Recipe Information

  • Prep Time: 20 minutes
  • Freezing Time: 6–8 hours
  • Total Time: About 8 hours 20 minutes
  • Servings: 8–10
  • Difficulty: Easy
  • Method: No-churn

Ingredients

For the Mango Ice Cream

  • 2 cups (about 330 g) ripe mango, diced
  • 2 cups (480 ml) heavy whipping cream, very cold
  • 1 cup (300 g) sweetened condensed milk
  • ½ cup (120 ml) evaporated milk
  • 2 tablespoons (about 16 g) milk powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine salt

Optional

  • ½ cup finely diced ripe mango, for extra fruit pieces
  • Mango slices, for garnish
  • Toasted coconut, for serving
  • Mint leaves, for garnish

Instructions

1. Prepare the Mango

Use ripe, sweet mangoes for the best flavor.

Peel and dice the mango, removing the pit.

Place the 2 cups of mango in a blender or food processor and blend until completely smooth.

If you prefer a little texture in your ice cream, reserve ½ cup of the diced mango and keep it aside for later.

2. Make the Mango Base

Add the mango purée to a large mixing bowl.

Pour in the condensed milk and evaporated milk.

Add the milk powder, vanilla extract, and salt.

Whisk thoroughly until the mixture is completely smooth and the milk powder has dissolved.

Taste the mixture.

If your mangoes are particularly tart, you can add a little extra condensed milk to taste.

3. Whip the Cream

Pour the very cold heavy cream into a separate large bowl.

Using an electric mixer, whip on medium-high speed until stiff peaks form.

The whipped cream should be thick enough to hold its shape, but do not continue whipping once it reaches that stage.

4. Combine the Mixtures

Add about one-third of the whipped cream to the mango mixture.

Gently fold it in with a spatula to lighten the base.

Add the remaining whipped cream in two additions, folding gently after each addition.

Continue until you have a smooth, light, creamy mixture with no visible streaks of whipped cream.

5. Add Mango Pieces

If using reserved diced mango, gently fold it into the ice cream mixture.

Distribute the pieces evenly without overmixing.

6. Transfer to a Container

Pour the mango ice cream mixture into a 9 × 5-inch loaf pan or another freezer-safe container.

Use a spatula to smooth the top.

For a decorative finish, spoon small dots or swirls of mango purée over the surface and gently swirl them with a knife.

7. Cover and Freeze

Press a piece of plastic wrap directly against the surface of the ice cream, then cover the container tightly.

Freeze for at least 6–8 hours, or preferably overnight.

For the smoothest texture, avoid repeatedly opening the freezer during the first few hours.

8. Soften Before Serving

Remove the ice cream from the freezer and let it stand at room temperature for approximately 5–10 minutes before scooping.

This allows it to soften slightly and makes scooping much easier.

9. Serve

Scoop the mango ice cream into bowls or cones.

Garnish with fresh mango slices, toasted coconut, mint leaves, or a small drizzle of mango purée if desired.

Serve immediately.

Chef’s Tips

  • Use very ripe mangoes: The natural sweetness and flavor of the mango are the star of this recipe.
  • Chill the cream: Very cold heavy cream whips much more successfully.
  • Don’t overwhip: Overwhipped cream can make the final texture less smooth.
  • Fold gently: Preserve the air in the whipped cream for a light, creamy texture.
  • Use full-fat dairy: Lower-fat products can produce a harder, icier ice cream.
  • Freeze overnight: Longer freezing gives the mixture enough time to fully set.
  • Don’t add too much fresh mango: Excess fruit can introduce additional water and create ice crystals.

How to Make It Extra Smooth

For an especially silky texture, strain the mango purée through a fine-mesh sieve before mixing it with the dairy ingredients.

This removes any fibrous mango strands and creates a smoother finished ice cream.

Delicious Variations

Mango Coconut Ice Cream

Replace ½ cup of the evaporated milk with ½ cup full-fat coconut milk and add ¼ cup toasted coconut.

Mango Passion Fruit Ice Cream

Swirl ¼ cup passion fruit pulp into the finished mixture before freezing.

Mango Cheesecake Ice Cream

Fold in 4 oz (113 g) softened cream cheese that has been beaten smooth with a little condensed milk.

Mango Cardamom Ice Cream

Add ¼ teaspoon ground cardamom to the mango mixture for a fragrant, aromatic twist.

Mango Chili Ice Cream

Add a tiny pinch of chili powder or cayenne to the mango base for a sweet-and-spicy flavor.

Serving Suggestions

Serve scoops of mango ice cream with:

  • Fresh mango slices
  • Toasted coconut
  • Crushed cookies
  • Chopped pistachios
  • Fresh berries
  • Mango coulis
  • Whipped cream
  • Mint leaves

It also makes a delicious topping for warm brownies, waffles, pancakes, and fruit desserts.

Storage

Keep the ice cream tightly covered in the freezer.

For the best texture and flavor, enjoy within 2–3 weeks.

Always keep the container tightly sealed to prevent freezer odors and ice crystals from forming.
