Recipe Information
- Prep Time: 15 minutes
- Chilling Time: 1–2 hours
- Total Time: About 1 hour 15 minutes
- Yield: 30–40 pieces
- Difficulty: Easy
- Method: No-bake
Ingredients
- 2 cups (340 g) semi-sweet chocolate chips
- 2 cups (340 g) milk chocolate chips
- 3 tablespoons (45 ml) vegetable oil
- 2 cups (about 100 g) miniature marshmallows
- 1½ cups (225 g) dry-roasted cocktail peanuts
Instructions
1. Prepare the Baking Sheet
Line a large baking sheet or tray with parchment paper or wax paper.
Set aside.
For smaller, uniform candies, you can also use mini paper candy cups.
2. Melt the Chocolate
Place the semi-sweet chocolate chips, milk chocolate chips, and vegetable oil in a large microwave-safe bowl.
Microwave in 20–30 second intervals, stirring thoroughly after each interval.
Continue until the chocolate is almost completely melted.
Stir continuously until the remaining small pieces melt from the residual heat and the mixture becomes completely smooth and glossy.
Stovetop option: Place the chocolate and oil in a heatproof bowl over a saucepan containing a small amount of barely simmering water. Stir gently until melted and smooth, making sure the bottom of the bowl does not touch the water.
3. Cool the Chocolate Slightly
Let the melted chocolate cool for 3–5 minutes.
It should still be fluid but should no longer be extremely hot.
This is especially important before adding the marshmallows so they don’t melt into the chocolate.
4. Add the Peanuts
Add the dry-roasted cocktail peanuts to the melted chocolate.
Stir gently until all the peanuts are completely coated.
5. Fold in the Marshmallows
Add the miniature marshmallows.
Fold them gently into the chocolate mixture until they are evenly distributed.
Don’t overmix, as you want the marshmallows to remain visibly distinct throughout the candy.
6. Form the Candy Clusters
Using a tablespoon or small cookie scoop, drop portions of the mixture onto the prepared baking sheet.
Make each cluster approximately 1½–2 tablespoons in size.
For a more rustic appearance, simply spoon the mixture into irregular mounds.
7. Chill Until Set
Place the tray in the refrigerator for 1–2 hours, or until the chocolate is completely firm.
You can also allow the candy to set at cool room temperature, although refrigeration is faster.
8. Serve
Once firm, carefully lift the Rocky Road candies from the parchment.
Serve chilled or allow them to sit at room temperature for several minutes before serving for a softer chocolate texture.
Chef’s Tips
- Don’t overheat the chocolate: Chocolate can seize or burn when exposed to excessive heat.
- Stir between every microwave interval: This distributes heat evenly and prevents scorching.
- Cool before adding marshmallows: Hot chocolate can melt the marshmallows.
- Use fresh marshmallows: Stale marshmallows won’t give the same soft, fluffy texture.
- Don’t overmix: Gentle folding keeps the peanuts and marshmallows beautifully visible.
- Use parchment: It makes removing the candies effortless.
