Ingredients
🍪 Graham Cracker Crust
- 9 graham cracker sheets, finely crushed
- ½ cup (113 g) unsalted butter, melted
- 1 tablespoon granulated sugar
🧀 Cheesecake Filling
- 16 oz (450 g) cream cheese, softened
- 8 oz (227 g) Cool Whip, thawed
- 1 cup (120 g) powdered sugar
- 1 teaspoon fresh lemon juice
- 1 teaspoon vanilla extract
🫐 Blueberry Topping
- 2 cups fresh or frozen blueberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
Optional Garnish
- Fresh blueberries
- Whipped cream
- Lemon zest
- Crushed graham crackers
Instructions
1. Prepare the Graham Cracker Crust
Place the graham cracker sheets in a food processor and pulse until finely crushed.
You should have approximately 1½ cups of fine crumbs.
Transfer the crumbs to a bowl.
Add the melted butter and sugar.
Mix until the crumbs are evenly moistened.
2. Press the Crust
Line the bottom of a 9-inch springform pan with parchment paper.
Pour the crumb mixture into the pan.
Firmly press it into an even layer using the bottom of a glass or measuring cup.
For a slightly thicker crust, press some of the mixture about 1 inch up the sides.
Place the crust in the refrigerator while preparing the filling.
🧀 Make the No-Bake Cheesecake Filling
3. Beat the Cream Cheese
Place the softened cream cheese in a large mixing bowl.
Beat until completely smooth and creamy.
Add the powdered sugar gradually and continue mixing until there are no lumps.
4. Add the Lemon & Vanilla
Add the lemon juice and vanilla extract.
Beat briefly until combined.
The lemon juice adds a little brightness and balances the sweetness of the filling.
5. Fold in the Cool Whip
Add the thawed Cool Whip.
Using a spatula, gently fold it into the cream cheese mixture until smooth and evenly combined.
Don’t overmix, as you want to preserve the light, fluffy texture.
Assemble the Cheesecake
6. Fill the Crust
Remove the crust from the refrigerator.
Spoon the cheesecake filling over the crust.
Spread the top with an offset spatula until smooth.
🫐 Make the Blueberry Topping
7. Cook the Blueberries
Place the blueberries, sugar, lemon juice, cornstarch, and water in a small saucepan.
Cook over medium heat, stirring gently, for approximately 5–8 minutes.
The berries will begin releasing their juices and the mixture will thicken into a glossy blueberry sauce.
If using frozen blueberries, there’s no need to thaw them first.
8. Cool the Blueberry Sauce
Remove from the heat and allow the blueberry topping to cool completely.
Do not spread hot blueberry sauce over the cheesecake, as it can soften the filling.
9. Add the Blueberries
Once completely cool, spoon the blueberry topping over the cheesecake.
Spread gently, leaving some of the creamy cheesecake visible around the edges if desired.
❄️ Chill Until Firm
10. Refrigerate
Cover the cheesecake and refrigerate for at least 6 hours.
For the best texture, chill it overnight.
The filling should be firm enough to slice cleanly.
🍰 Serve
11. Slice & Garnish
Carefully remove the springform ring.
Use a sharp knife to cut the cheesecake into slices.
For especially clean cuts, dip the knife in hot water, wipe it dry, and slice.
Garnish with:
- Fresh blueberries
- Whipped cream
- Lemon zest
- Graham cracker crumbs
Serve chilled.
⭐ Chef’s Tips
Use Full-Fat Cream Cheese
Full-fat cream cheese gives a richer and more stable no-bake filling.
Soften the Cream Cheese
Allow it to sit at room temperature before mixing to prevent lumps.
Don’t Use Warm Blueberry Sauce
Let the topping cool completely before putting it on the cheesecake.
Chill Overnight
Although six hours will work, overnight chilling gives the filling its firmest, creamiest texture.
For Easy Removal
Line the bottom of the springform pan with parchment before assembling.
🫐 Variations
Lemon Blueberry Cheesecake
Add 1 tablespoon finely grated lemon zest to the filling.
Mixed Berry Cheesecake
Replace part of the blueberries with strawberries, raspberries, or blackberries.
Blueberry Swirl
Reserve a few spoonfuls of the cooled blueberry sauce and swirl it directly into the cheesecake filling before chilling.
White Chocolate Blueberry
Add 4 oz melted and cooled white chocolate to the cream cheese mixture for a richer filling.
Individual Cheesecake Cups
Divide the graham cracker crumbs and filling among small dessert glasses and chill individually.
Storage
Keep the cheesecake covered and refrigerated.
Refrigerator: Up to 4 days.
Because this is a dairy-based no-bake dessert, keep it chilled until ready to serve.
Freezing
Freeze the cheesecake without fresh whipped cream or delicate garnishes.
Wrap tightly and freeze for up to 2 months.
Thaw overnight in the refrigerator before serving.
