Bake Time: 18–22 minutes
Total Time: About 40 minutes
Servings: 12 cupcakes
Difficulty: Easy
Method: Oven-Baked
Ingredients
For the Cupcakes
- 150 g (1¼ cups) all-purpose flour
- 50 g (½ cup) unsweetened cocoa powder
- 180 g (¾ cup + 2 tablespoons) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 large eggs
- 120 ml (½ cup) whole milk
- 120 ml (½ cup) hot coffee or hot water
- 60 ml (¼ cup) vegetable oil
- 1 teaspoon vanilla extract
Optional Chocolate Frosting
- 115 g (½ cup) unsalted butter, softened
- 180 g (1½ cups) powdered sugar
- 30 g (¼ cup) unsweetened cocoa powder
- 1–2 tablespoons milk or heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Method
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Line a 12-cup muffin tin with cupcake liners.
2. Combine the Dry Ingredients
In a large bowl, whisk together:
- Flour
- Cocoa powder
- Sugar
- Baking powder
- Baking soda
- Salt
Break up any cocoa powder lumps so the finished cupcakes have an even texture.
3. Combine the Wet Ingredients
In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
4. Make the Batter
Pour the wet ingredients into the dry ingredients.
Gently whisk or fold until just combined.
The batter will be fairly thick at this stage.
5. Add the Hot Coffee
Slowly pour in the hot coffee or hot water, stirring gently as you go.
The batter will become noticeably thinner. This is normal.
Hot coffee intensifies the chocolate flavor without necessarily making the cupcakes taste like coffee.
6. Fill the Cupcake Liners
Divide the batter evenly between the prepared cupcake liners, filling each approximately ⅔ full.
Avoid overfilling, as the cupcakes need room to rise.
7. Bake
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Don’t overbake, as chocolate cupcakes can dry out quickly.
8. Cool
Allow the cupcakes to cool in the pan for approximately 5 minutes.
Transfer them to a wire rack and allow them to cool completely before frosting.
🍫 Easy Chocolate Frosting
1. Beat the Butter
Place the softened butter in a mixing bowl.
Beat for 2–3 minutes until smooth and creamy.
2. Add the Dry Ingredients
Gradually add the powdered sugar and cocoa powder.
Mix on low speed until incorporated.
3. Add Vanilla and Milk
Add the vanilla extract, salt, and 1 tablespoon milk or cream.
Beat on medium-high speed for 2–3 minutes until fluffy.
Add another tablespoon of milk if the frosting is too thick.
4. Frost the Cupcakes
Once the cupcakes are completely cool, spread or pipe the frosting over each cupcake.
Finish with chocolate shavings, sprinkles, or a dusting of cocoa powder if desired.
👨🍳 Chef’s Tips
Use hot coffee for deeper chocolate flavor. It enhances the cocoa without making the cupcakes taste strongly of coffee.
Don’t overmix. Once the flour is incorporated, mix just until combined.
Don’t overbake. Start checking around 18 minutes.
Cool completely before frosting. Even slightly warm cupcakes can cause buttercream to melt.
Use room-temperature eggs. They incorporate more easily and help create a smoother batter.
Variations
Double Chocolate
Fold ½ cup chocolate chips into the batter.
Chocolate Orange
Add 1 teaspoon finely grated orange zest to the batter.
Mint Chocolate
Add ½ teaspoon peppermint extract to the frosting.
Black Forest
Top with chocolate frosting, cherry pie filling, and chocolate shavings.
Peanut Butter Chocolate
Pipe or spread peanut butter frosting over the cooled cupcakes.
Storage
Store frosted cupcakes in an airtight container.
Room temperature: 2 days
Refrigerator: Up to 5 days
Allow refrigerated cupcakes to sit at room temperature for about 20–30 minutes before serving for the softest texture.
Freezer: Up to 3 months unfrosted.
Wrap individual cooled cupcakes tightly before freezing and thaw at room temperature.
