  • 200 g white chocolate, finely chopped
  • 250 ml whipping cream, cold
  • 100 ml whole milk
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water

🫐 For the Berry Mousse

  • 250 g mixed berries, fresh or frozen
  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon lemon juice
  • 1½ teaspoons gelatin powder
  • 2 tablespoons cold water
  • 200 ml whipping cream, cold

Optional Garnish

  • Fresh strawberries, raspberries, blueberries, or blackberries
  • White chocolate curls
  • Powdered sugar
  • Fresh mint leaves

Instructions

1. Prepare the Cake Pan

Use a 7–8-inch springform pan or cake ring.

Place the sponge cake layer in the bottom.

Brush the sponge lightly with the melted butter.

Press gently so the cake sits firmly and evenly in the pan.

Set aside.

🤍 Make the White Chocolate Mousse

2. Bloom the Gelatin

Place 1 teaspoon gelatin powder in a small bowl.

Add 2 tablespoons cold water.

Stir briefly and let stand for 5–10 minutes until the gelatin absorbs the water and becomes thick.

3. Melt the White Chocolate

Place the chopped white chocolate in a heatproof bowl.

Heat the milk in a small saucepan over medium-low heat until steaming but not boiling.

Pour the hot milk over the white chocolate.

Let it stand for approximately 1 minute, then stir until completely smooth.

4. Add the Gelatin

Gently melt the bloomed gelatin until liquid.

You can microwave it for approximately 5–10 seconds or melt it over a warm water bath.

Stir the melted gelatin into the warm white chocolate mixture.

Allow the mixture to cool until slightly warm but not hot.

5. Whip the Cream

Pour the cold whipping cream into a large bowl.

Whip until soft peaks form.

Don’t overwhip.

6. Combine the Mousse

Add approximately ⅓ of the whipped cream to the white chocolate mixture.

Gently fold it in to lighten the mixture.

Add the remaining whipped cream and carefully fold until smooth and airy.

🤍 7. Add the White Chocolate Layer

Pour the white chocolate mousse over the sponge base.

Smooth the surface with an offset spatula.

Refrigerate for approximately 30–45 minutes, just until the mousse begins to set.

🫐 Make the Berry Mousse

8. Prepare the Berry Purée

Place the berries, sugar, and lemon juice in a saucepan.

Cook over medium heat for approximately 5–7 minutes, stirring occasionally, until the berries soften and release their juices.

Blend until smooth.

For an ultra-smooth mousse, strain the purée through a fine-mesh sieve to remove seeds.

You should have approximately 1 cup of berry purée.

9. Bloom the Gelatin

Place 1½ teaspoons gelatin powder in a small bowl.

Add 2 tablespoons cold water.

Let stand for 5–10 minutes.

10. Add Gelatin to the Berry Purée

Warm the bloomed gelatin until completely melted.

Stir it into the warm berry purée.

Allow the mixture to cool to room temperature.

It should be cool enough that it won’t melt the whipped cream, but it should still remain fluid.

11. Whip the Cream

Beat 200 ml cold whipping cream until soft peaks form.

Do not overwhip.

12. Combine

Fold approximately one-third of the whipped cream into the cooled berry mixture.

Then gently fold in the remaining whipped cream.

Continue folding until you have a smooth, light berry mousse.

🫐 Assemble the Berry Layer

13. Add the Berry Mousse

Carefully spoon the berry mousse over the white chocolate layer.

Spread the top evenly with a spatula.

Gently tap the pan against the counter a couple of times to release any large air pockets.

❄️ Chill the Cake

14. Refrigerate

Cover the cake loosely and refrigerate for at least 6 hours, preferably overnight.

The mousse should be completely firm before removing the cake from the pan.

✨ Decorate

15. Finish the Cake

Carefully remove the springform ring.

Decorate the top with:

  • Fresh berries
  • White chocolate curls
  • Powdered sugar
  • Fresh mint

For an elegant finish, arrange a mixture of strawberries, raspberries, and blueberries around the center of the cake.

🔪 Slice & Serve

Run a sharp knife under hot water.

Dry it thoroughly and slice the cake.

Wipe the knife clean between cuts for beautifully defined layers.

Serve chilled.

⭐ Chef’s Tips

Use Good-Quality White Chocolate

White chocolate is a major flavor in this dessert, so use one that melts smoothly.

Don’t Add Hot Mixtures to Whipped Cream

Allow both the white chocolate and berry mixtures to cool before folding them into the whipped cream.

Don’t Overwhip

Soft-to-medium peaks are ideal. Overwhipped cream can make the mousse heavy rather than light.

Let Each Layer Set

The short chill before adding the berry mousse helps create a clean separation between the two layers.

Chill Overnight

For the cleanest slices and best texture, make this cake the day before serving.

🍓 Berry Options

You can use almost any berry combination.

Mixed Berry

Strawberries + raspberries + blueberries.

Raspberry

Use all raspberries for a tart, vibrant mousse.

Strawberry

Use ripe strawberries for a sweeter, delicate flavor.

Blackberry

Blackberries create a rich purple mousse with a slightly tangy flavor.

Strawberry-Raspberry

A particularly delicious combination with the sweetness of strawberries and acidity of raspberries.

Storage

Keep the mousse cake covered and refrigerated.

It is best enjoyed within 3 days.

Because the dessert contains whipped cream and dairy, keep it refrigerated until serving.

❄️ Can You Freeze It?

Yes. Once completely set, the cake can be frozen well wrapped for up to 1 month.

Thaw overnight in the refrigerator.

Decorate with fresh berries only after thawing.
