Recipe Information

Prep Time: 25 minutes
Chill Time: 30 minutes
Total Time: 55 minutes
Servings: 24–30 strawberry halves
Difficulty: Easy
Method: No-Bake

Ingredients

Strawberry Crunch Topping

  • 6 Golden Oreo cookies, finely crushed
  • 1 tablespoon (14 g) unsalted butter, melted
  • 2 teaspoons strawberry-flavored gelatin powder

Cheesecake Filling

  • 12–15 large strawberries
  • 8 oz (226 g) cream cheese, softened
  • ¾ cup (90 g) powdered sugar, sifted
  • 2 tablespoons (30 ml) heavy cream
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

1. Prepare the Strawberry Crunch Topping

Place the Golden Oreos in a food processor and pulse until they become fine crumbs. You can also place them in a zip-top bag and crush them with a rolling pin.

Transfer the crumbs to a small bowl. Add the melted butter and strawberry gelatin powder, then mix until the crumbs are evenly coated and have a slightly damp, crumbly texture.

Set aside while you prepare the strawberries.

2. Prepare the Strawberries

Wash the strawberries gently under cool water and dry them very thoroughly with paper towels. Excess moisture can make the filling slippery and affect the texture.

Remove the green tops. Slice each strawberry in half lengthwise.

Using a small paring knife or a small spoon, carefully scoop or hollow out a little of the center of each strawberry half to create a small pocket for the cheesecake filling. Be careful not to cut all the way through.

Place the prepared strawberry halves cut-side up on a tray or parchment-lined plate.

3. Make the Cheesecake Filling

In a medium mixing bowl, beat the softened cream cheese until completely smooth and creamy.

Add the sifted powdered sugar and beat again until fluffy and well combined.

Pour in the heavy cream and vanilla extract. Add the salt and beat for another 1–2 minutes, scraping down the sides of the bowl as needed.

The filling should be smooth, creamy, and thick enough to hold its shape when piped.

4. Fill the Strawberries

Transfer the cheesecake filling to a piping bag fitted with a star tip. A round tip works too, or simply snip the corner from a sturdy zip-top bag.

Pipe a generous swirl of cheesecake filling onto each strawberry half, covering the hollowed center and creating a pretty mound on top.

5. Add the Strawberry Crunch

Sprinkle the strawberry crunch topping over each filled strawberry.

Gently press the crumbs into the cheesecake filling just enough to help them stick.

6. Chill

Refrigerate the finished strawberries for at least 30 minutes before serving.

Chilling allows the cream cheese filling to firm up and makes the strawberries easier to handle.

Serve cold and enjoy!

Chef’s Tips

Use large, firm strawberries. They’re easier to hollow, fill, and serve than very small or soft berries.

Dry the strawberries completely. This is especially important for a no-bake dessert. Water left on the berries can thin the filling.

Soften the cream cheese properly. Room-temperature cream cheese creates a much smoother filling and prevents lumps.

Sift the powdered sugar. This helps keep the cheesecake filling silky rather than grainy.

Pipe rather than spoon the filling. A piping bag gives the strawberries a polished, bakery-style appearance.

Make the topping finely crumbed. Smaller crumbs cling better to the filling and give you more strawberry crunch in every bite.

Make-Ahead Instructions

The cheesecake filling can be prepared up to 1 day ahead and stored covered in the refrigerator.

The strawberry crunch topping can also be prepared ahead and kept in an airtight container at room temperature.

For the best texture, assemble the strawberries a few hours before serving rather than too far in advance.

Storage

Store assembled Cheesecake Deviled Strawberries in a single layer in an airtight container in the refrigerator.

They are best enjoyed within 24 hours, as fresh strawberries gradually release moisture and become softer.

Variations

Chocolate Cheesecake Strawberries

Drizzle the finished strawberries with melted milk, dark, or white chocolate.

Oreo Cheesecake Crunch

Replace the Golden Oreos with regular chocolate Oreos for a chocolate-strawberry version.

Lemon Cheesecake Strawberries

Add 1 teaspoon finely grated lemon zest to the cheesecake filling for a bright citrus flavor.

Extra Strawberry Flavor

Add 1–2 tablespoons finely chopped freeze-dried strawberries to the topping for an even stronger strawberry taste.

Birthday Party Version

Top with colorful sprinkles instead of—or in addition to—the strawberry crunch.
