Ingredients

Hummus

  • 400 g (14 oz) canned chickpeas, drained and rinsed
  • 60 g (¼ cup) tahini
  • 2–3 tablespoons fresh lemon juice
  • 1 small garlic clove
  • 2 tablespoons extra-virgin olive oil, plus more for serving
  • ½ teaspoon ground cumin
  • ½ teaspoon salt, or to taste
  • 2–4 tablespoons ice-cold water

  • Paprika
  • Fresh parsley, chopped
  • A few whole chickpeas

Instructions

1. Prepare the Chickpeas

Drain the canned chickpeas thoroughly and rinse them under cold running water.

Allow them to drain well.

For exceptionally smooth hummus, you can remove the skins from the chickpeas, although this is completely optional.

2. Blend the Garlic and Lemon

Add the garlic clove and 2 tablespoons lemon juice to a food processor.

Blend for approximately 20–30 seconds.

Letting the garlic sit briefly in the lemon juice helps mellow its sharp raw flavor.

3. Add the Tahini

Add the tahini to the food processor.

Blend for approximately 30 seconds.

The tahini may become thick and pasty at first.

Add 1 tablespoon ice-cold water and blend again until the mixture becomes lighter and creamy.

4. Add the Chickpeas

Add the drained chickpeas to the food processor.

Add:

  • Ground cumin
  • Salt
  • Olive oil

Blend continuously for 1–2 minutes.

Stop and scrape down the sides of the bowl as needed.

5. Add Ice-Cold Water

With the processor running, gradually add the remaining ice-cold water, 1 tablespoon at a time.

Continue blending until the hummus becomes smooth, creamy, and light.

You may need anywhere from 2–4 tablespoons, depending on the chickpeas and tahini.

6. Adjust the Flavor

Taste the hummus.

Add more lemon juice if you’d like a brighter, tangier flavor.

Add additional salt if necessary.

If the hummus is too thick, add another splash of ice-cold water and blend again.

Continue processing until you reach your preferred consistency.

7. Blend Until Silky

For the smoothest hummus, continue processing for another 1–2 minutes.

This extra blending time makes a noticeable difference in texture.

The finished hummus should be thick enough to hold its shape but creamy enough to spread easily.

8. Transfer to a Serving Bowl

Spoon the hummus into a shallow serving bowl.

Use the back of a spoon to create a decorative swirl across the surface.

9. Garnish

Drizzle generously with extra-virgin olive oil.

Sprinkle lightly with paprika.

Add chopped fresh parsley and a few whole chickpeas in the center.

Serve immediately or refrigerate until ready to serve.
