⏱ Recipe Information
Prep Time: 10 minutes
Chilling Time: 4 hours
Total Time: 4 hours 10 minutes
Servings: 6
Difficulty: Easy
Method: No-Bake
Ingredients
- 330 ml coconut water
- 15 g gelatin sheets
- 100 ml coconut milk
- 200 ml milk
- 25 g granulated sugar
- 30 ml whipping cream
- 1 pinch salt, optional
Instructions
1. Soak the Gelatin Sheets
Place the gelatin sheets in a bowl of cold water.
Allow them to soak for approximately 5–10 minutes, or until they become completely soft and flexible.
Once softened, remove the gelatin from the water and gently squeeze out as much excess water as possible.
Set aside.
2. Warm the Coconut Water
Pour the coconut water into a small saucepan.
Warm gently over low to medium heat until hot but not boiling.
Do not allow the coconut water to boil, as excessive heat can affect the gelatin’s setting ability.
3. Dissolve the Gelatin
Remove the saucepan from the heat.
Add the softened, squeezed gelatin sheets and stir continuously until they are completely dissolved.
The mixture should be clear and free of visible pieces of gelatin.
4. Prepare the Creamy Coconut Mixture
In a separate saucepan, combine:
- Coconut milk
- Milk
- Sugar
- Whipping cream
- Optional pinch of salt
Warm gently over low to medium heat, stirring occasionally until the sugar has completely dissolved and the mixture is hot.
Do not bring the mixture to a boil.
5. Combine the Mixtures
Pour the warm milk and coconut mixture into the dissolved gelatin and coconut water mixture.
Stir thoroughly until everything is completely combined.
Taste the mixture and adjust the sweetness if desired.
6. Strain the Mixture
For an especially smooth and professional finish, pour the mixture through a fine-mesh sieve into a measuring jug or bowl.
This removes any small undissolved gelatin pieces and creates a perfectly smooth jelly.
7. Pour into Molds
Carefully pour the mixture into small jelly molds, ramekins, silicone molds, or serving glasses.
If you notice small bubbles on the surface, gently skim them away with a spoon.
8. Chill
Place the molds in the refrigerator.
Chill for at least 4 hours, or until the coconut jellies are completely set.
For the best texture, allow them to chill overnight.
9. Unmold and Serve
If using molds, briefly dip the outside of each mold into warm water for a few seconds.
Run a thin knife gently around the edge if necessary, then carefully invert the jelly onto a serving plate.
If using glasses or ramekins, simply serve directly from the container.
Serve thoroughly chilled.
Chef’s Tips
Keep the Gelatin Cool-Soaked
Always soften gelatin sheets in cold water. Warm water can cause them to dissolve prematurely and make them more difficult to handle.
Don’t Boil the Gelatin
Once gelatin has been added, avoid boiling the mixture. Gentle heat is enough to dissolve it.
Strain for a Silky Texture
Straining the finished mixture is an easy professional technique that gives the coconut jellies an exceptionally smooth texture.
Adjust the Sweetness
The sweetness of coconut water and coconut milk can vary. Taste the mixture before chilling and adjust the sugar if needed.
Chill Thoroughly
Do not rush the setting process. The jellies need sufficient refrigeration time to develop their delicate but stable texture.
Serving Suggestions
Serve the coconut jellies chilled with:
- Toasted coconut flakes
- Fresh mango
- Fresh berries
- Thinly sliced strawberries
- Mango purée
- Coconut cream
- A few mint leaves
For an elegant presentation, unmold each jelly onto a small dessert plate and surround it with fresh tropical fruit.
Variations
Mango Coconut Jelly
Add a thin layer of mango purée to the bottom of each mold before pouring in the coconut mixture.
Extra Coconut
Replace part of the milk with additional coconut milk for a stronger coconut flavor.
Toasted Coconut
Sprinkle lightly toasted shredded coconut over the jellies just before serving for added texture.
Tropical Version
Serve with diced mango, pineapple, and passion fruit for a bright tropical dessert.
Storage
Keep the coconut jellies covered and refrigerated.
Refrigerator: Best enjoyed within 2–3 days.
Keep them chilled until ready to serve.
