🤤 Addictive Dan Dan Noodles
A bold, spicy, savory noodle dish inspired by Sichuan-style Dan Dan noodles. Tender ground beef is cooked with garlic, ginger, and green onions, then tossed with springy noodles in a rich sauce made with soy sauce, rice vinegar, sesame oil, sugar, and chili oil.

Ingredients
For the Beef
- 8 oz (225 g) ground beef
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- 2 green onions, white parts finely sliced
For the Dan Dan Sauce
- 2 tbsp soy sauce
- 2 tsp rice vinegar
- 1 tbsp chili oil, plus more to taste
- 1 tsp sugar
- 1 tsp sesame oil
- 1 clove garlic, finely minced
- 1 tbsp grated fresh ginger
- 2–3 tbsp creamy peanut butter or Chinese sesame paste (tahini can be substituted)
- 3–4 tbsp hot noodle cooking water
For the Noodles
- 8 oz (225 g) dried Chinese wheat noodles, ramen noodles, or thin egg noodles
- Water, for boiling
- ½ tsp salt, for the noodle water
For Garnish
- 2 green onions, green parts thinly sliced
- 1 tbsp roasted peanuts, crushed
- ½ tsp toasted sesame seeds
- Extra chili oil, to taste
- Optional: Sichuan peppercorns, lightly toasted and crushed
Instructions
1. Cook the noodles
Bring a large pot of water to a boil.
Add the noodles and cook according to the package directions until just tender but still springy.
Before draining, reserve about ½ cup of the noodle cooking water.
Drain the noodles and set aside.
Don’t rinse them unless the package specifically recommends it—the small amount of surface starch helps the sauce cling to the noodles.
2. Prepare the sauce
While the noodles cook, combine the soy sauce, rice vinegar, chili oil, sugar, sesame oil, garlic, ginger, and peanut butter or sesame paste in a bowl.
Whisk until smooth.
Gradually whisk in 3–4 tablespoons of hot noodle water until the sauce becomes creamy and pourable.
Taste and adjust:
- More chili oil = hotter
- More sugar = sweeter
- More vinegar = brighter
- More soy sauce = saltier and more savory
3. Brown the beef
Heat a large skillet or wok over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it into small crumbles.
Continue cooking until browned and cooked through.
If there is a large amount of excess fat, carefully drain it.
4. Add the aromatics
Add the white parts of the green onions, minced garlic, and grated ginger.
Stir-fry for approximately 30–60 seconds, just until fragrant.
Add 1 tablespoon soy sauce and 1 teaspoon sesame oil.
Stir well and cook for another 1–2 minutes, allowing the beef to become deeply savory.
5. Combine the noodles and sauce
Add the cooked noodles to the skillet with the beef.
Pour the Dan Dan sauce over everything.
Toss vigorously for 1–2 minutes, adding another splash of noodle water if necessary.
The sauce should become glossy and cling tightly to the noodles rather than pooling at the bottom.
6. Finish
Turn off the heat.
Taste the noodles and adjust the seasoning.
Add more chili oil if you want additional heat.
Sprinkle with the sliced green onion tops, crushed roasted peanuts, toasted sesame seeds, and optional crushed Sichuan peppercorns.
7. Serve
Divide the noodles among bowls.
Drizzle with another little spoonful of chili oil for a fiery finish.
Serve immediately while hot.
