Ingredients

  • 2 medium yellow squash, sliced into ¼-inch rounds
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • Salt, to taste
  • Vegetable oil, for frying

Instructions

1. Prepare the squash

Wash and thoroughly dry the yellow squash.

Trim off the ends and slice the squash into ¼-inch rounds.

Try to keep the slices as uniform as possible so they cook evenly.

Lightly sprinkle the squash with salt and let it sit for 5–10 minutes.

Pat away any excess moisture with paper towels.

2. Prepare the coating

In a shallow bowl, combine:

  • Cornmeal
  • All-purpose flour
  • Garlic powder
  • Paprika
  • Onion powder
  • Black pepper
  • A generous pinch of salt

Whisk everything together until evenly combined.

3. Set up the buttermilk

Pour the buttermilk into a second shallow bowl.

Arrange the buttermilk and seasoned cornmeal mixture next to each other for easy dipping.

4. Coat the squash

Working with a few slices at a time, dip each squash round into the buttermilk.

Allow the excess to drip off.

Immediately transfer the squash to the cornmeal mixture.

Press the coating gently onto both sides so it adheres well.

Shake off any excess coating and place the coated squash on a plate or wire rack.

Repeat with the remaining slices.

For an extra-crispy coating: Dip the coated squash back into the buttermilk and then into the cornmeal mixture a second time.

5. Heat the oil

Pour approximately ½–1 inch of vegetable oil into a large, heavy skillet.

Heat over medium to medium-high heat until the oil reaches about 350°F (175°C).

If you don’t have a thermometer, drop a tiny pinch of cornmeal into the oil. It should immediately sizzle without burning.

6. Fry the squash

Carefully place the coated squash slices into the hot oil in a single layer.

Do not overcrowd the skillet. Fry in batches if necessary.

Cook for approximately 2–3 minutes per side, or until deeply golden brown and crisp.

Adjust the heat as needed to maintain a steady temperature.

7. Drain

Use tongs or a slotted spoon to transfer the fried squash to a wire rack set over a baking sheet or a paper-towel-lined plate.

Immediately sprinkle lightly with additional salt while the squash is hot.

Repeat until all the squash is fried.

8. Serve

Serve the fried squash hot and crispy.

For the best texture, don’t cover the fried squash while it is hot, as trapped steam can soften the coating.

Chef’s Tips

  • Dry the squash well. Excess moisture can cause the coating to slide off and make the oil splatter.
  • Keep the slices around ¼ inch thick. Very thin slices can become fragile, while thick slices may remain too firm inside.
  • Don’t overcrowd the skillet. Too many slices at once will lower the oil temperature and produce greasy squash.
  • Maintain an oil temperature around 350°F for crisp results.
  • A wire rack is better than stacking the squash on paper towels because air can circulate underneath, keeping the crust crisp.
  • Season immediately after frying while the coating is still hot.
  • If your squash is particularly watery, lightly salting it before coating helps draw out excess moisture.

Extra-Crispy Southern Version

For an even crunchier crust, replace ¼ cup of the cornmeal with ¼ cup panko breadcrumbs.

You can also add ½ teaspoon baking powder to the cornmeal mixture for a slightly lighter, craggier coating.

Spicy Fried Squash

Add ½ teaspoon cayenne pepper to the cornmeal mixture.

For even more heat, mix a few dashes of hot sauce into the buttermilk before dipping the squash.
