Instructions
1. Prepare the Oven
Preheat your oven to 325°F (165°C).
Grease a 9-inch springform pan.
For easier cleanup, you can wrap the outside bottom of the pan with a layer of aluminum foil.
🍪 Make the Crust
2. Combine the Ingredients
Place the graham cracker crumbs in a bowl.
Add the melted butter and optional sugar.
Mix until the crumbs are evenly moistened and resemble wet sand.
3. Press Into the Pan
Pour the mixture into the springform pan.
Firmly press the crumbs across the bottom and slightly up the sides.
Use the bottom of a glass or measuring cup to create a compact, even crust.
4. Bake the Crust
Bake for 8–10 minutes.
Remove from the oven and let it cool while you prepare the filling.
🧀 Make the Cheesecake Filling
5. Beat the Cream Cheese
Place the softened cream cheese and sugar in a large bowl.
Beat on low to medium speed until smooth and creamy.
Avoid whipping too much air into the mixture.
6. Add the Sour Cream & Vanilla
Add the sour cream and vanilla extract.
Mix just until incorporated.
If using the flour, mix it in now.
7. Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition.
Stop mixing as soon as the batter is smooth.
🎂 Assemble
8. Pour Into the Crust
Pour the cheesecake batter over the cooled graham cracker crust.
Smooth the top with a spatula.
Gently tap the pan against the counter once or twice to release large air bubbles.
Bake the Cheesecake
9. Bake
Place the cheesecake in the preheated oven.
Bake for approximately 50–60 minutes.
The edges should look set while the center should still have a slight jiggle when gently shaken.
Don’t wait for the entire cheesecake to become firm in the oven.
10. Cool Gradually
Turn off the oven and leave the cheesecake inside with the door slightly open for approximately 30 minutes.
Remove the cheesecake and allow it to cool completely at room temperature.
This gradual cooling helps reduce cracking.
🍒 Add the Cherry Topping
11. Use Cherry Pie Filling
Once the cheesecake has cooled, spread the cherry pie filling evenly over the top.
For a cleaner finish, leave a small border of cheesecake visible around the edge.
For Homemade Cherry Topping
Combine the cherries, sugar, cornstarch, lemon juice, and water in a saucepan.
Cook over medium heat for 5–8 minutes, stirring gently, until the cherries soften and the sauce thickens.
Allow the topping to cool completely before spreading it over the cheesecake.
❄️ Chill
12. Refrigerate
Cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.
The cheesecake becomes firmer, creamier, and easier to slice as it chills.
🔪 Slice & Serve
13. Cut the Cheesecake
Run a sharp knife under hot water, then dry it thoroughly.
Run the knife around the edge of the cheesecake before releasing the springform ring.
Cut into slices, wiping the knife clean between cuts.
Serve chilled.
⭐ Chef’s Tips
Use Full-Fat Cream Cheese
It gives the cheesecake the richest and creamiest texture.
Don’t Overbeat the Batter
Too much air can cause the cheesecake to puff and crack.
Room-Temperature Ingredients
Softened cream cheese and room-temperature eggs create a smoother filling.
Don’t Overbake
A slight wobble in the center is exactly what you want. It will firm up as it cools.
Chill Overnight
For the best texture and cleanest slices, refrigerate the cheesecake overnight.
🍒 Variations
Chocolate Cherry Cheesecake
Add ½ cup melted and cooled chocolate to the cheesecake batter.
Cherry Almond
Add ½ teaspoon almond extract to the filling and sprinkle toasted sliced almonds over the cherry topping.
Chocolate Cookie Crust
Replace the graham crackers with crushed chocolate sandwich cookies.
Mini Cherry Cheesecakes
Bake in a lined muffin pan for individual portions. Reduce the baking time and check for a slight center jiggle.
Storage
Keep the cheesecake covered and refrigerated.
Refrigerator: Up to 4–5 days.
Because of the dairy-based filling, don’t leave it at room temperature for extended periods.
Freezing
For best results, freeze the cheesecake without the cherry topping.
Wrap the cooled cheesecake tightly and freeze for up to 2 months.
Thaw overnight in the refrigerator, then add the cherry topping before serving.
