Ingredients

For the Pastry

  • 1 package (16 oz / 454 g) refrigerated buttermilk biscuits
  • 3 cups (24 oz) vegetable oil, for frying

For the Maple Glaze

  • ¾ cup (150 g) light brown sugar, tightly packed
  • 5 tbsp (70 g) salted sweet cream butter, softened
  • 4 tbsp (60 ml) whole milk
  • 1½ tbsp (about 30 g) light corn syrup
  • 1 tbsp maple flavoring

Instructions

1. Prepare the Biscuits

Remove the biscuits from the package and separate them.

Place each biscuit on a lightly floured surface and gently flatten it to about ½-inch thickness.

Cut each biscuit into a rectangular or bar-like shape. If your biscuits are already relatively flat, you can simply shape them with your hands.

Keep the pieces covered with a clean kitchen towel while the oil heats.

2. Heat the Oil

Pour the vegetable oil into a deep, heavy-bottomed skillet or saucepan.

Heat over medium to medium-high heat until the oil reaches 350°F (175°C).

If you don’t have a thermometer, test with a small piece of dough. It should immediately bubble and rise to the surface, turning golden gradually rather than burning quickly.

Do not overcrowd the pan.

3. Fry the Pastry

Carefully place several biscuit pieces into the hot oil, leaving plenty of room between them.

Fry for approximately 1½–2 minutes per side, or until puffed and deeply golden brown.

Turn them gently with tongs or a slotted spoon.

Transfer the cooked pastry to a paper-towel-lined plate or wire rack to drain.

Repeat with the remaining dough.

4. Make the Maple Glaze

While the pastries are frying, combine the brown sugar, softened butter, milk, and corn syrup in a small saucepan.

Place over medium-low heat, stirring constantly until the butter melts and the brown sugar dissolves.

Bring the mixture just to a gentle simmer, then remove from the heat.

Stir in the maple flavoring.

The glaze should be smooth, glossy, and thick enough to coat the pastries.

5. Glaze the Maple Bars

Allow the fried pastries to cool for 2–3 minutes.

Dip the top of each warm pastry into the maple glaze.

Lift and allow the excess glaze to drip back into the saucepan.
