Ingredients
Oreo Cookie Crust
- 40 Oreo cookies
- 6 tablespoons (85 g) salted butter, melted
Peanut Butter Cheesecake
- 24 oz (680 g) cream cheese, softened
- 1½ cups (375 g) creamy peanut butter
- 1½ cups (300 g) granulated sugar
- 2 teaspoons vanilla extract
- ½ cup (120 g) sour cream, room temperature
- ½ cup (120 ml) heavy whipping cream
- 4 large eggs, room temperature
- ½ teaspoon salt
Chocolate Ganache
- 1½ cups (255 g) semi-sweet chocolate chips
- ½ cup (120 ml) heavy whipping cream
Optional Buckeye Toppings
- ½ cup chopped roasted peanuts
- Mini peanut butter cups
- Homemade or store-bought Buckeye candies
- Extra peanut butter, warmed slightly for drizzling

Instructions
1. Prepare the pan
Preheat the oven to 325°F (165°C).
Lightly grease a 9-inch springform pan and line the bottom with parchment paper.
For extra protection against leaks, wrap the outside of the pan tightly with two layers of heavy-duty aluminum foil if using a water bath.
2. Make the Oreo crust
Place the Oreo cookies in a food processor and pulse until they become fine crumbs.
Pour in the melted salted butter and pulse until the crumbs are evenly moistened.
Transfer the mixture to the springform pan.
Press firmly across the bottom and about 1 inch up the sides using the bottom of a measuring cup or glass.
Bake the crust for 8–10 minutes.
Remove and allow it to cool slightly while preparing the filling.
3. Make the peanut butter filling
In a large mixing bowl, beat the softened cream cheese and granulated sugar on medium speed until smooth and creamy, about 2 minutes.
Add the peanut butter and beat until fully incorporated.
Mix in the vanilla and salt.
Add the sour cream and heavy cream and mix just until smooth.
4. Add the eggs
Add the eggs one at a time, mixing on low speed after each addition just until incorporated.
Don’t overbeat the batter once the eggs are added.

Scrape down the sides of the bowl as needed.
5. Fill the crust

6. Bake the cheesecake
Place the springform pan inside a larger roasting pan.
Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan.
Bake at 325°F for approximately 70–80 minutes.
The edges should look set while the center should still have a slight, gentle wobble when the pan is carefully nudged.
Don’t wait for the center to become completely firm in the oven—it will continue setting as it cools.
7. Cool gradually
Turn off the oven and crack the oven door open.
Leave the cheesecake inside for about 1 hour.
Remove it from the water bath and carefully remove the foil.
Run a thin knife around the edge of the cheesecake to loosen it from the sides of the pan.
Allow it to cool completely at room temperature.
8. Chill
Cover the cooled cheesecake and refrigerate for at least 6 hours, preferably overnight.
This extended chilling time allows the cheesecake to fully set and makes slicing much easier.
9. Make the chocolate ganache
Place the chocolate chips in a heatproof bowl.
Heat the heavy cream in a small saucepan over medium-low heat until it is steaming and just beginning to simmer around the edges.
Pour the hot cream over the chocolate.
Let stand for 3–5 minutes.
Whisk slowly until completely smooth and glossy.
Allow the ganache to cool for several minutes until it is thick enough to spread but still pourable.
10. Top the cheesecake
Remove the chilled cheesecake from the springform pan.
Pour the chocolate ganache over the center.
Use an offset spatula to gently spread it toward the edges, allowing a little ganache to drip naturally down the sides.
Sprinkle with chopped roasted peanuts.
For an extra-decadent Buckeye finish, add mini peanut butter cups or Buckeye candies.
11. Chill and slice
Return the cheesecake to the refrigerator for 20–30 minutes, or until the ganache is set.
For clean slices, dip a sharp knife in hot water, wipe it dry, and slice.
Repeat between cuts.
Serve chilled.
