Crispy Bread Pizza Cones

Ingredients
For the Bread Cones
- 8 slices white or sandwich bread
- 2–3 tablespoons butter or melted butter, for brushing
- 2 tablespoons maida (all-purpose flour)
- 3 tablespoons water, approximately, for the slurry
For the Pizza Filling
- ½ small onion, finely chopped
- ½ small capsicum (bell pepper), finely chopped
- 6–8 cherry tomatoes, finely chopped
- ½ cup sweet corn
- 1 cup grated mozzarella or pizza cheese
- ½ teaspoon chilli flakes, or to taste
- ½ teaspoon dried oregano
- ¼ teaspoon salt, or to taste
- 2 tablespoons ketchup
- 1 tablespoon chipotle sauce

- Extra grated cheese
- Extra chilli flakes
- Extra oregano
Instructions
1. Prepare the bread
Trim the crusts from the bread slices.
Using a rolling pin, roll each slice firmly until it is thin and flattened. This makes the bread flexible enough to shape into cones while helping it become extra crispy during cooking.
2. Make the maida slurry
In a small bowl, mix the maida and water until you have a smooth, thick but spreadable slurry.
The slurry will act as the “glue” that seals the bread cones.
3. Shape the bread cones
Take one flattened bread slice and bring two opposite edges together to form a cone shape.
Slightly overlap the edges.
Brush or spread a little maida slurry along the overlapping edge and press firmly to seal.
Hold it for a few seconds until the seam sticks.
Repeat with the remaining bread slices.
Tip: Don’t make the opening too narrow—you want enough room to generously fill each cone.
4. Prepare the pizza filling
Add the chopped onion, capsicum, cherry tomatoes, and sweet corn to a mixing bowl.
Add the ketchup, chipotle sauce, chilli flakes, oregano, and salt.
Mix well.
Fold in about ¾ cup of the grated cheese, reserving the remaining cheese for the tops.
Taste the filling and adjust the chilli flakes or chipotle sauce according to your preference.
5. Fill the cones
Carefully spoon the pizza filling into each bread cone.
Don’t pack the filling too tightly, as the cheese needs room to melt.
Top each cone with the remaining grated cheese.
6. Brush with butter
Lightly brush the outside of each bread cone with melted butter.
This helps the bread become beautifully golden and crisp.
7. Bake
Preheat the oven to 375°F (190°C).
Place the cones upright on a lined baking tray. If necessary, use small oven-safe ramekins, muffin cups, or crumpled foil around the cones to help them remain upright.
Bake for 10–15 minutes, or until the bread is golden and crisp and the cheese has melted and developed lightly browned spots.
Air Fryer Method
Preheat the air fryer to 350°F (175°C).
Place the cones carefully in the basket and air fry for 6–9 minutes, checking frequently toward the end.
Cooking times vary depending on the air fryer and the thickness of the bread.
8. Finish and serve
Remove the cones from the oven or air fryer.
Sprinkle with a little extra oregano and chilli flakes.
Allow them to cool for 2–3 minutes before serving—the filling will be extremely hot straight from the oven.
Serve warm and crispy.

- Roll the bread very thin. Thick bread can make the cones difficult to shape and less crispy.
- Seal the seam thoroughly with the maida slurry so the cone doesn’t open while baking.
