- 1 cup (100–120 g) shredded mozzarella cheese
- ½ cup (50 g) shredded cheddar cheese
- 1 small onion, finely chopped
- 1–2 green chilies, finely chopped
- 1 tsp ginger, finely grated
- ½ tsp red chili powder
- ½ tsp roasted cumin powder
- ½ tsp black pepper
- ½ tsp chaat masala
- ¼ tsp garam masala
- ½ tsp salt, or to taste
- 2 tbsp finely chopped fresh coriander (cilantro)
- 1 tbsp butter or oil
For Sealing
- 2 tbsp all-purpose flour
- 2–3 tbsp water
For Frying
- Vegetable oil or other neutral oil, as needed for deep-frying
Instructions
1. Prepare the Samosa Dough
- Add the flour, salt, and ajwain to a large mixing bowl.
- Pour in the oil and rub it into the flour with your fingertips for 2–3 minutes.
- The flour should hold together when squeezed in your palm. This step is important for creating a crisp, flaky samosa shell.
- Gradually add water, mixing as you go, until a firm, smooth dough forms. Avoid making the dough soft or sticky.
- Knead gently for 3–4 minutes until the dough comes together.
- Cover with a damp kitchen towel and let it rest for 30 minutes.
2. Prepare the Corn Cheese Filling
- If using fresh or frozen corn, cook it until tender and drain very well.
- Heat 1 tablespoon butter or oil in a skillet over medium heat.
- Add the chopped onion and sauté for 2–3 minutes until softened.
- Add the green chilies and grated ginger. Cook for another 30–45 seconds.
- Add the corn and cook for 2–3 minutes, stirring occasionally. Any excess moisture should evaporate.
- Season with red chili powder, roasted cumin powder, black pepper, chaat masala, garam masala, and salt.
- Mix well and cook for another minute.
- Remove from the heat and allow the mixture to cool completely.
- Once cooled, stir in the mozzarella, cheddar, and fresh coriander.
Important: The filling should be cool before assembling the samosas. A hot filling can soften the dough and cause the cheese to leak during frying.
3. Make the Sealing Paste
Mix 2 tablespoons flour with enough water to make a thick, smooth paste. Set aside.
4. Shape the Samosas
- Divide the rested dough into 9–10 equal portions.
- Roll each portion into a smooth ball.
- Lightly dust your work surface with flour and roll one dough ball into a thin oval, approximately 6–7 inches long.
- Cut the oval in half to create two semicircles.
- Take one semicircle and bring the straight edges together to form a cone.
- Overlap the edges slightly and seal them firmly using a little flour paste.
- Hold the cone in your hand and fill it with about 1½–2 tablespoons of corn cheese filling. Do not overfill.
- Brush the remaining open edges with sealing paste.
- Press the edges together firmly to close the samosa.
- Gently shape and straighten the samosa so it stands upright.
- Repeat with the remaining dough and filling.
Keep the prepared samosas covered with a clean kitchen towel so they don’t dry out.
5. Fry the Samosas
- Pour enough oil into a deep, heavy-bottomed pan for the samosas to be comfortably submerged.
- Heat the oil over medium-low heat until it reaches approximately 160–170°C (320–340°F).
- Carefully add a few samosas to the oil. Do not overcrowd the pan.
- Fry slowly, turning occasionally, until the samosas become crisp and evenly golden.
- This usually takes about 8–10 minutes per batch.
- Once deeply golden and crisp, remove the samosas with a slotted spoon.
- Drain on a wire rack or paper towels.
- Repeat with the remaining samosas.
6. Serve
Serve the corn cheese samosas hot and crispy with:
- Fresh mint-coriander chutney
- Tamarind chutney
- Sweet chili sauce
- Tomato ketchup
- Garlic chili sauce
- Creamy cilantro or ranch-style dip
For the best cheese pull, serve them while they’re still hot.
Chef’s Tips for Extra-Crispy Samosas
- Don’t skip rubbing the oil into the flour. This creates the characteristic flaky samosa texture.
- Keep the dough firm rather than soft. Soft dough can absorb more oil.
- Don’t add too much water while kneading.
- Make sure the corn filling is completely cool and fairly dry before adding the cheese.
- Avoid overfilling the samosas.
- Seal every edge thoroughly to prevent cheese from escaping into the frying oil.
- Fry over medium-low heat. Very hot oil can brown the outside before the pastry becomes properly crisp.
- Frying slowly gives the samosa shell its beautiful crunchy, blistered texture.
Variations
🌶️ Spicy Corn Cheese Samosa
Add finely chopped jalapeños, extra green chilies, or a pinch of red pepper flakes.
🫑 Loaded Vegetable Version
Add finely diced bell peppers, carrots, peas, or finely chopped spinach to the filling.
🧀 Extra-Cheesy Version
Increase the mozzarella and add a little cream cheese for an especially creamy center.
🌿 Herby Corn Samosa
Add extra cilantro along with chopped mint and a pinch of dried oregano.
🔥 Air-Fryer Version
Brush the assembled samosas lightly with oil and air-fry at 190°C/375°F for 12–16 minutes, turning halfway through, until crisp and golden.
Make-Ahead & Storage
Uncooked samosas:
Assemble the samosas and refrigerate them, covered, for up to 1 day before frying.
Freezing:
Place uncooked samosas on a tray in a single layer and freeze until firm. Transfer them to a freezer-safe container or bag and freeze for up to 2 months. Fry directly from frozen, using medium-low heat and allowing a few extra minutes of cooking time.
Leftovers:
Store fried samosas in an airtight container in the refrigerator for up to 3 days. Reheat in an air fryer or oven to restore their crispness.
Best texture:
Avoid microwaving if possible, as it can make the pastry soft.
Serving Suggestion
For a party platter, serve these golden Corn Cheese Samosas alongside mint chutney, tamarind chutney, and a creamy chili dip. Garnish with fresh cilantro and a sprinkle of chaat masala for an irresistible snack spread.
