixture evenly over the chicken.
Gently toss the chicken so all of the pieces are coated in the sauce.
4. Slow Cook
Cover and cook:
- LOW: 5–6 hours
- HIGH: 3–4 hours
Cook until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Avoid significantly overcooking the chicken, especially because tenderloin pieces are relatively small and can dry out if left in the slow cooker too long.
5. Add Pineapple
If using pineapple chunks, stir them into the chicken during the last 20–30 minutes of cooking.
This keeps the pineapple from becoming excessively soft.
6. Thicken the Sauce — Optional
For a thicker, glossy Hawaiian-style sauce, transfer the cooking liquid to a small saucepan.
Mix:
- 1 tablespoon cornstarch
- 2 tablespoons cold water
until smooth.
Whisk the slurry into the sauce and simmer for 2–3 minutes, stirring constantly, until thickened.
Pour the sauce back over the chicken.
Alternatively, you can add the cornstarch slurry directly to the slow cooker during the final 20–30 minutes and cook on HIGH with the lid slightly ajar.
7. Serve
Gently toss the chicken in the sauce.
Spoon the chicken and plenty of the sweet Hawaiian sauce over steamed rice.
Finish with sliced green onions and sesame seeds if desired.
