So Easy Garlic Chili Sauce Baby Bok Choy

Tender-crisp baby bok choy is quickly blanched, then coated in a glossy homemade garlic chili sauce made with plenty of fresh garlic, oyster sauce, soy sauce, sweet chili sauce, honey, and sesame oil.

It’s incredibly easy, packed with flavor, and makes the perfect vegetable side dish for rice, noodles, stir-fries, chicken, beef, pork, or seafood.

Ingredients

For the Baby Bok Choy

  • 2 lbs (900 g) fresh baby bok choy
  • Water, for blanching
  • 1 tablespoon neutral cooking oil
  • Pinch of salt

For the Garlic Chili Sauce

  • 8–10 cloves fresh garlic, finely minced
  • 1 teaspoon sesame oil
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon soy sauce
  • 4 tablespoons oyster sauce
  • 1 tablespoon honey

Optional Garnishes

  • Sliced green onions
  • Toasted sesame seeds
  • Red pepper flakes
  • Thinly sliced fresh red chili
  • Crispy fried garlic

Instructions

1. Prepare the Bok Choy

Trim away the very bottom of each bok choy, removing any tough or discolored portion.

Separate the leaves slightly and rinse thoroughly under cold running water. Baby bok choy can hold dirt between the stems, so wash carefully.

For larger baby bok choy, cut them in half lengthwise. Very small ones can be left whole.

2. Blanch the Bok Choy

Bring a large pot of water to a boil.

Add a pinch of salt and the 1 tablespoon of cooking oil.

Carefully add the baby bok choy.

Blanch for approximately 1½–2 minutes, just until the stems become tender-crisp and the leaves wilt slightly.

Do not overcook—the bok choy should remain bright and retain some crunch.

Drain thoroughly.

Tip: For especially crisp bok choy, transfer it immediately to a bowl of ice water for about 30 seconds, then drain very well.

3. Make the Garlic Sauce

Place a large skillet or wok over medium-low heat.

Add the minced garlic and sesame oil.

Cook for approximately 30–60 seconds, stirring constantly, until the garlic becomes fragrant.

Be careful not to brown or burn the garlic.

Add:

  • Sweet chili sauce
  • Soy sauce
  • Oyster sauce
  • Honey

Stir everything together and cook for 1–2 minutes, until the sauce is hot, glossy, and slightly thickened.

4. Add the Bok Choy

Add the drained bok choy directly to the skillet.

Using tongs, gently turn the bok choy through the sauce until every piece is coated.

Cook for another 1–2 minutes, allowing the sauce to cling to the vegetables.

Taste and adjust if needed.

  • More soy sauce → saltier and more savory
  • More honey → sweeter
  • More sweet chili sauce → sweeter and spicier
  • More sesame oil → deeper toasted flavor

5. Serve

Transfer the saucy bok choy to a serving platter.

Spoon any remaining garlic sauce from the pan over the top.

Finish with sesame seeds, sliced green onions, or fresh chili if desired.

Serve immediately while hot.

  • Wash the bok choy well. Dirt can hide between the stems.
  • Don’t boil baby bok choy for too long—it should remain tender-crisp.
  • Cook the garlic gently. Burnt garlic will make the sauce bitter.

  • If you prefer a thicker sauce, simmer it for another minute before adding the bok choy.
