- Difficulty: Easy
- Method: Stovetop
Ingredients
For the Green Beans & Potatoes
- 1 lb fresh green beans, trimmed and cut into bite-sized pieces
- 4 cups baby potatoes, halved or quartered depending on size
or 4 large potatoes, peeled and cut into 1-inch cubes - 6 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) ranch seasoning mix
- 1 cup chicken broth
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 1 tablespoon butter, optional
- 1 tablespoon chopped fresh parsley, optional, for garnish
Instructions
1. Prepare the vegetables
Trim the green beans and cut them into bite-sized pieces. If using larger potatoes, peel them and cut them into roughly 1-inch cubes so they cook evenly.
If using baby potatoes, simply halve or quarter them.
2. Cook the bacon
Place a large deep skillet, Dutch oven, or heavy-bottomed pot over medium heat.
Add the chopped bacon and cook for 5–7 minutes, stirring occasionally, until browned and crisp around the edges.
Transfer about half of the cooked bacon to a paper-towel-lined plate for topping later.
Leave the bacon drippings in the pot.
3. Sauté the onion and garlic
Add the diced onion to the bacon drippings.
Cook for 3–4 minutes, stirring occasionally, until the onion begins to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
4. Add the potatoes and green beans
Add the potatoes and green beans to the pot.
Sprinkle the ranch seasoning and dried thyme over the vegetables. Add the black pepper and a small amount of salt.
Stir thoroughly so the ranch seasoning coats everything.
5. Add the broth
Pour in the chicken broth and stir.
The broth should come partway up the vegetables rather than completely covering them. The vegetables will release additional moisture as they cook.
Bring the mixture to a gentle boil.
6. Simmer until tender
Reduce the heat to medium-low and cover the pot.
Simmer for approximately 25–35 minutes, stirring every 8–10 minutes, until the potatoes are fork-tender and the green beans are cooked to your preferred tenderness.
If the pot becomes too dry before the vegetables are tender, add another ¼ cup chicken broth or water.
For very tender, traditional country-style green beans, allow them to simmer a little longer.
7. Finish with butter and bacon
Once the potatoes and green beans are tender, taste and adjust the seasoning.
For an extra-rich finish, stir in 1 tablespoon butter.
Add most of the reserved crispy bacon and gently toss everything together.
8. Garnish and serve
Transfer the green beans and potatoes to a serving bowl or serve directly from the pot.
Sprinkle the remaining crispy bacon and fresh parsley over the top.
Serve hot.
Chef’s Tips
- Don’t overcook the potatoes: Cut them into similarly sized pieces so they finish cooking at the same time.
- Use the bacon drippings: They’re what give this dish its deep, smoky country flavor.
- Watch the salt: Ranch seasoning, bacon, and chicken broth can all contain plenty of salt, so season lightly at first.
- For softer green beans: Simmer an additional 10–15 minutes.
- For firmer green beans: Check them around the 20-minute mark and stop cooking once they’re tender-crisp.
- Want extra bacon flavor? Add 1–2 additional slices of bacon.
- Don’t let the broth completely dry out: A little cooking liquid helps the potatoes become tender and keeps the dish moist and flavorful.
Optional Variations
Creamy Ranch Green Beans & Potatoes
After the vegetables are tender, stir in ¼ cup heavy cream or half-and-half along with the butter for a creamy ranch-style finish.
Spicy Country Style
Add ¼–½ teaspoon crushed red pepper flakes or a few dashes of hot sauce.
Cheesy Ranch
Sprinkle ½–1 cup shredded sharp cheddar cheese over the finished dish and cover for 1–2 minutes until melted.
Smoked Sausage Version
Replace half of the bacon with 8 oz smoked sausage, sliced into rounds. Brown it with the bacon before adding the vegetables.
Extra Southern Flavor
Add ½ teaspoon smoked paprika and a splash of hot sauce for a deeper, smoky flavor.
What to Serve With
These ranch green beans and potatoes are especially good alongside:
- Fried chicken
- Baked chicken
- Meatloaf
- Country-fried steak
- Pork chops
- Grilled sausage
- Roast beef
- Ham
- Cornbread
- Mashed potatoes or macaroni and cheese
Storage
Allow leftovers to cool and refrigerate in an airtight container for up to 4 days.
Reheating
Reheat gently in a skillet over medium-low heat or in the microwave. Add a small splash of chicken broth or water if the vegetables seem dry.
Freezing
The dish can be frozen for up to 2 months, although the texture of the green beans and potatoes will be softer after thawing. For the best texture, freeze the cooked vegetables without the reserved crispy bacon and add freshly cooked bacon when reheating.
The Result
Tender potatoes + savory green beans + smoky bacon + creamy ranch seasoning = pure country comfort food. The bacon drippings infuse the vegetables as they simmer, while the ranch and thyme add a delicious savory-herb flavor that makes this simple side dish incredibly hard to resist.
