🥛 For the Creamy Finish

  • ¼ cup (60 ml) heavy cream, optional
  • 1 tablespoon butter or ghee, optional
  • 1 tablespoon chopped fresh coriander

✨ Optional Garnish

  • Fresh coriander
  • Thinly sliced green chilies
  • A drizzle of cream
  • Julienne ginger
  • A pinch of garam masala

👩‍🍳 Instructions

1. Prepare the Chicken

Pat the chicken pieces dry with paper towels.

Cut any very large pieces into smaller, evenly sized portions so they cook at the same rate.

Set aside.

2. Prepare the Yogurt

Place the yogurt in a bowl and whisk until completely smooth.

This helps prevent it from curdling when it is added to the hot curry.

Set aside.

3. Heat the Oil

Place a large heavy-bottomed pot or handi over medium heat.

Add the 5 tablespoons of oil and allow it to heat.

4. Temper the Whole Spices

Add the bay leaf, cumin seeds, and dried red chilies.

Cook for approximately 30–45 seconds, until the cumin becomes fragrant.

Be careful not to burn the chilies.

5. Brown the Onions

Add the finely sliced onions.

Cook over medium heat for approximately 8–12 minutes, stirring frequently.

The onions should become soft and beautifully golden brown.

Don’t rush this step—the browned onions provide much of the depth and sweetness in the gravy.

6. Add the Ginger-Garlic Paste

Add the ginger-garlic paste.

Cook for approximately 1–2 minutes, stirring constantly, until the raw aroma disappears.

7. Add the Chicken

Add the chicken pieces to the pot.

Increase the heat slightly to medium-high.

Stir well and cook for approximately 5–7 minutes, turning the chicken frequently.

The outside of the chicken should become lightly browned.

🍅 Build the Gravy

8. Add the Tomatoes

Add the chopped or pureed tomatoes.

Stir well, scraping the bottom of the pot to incorporate all the flavorful browned bits.

Cook uncovered for approximately 6–8 minutes, until the tomatoes soften and begin to break down.

9. Add the Ground Spices

Add:

  • Red chili powder
  • Ground coriander
  • Turmeric
  • Black pepper
  • Salt

Stir thoroughly to coat the chicken and tomato mixture.

Cook for another 2–3 minutes.

10. Cook Until the Oil Separates

Continue cooking over medium heat until the tomato mixture becomes thick and glossy and the oil begins to separate around the edges.

This may take approximately 5–8 minutes.

This stage develops a much deeper curry flavor, so avoid rushing it.

🥣 Add the Yogurt

11. Lower the Heat

Reduce the heat to low.

Add the whisked yogurt gradually, stirring continuously.

Adding it slowly over low heat helps prevent the yogurt from splitting.

12. Cook the Yogurt Into the Curry

Once all the yogurt has been incorporated, increase the heat slightly to medium.

Cook for approximately 4–5 minutes, stirring frequently.

The mixture should become creamy and smooth.

🌶️ Simmer the Chicken

13. Add the Green Chilies

Add the slit green chilies.

Stir them into the curry.

14. Add Water

Pour in approximately ¾–1 cup (180–240 ml) hot water, depending on how thick you want the gravy.

Stir well.

15. Cover and Simmer

Cover the pot and reduce the heat to low.

Allow the chicken to simmer for approximately 15–20 minutes, or until completely cooked and tender.

Stir occasionally.

If the gravy becomes too thick before the chicken is cooked, add a small splash of hot water.

🥛 Finish the Chicken Handi

16. Add Garam Masala

Once the chicken is tender, sprinkle in the garam masala.

Stir gently.

17. Add Cream

For a richer, restaurant-style finish, stir in the optional ¼ cup heavy cream.

Simmer uncovered for another 2–3 minutes.

Don’t boil vigorously after adding the cream.

18. Add Butter or Ghee

For extra richness, stir in 1 tablespoon butter or ghee.

Allow it to melt into the gravy.

Taste and adjust the salt and chili level if needed.

19. Garnish

Turn off the heat.

Sprinkle with freshly chopped coriander.

Garnish with sliced green chilies and julienned ginger if desired.

For an attractive restaurant-style presentation, drizzle a little cream over the top.

🍽️ Serving

Serve the Chicken Handi hot with:

  • Butter naan
  • Garlic naan
  • Tandoori roti
  • Chapati
  • Paratha
  • Basmati rice
  • Jeera rice
  • Vegetable pulao

A fresh cucumber and onion salad makes a refreshing side for the rich curry.

⭐ Chef’s Tips

Brown the onions properly

Don’t stop when the onions are merely soft. A deep golden color gives the gravy much more flavor.

Use full-fat yogurt

Full-fat yogurt is less likely to split and gives the curry a smoother, richer texture.

Add yogurt over low heat

High heat can cause yogurt to curdle. Lower the heat before adding it and stir continuously.

Cook the tomato mixture thoroughly

Wait until the tomato mixture becomes thick and the oil begins separating. This gives the curry a deeper, more developed flavor.

Don’t overcook the chicken

Chicken thighs are particularly forgiving, but cook just until tender to prevent the meat from becoming dry.

Adjust the gravy

Add more hot water for a thinner curry or simmer uncovered for a few extra minutes for a thicker, restaurant-style gravy.

🌶️ Easy Variations

Creamy Chicken Handi

Increase the heavy cream to ½ cup for an especially rich and silky curry.

Spicy Chicken Handi

Add extra green chilies and ½ teaspoon cayenne pepper.

Butter Chicken Handi

Add an additional tablespoon of butter and a little extra cream for a richer version.

Smoky Chicken Handi

Place a small piece of hot charcoal in a heatproof bowl inside the cooked curry. Drizzle a little oil over the charcoal, cover the pot for 2–3 minutes, then carefully remove it.

Dhaba-Style Chicken Handi

Use slightly more red chili, coriander, and garam masala and finish with a spoonful of ghee.

Boneless Chicken Handi

Replace the bone-in chicken with boneless chicken thighs. Reduce the simmering time because boneless pieces cook more quickly.

🧊 Storage

Allow the Chicken Handi to cool slightly before transferring it to an airtight container.

Refrigerate for up to 3 days.

The flavors often become even more developed after resting overnight.

🔥 Reheating

Reheat gently in a saucepan over medium-low heat.

Add a splash of water if the gravy has thickened considerably.

Stir occasionally and heat until the chicken is steaming hot throughout.

Avoid boiling the curry aggressively, especially if cream has been added.

❄️ Freezing

Chicken Handi can be frozen for up to 2 months in a freezer-safe airtight container.

For the best texture, freeze the curry before adding the final cream garnish.

Thaw overnight in the refrigerator and reheat gently on the stovetop.

Add a small splash of cream or water after reheating if needed.

🍗🌶️ Final Result

This Chicken Handi is rich, aromatic, creamy, and packed with layers of flavor from golden onions, tomatoes, yogurt, ginger-garlic, whole spices, and green chilies.

The finished gravy is thick enough to coat every piece of tender chicken while still being perfect for scooping up with warm naan or spooning over fragrant rice.

A comforting, restaurant-style chicken curry that’s full of bold spices, creamy richness, and irresistible homemade flavor! 🍗🥘✨
