Total Time: About 1 hour

Difficulty: Easy

Ingredients

Main

  • 1 sourdough loaf, sliced into approximately 2.5 cm (1-inch) pieces
  • 240 g cranberries, fresh or dried
  • 225 g Brie cheese, cut into small cubes
  • 45 ml honey
  • 700 g boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 100 g feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder

Custard Mixture

  • 4 large eggs
  • 1½ cups (360 ml) whole milk
  • ½ cup (120 ml) heavy cream
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnish

  • Fresh thyme
  • Chopped fresh parsley
  • Extra honey
  • Fresh cranberries
  • Chopped pecans or walnuts

Instructions

1. Prepare the Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish.

Set aside.

2. Prepare the Chicken

Pat the chicken dry and cut it into bite-size pieces.

Place it in a bowl and toss with:

  • Olive oil
  • Salt
  • Black pepper
  • Dried thyme
  • Garlic powder

Heat a large skillet over medium-high heat.

Add the chicken and cook for approximately 5–7 minutes, stirring occasionally, until browned on the outside and cooked through.

Remove from the heat.

3. Make the Egg Mixture

In a large bowl, whisk together:

  • Eggs
  • Milk
  • Heavy cream
  • Dijon mustard
  • Thyme
  • Salt
  • Black pepper

Whisk until smooth and well combined.

4. Build the Sourdough Base

Arrange approximately half of the sourdough pieces evenly across the bottom of the prepared baking dish.

Scatter half of the cooked chicken over the bread.

Add half of the cranberries.

Sprinkle with half of the Brie and feta.

5. Add the Second Layer

Repeat with the remaining:

  • Sourdough
  • Chicken
  • Cranberries
  • Brie
  • Feta

Spread everything into an even layer.

6. Add the Custard

Slowly pour the egg-and-milk mixture evenly over the entire casserole.

Press the bread down gently with a spatula or the back of a spoon so it can absorb the custard.

Let the casserole stand for 10–15 minutes before baking.

For an even better texture:

Cover and refrigerate for 30 minutes to overnight. This allows the sourdough to absorb the custard thoroughly.

🍯 7. Add the Honey

Drizzle the 45 ml honey evenly over the top.

If your honey is thick, warm it slightly so it drizzles more easily.

8. Bake

Cover the baking dish loosely with aluminum foil.

Bake for 25 minutes.

Remove the foil and continue baking for another 10–20 minutes, until:

  • The center is set.
  • The bread is golden.
  • The Brie is melted and bubbling.
  • The top is beautifully browned.

If desired, broil for 1–2 minutes at the end for an extra-golden top.

Watch carefully.

✨ Rest & Serve

Remove the casserole from the oven and allow it to rest for 10 minutes.

Drizzle with a little additional honey.

Garnish with fresh thyme or parsley.

Serve warm.

⭐ Chef’s Tips

Use Day-Old Sourdough

Slightly stale bread absorbs the custard better without becoming overly mushy.

Fresh or Dried Cranberries

Fresh cranberries provide more tartness, while dried cranberries create a sweeter, chewier bite.

If using sweetened dried cranberries, you may want to reduce the honey slightly.

Don’t Skip the Rest

Allowing the casserole to sit before baking gives the bread time to absorb the custard.

Brie Rind

The rind is completely edible. Leave it on for maximum flavor or remove it if you prefer a smoother texture.

Let It Rest After Baking

Ten minutes allows the custard to finish setting and makes the casserole easier to serve.

🍗 Delicious Variations

Holiday Chicken Bake

Add ½ cup chopped pecans and a little fresh rosemary.

Apple Cranberry Chicken

Add 1 diced apple between the layers for extra sweetness and texture.

Turkey & Cranberry

Replace the chicken with cooked shredded turkey—perfect for Thanksgiving leftovers.

Extra Cheesy

Add ½ cup shredded Gruyère or sharp white cheddar to the cheese layers.

Maple Version

Replace the honey with pure maple syrup for a deeper caramel-like sweetness.

Storage

Cover leftovers and refrigerate within 2 hours.

Refrigerator: Up to 3–4 days.

Reheat individual portions in the microwave or place the casserole in a 350°F (175°C) oven until heated through.
