These Campfire Éclairs are an easy camping treat that tastes like a cross between a s’more and an éclair. A warm, golden marshmallow is wrapped around a crisp graham cracker and chocolate filling, creating a melty, messy, absolutely irresistible dessert.

Ingredients

  • 16 rectangular graham crackers
  • 8 large marshmallows
  • 8 pieces milk or dark chocolate, about 10–15 g each
  • 2 tbsp melted butter, optional
  • ¼ cup mini chocolate chips, optional
  • ¼ cup crushed graham crackers, optional
  • Chocolate or caramel sauce, for drizzling, optional

Instructions

1. Prepare the Chocolate

Break the chocolate into pieces that will fit comfortably between two graham crackers.

For an extra-decadent éclair, sprinkle a few mini chocolate chips over the chocolate.

2. Make the Graham Cracker Base

Break the graham crackers into pairs.

Place one piece of chocolate between two graham cracker pieces, creating a little sandwich.

Set aside while you toast the marshmallows.

3. Toast the Marshmallows

Place one large marshmallow on a long roasting stick.

Hold it a few inches above the hot coals rather than directly in the flames. Slowly rotate the stick so the marshmallow browns evenly.

Toast until the outside is golden brown and slightly crisp while the center becomes soft and molten.

4. Assemble the Éclair

Carefully slide the hot marshmallow onto the prepared graham-cracker-and-chocolate sandwich.

If desired, gently press the graham crackers together so the hot marshmallow melts the chocolate.

For an even gooier result, wrap the assembled éclair loosely in foil.

5. Warm Over the Fire

Place the foil-wrapped éclair near the hot coals for about 30–60 seconds, turning once.

You only want to warm the chocolate and graham crackers—not burn them.

Carefully remove the foil and let the éclair cool for about 1 minute.

6. Finish and Serve

Drizzle with chocolate or caramel sauce and sprinkle with crushed graham crackers.

Serve immediately while the marshmallow is still warm, stretchy, and gooey.

🔥 Campfire Tips

Use hot coals. Cooking over glowing coals gives you much better control than holding the marshmallow directly in tall flames.

Rotate constantly. Slow, steady rotation produces a beautifully toasted marshmallow instead of a burnt outside and cold center.

Don’t overfill. Too much chocolate can make the éclair difficult to hold once everything melts.

Let it cool briefly. The inside will be extremely hot immediately after assembly.
