Instructions
1. Prepare the Cake Pan
Use a 7–8-inch springform pan or cake ring.
Place the sponge cake layer in the bottom.
Brush the sponge lightly with the melted butter.
Press gently so the cake sits firmly and evenly in the pan.
Set aside.

2. Bloom the Gelatin
Place 1 teaspoon gelatin powder in a small bowl.
Add 2 tablespoons cold water.

Place the chopped white chocolate in a heatproof bowl.

8. Prepare the Berry Purée
Place the berries, sugar, and lemon juice in a saucepan.
Cook over medium heat for approximately 5–7 minutes, stirring occasionally, until the berries soften and release their juices.
Blend until smooth.
For an ultra-smooth mousse, strain the purée through a fine-mesh sieve to remove seeds.
You should have approximately 1 cup of berry purée.
9. Bloom the Gelatin
Place 1½ teaspoons gelatin powder in a small bowl.
Add 2 tablespoons cold water.
Let stand for 5–10 minutes.
10. Add Gelatin to the Berry Purée
Warm the bloomed gelatin until completely melted.
Stir it into the warm berry purée.
Allow the mixture to cool to room temperature.
It should be cool enough that it won’t melt the whipped cream, but it should still remain fluid.
11. Whip the Cream
Beat 200 ml cold whipping cream until soft peaks form.
Do not overwhip.
12. Combine
Fold approximately one-third of the whipped cream into the cooled berry mixture.
Then gently fold in the remaining whipped cream.
Continue folding until you have a smooth, light berry mousse.

13. Add the Berry Mousse
Carefully spoon the berry mousse over the white chocolate layer.
Spread the top evenly with a spatula.
