Lemonade
- 4 cups cold water

For Serving

Instructions
1. Make the Simple Syrup
Add the ½ cup water and ½ cup granulated sugar to a small saucepan.
Place over medium heat and stir occasionally.
Heat until the sugar has completely dissolved and the liquid is clear.
You do not need to bring it to a rolling boil.
Remove from the heat and allow it to cool completely.
For faster cooling, transfer the syrup to a heatproof container and refrigerate it.
2. Prepare the Fruit
Wash the peaches and strawberries thoroughly.
Remove the strawberry stems and cut the strawberries in half.
Chop the peaches into large chunks.
If your peaches have very tough skins, you can peel them, although peeling is not necessary when using a high-powered blender.
3. Make the Peach Strawberry Purée
Add the peaches, strawberries, and 1 cup water to a blender.
Blend on high for approximately 30–60 seconds, or until the fruit is completely smooth.
For an extra-smooth lemonade, pour the purée through a fine-mesh strainer into a large bowl or pitcher.
Press gently with a spoon to extract as much liquid as possible.
If you prefer a thicker, fruitier lemonade, leave the purée unstrained.
4. Combine the Lemonade
Pour the fresh lemon juice into a large pitcher.
Add 4 cups cold water.
Stir in the peach strawberry purée.
Add the cooled simple syrup gradually, tasting as you go.
You may not need all of the syrup depending on how sweet your fruit is and how tart your lemons are.
5. Adjust the Flavor
Taste the lemonade.
If it’s too tart, add a little more simple syrup.
If it’s too sweet, add more lemon juice or cold water.
If you want a stronger fruit flavor, add additional peach or strawberry purée.
Stir thoroughly.
6. Chill
Cover the pitcher and refrigerate for at least 30 minutes.
Chilling allows the fruit flavors to blend and ensures the lemonade is properly cold before serving.
7. Prepare the Glasses
Fill serving glasses generously with ice.
Add a few sliced strawberries and peach slices if desired.
8. Pour and Garnish
Pour the chilled Peach Strawberry Lemonade over the ice.
Garnish each glass with a fresh strawberry, peach slice, or lemon wedge.
Serve immediately.
Chef’s Tips
Use Ripe Fruit
Soft, ripe peaches and sweet strawberries provide the strongest natural flavor and reduce the need for extra sugar.
Use Fresh Lemon Juice
Freshly squeezed lemon juice gives the lemonade a much brighter flavor than bottled lemon juice.
Strain for a Smooth Drink
Straining removes seeds and fruit pulp for a restaurant-style lemonade.
Don’t Add All the Syrup Immediately
Fruit sweetness varies, so add the simple syrup gradually and adjust to taste.
Chill Before Adding Ice
Starting with thoroughly chilled lemonade prevents the ice from melting quickly and diluting the drink.
Flavor Variations
Sparkling Peach Strawberry Lemonade
Replace half of the cold water with chilled sparkling water immediately before serving.
Peach Raspberry Lemonade
Replace half of the strawberries with fresh raspberries.
Strawberry Mango Lemonade
Add 1 cup chopped ripe mango to the blender with the peaches and strawberries.
Mint Peach Strawberry Lemonade
Add a handful of fresh mint leaves to the pitcher before chilling.
Frozen Peach Strawberry Lemonade
Blend the finished lemonade with ice until slushy and serve immediately.
Strawberry Basil Lemonade
Add several fresh basil leaves to the fruit purée for a sophisticated flavor combination.
Make-Ahead Instructions
The peach strawberry purée can be prepared up to 2 days ahead and refrigerated in an airtight container.
The simple syrup can also be prepared several days ahead and refrigerated.
Combine the ingredients shortly before serving for the freshest flavor.
Storage
Store leftover lemonade in a covered pitcher in the refrigerator.
Refrigerator: Best enjoyed within 2–3 days.
Stir well before serving because some of the fruit purée may naturally settle at the bottom.
